Study Formulation of Red Dragon Fruit (Hylocereus polyrhizus) Extract on
the Candy Quality. (Under Guidance of Rina Shintawati Asra dan Wiwit
Murdianto).
Candy is a solid food made from sugar, water or
combination of sugar and the other ingredients. Candy has two
types that are soft candy and hard candy. Candy have a high
calories, sweetness, and tasteful by kid or adult people. Red
dragon fruit is a fruit that have a potential, because its
antioxidant. The number of using and consumption of this fruit
was growing up. Because of that, than the research of Study
Formulation of Red Dragon Fruit (Hylocereus polyrhizus) Extract
on the Candy Quality have done.
The purpose of this study is to know the effect of
formulation red dragon fruit extract and sugar added by glucose
syrup on the processing of candy and to know the best
formulation to get the candy with a good quality.
This study using a Completely Randomized Design, single
factor, with five treatments were repeated four times. The
treatments are 6, 8, 10, 12 and 14% of red dragon fruit extract.
Parameters on this research is a chemical properties (moisture,
vitamin C and pereduction sugar) and organoleptic properties
(color, texture, taste and odor)
