Black Velvet Beer Cocktail Recipe
Makes 1 drink
1 part chilled Guinness
1 part chilled brut sparkling wine
Pour the Guinness into a chilled pint glass and let the foam subside. Place a
spoon on the inside of the glass, horizontal to the beer, and pour the bubbly
over the spoon so as to encourage the wine to float on top of the beer. Drink,
refill, repeat.

1 1/4 cups applejack
1 1/4 cups fresh lemon juice
3/4 cup pure maple syrup (preferably Grade B)
6 tablespoons apple cider vinegar
4 cups chilled Hefeweizen beer
3/4 cup chilled club soda
8 lemon wedges
Preparation
Stir first 4 ingredients in a large pitcher. Add 1 cup ice. Cover and refrigerate
until well chilled, about 2 hours.Gently stir in beer and club soda. Fill 12-oz.

and serve.

When I was stationed in Germany I tried this delicious concoction that only the true beer
afficionados, the Germans, could come up with.
Banana Beer or Bananenweizen as its known in Germany, tastes best with Wheat Beer. The
banana flavor blends well with the fresh taste of wheat beer and gives it just a slight sweetness.
Perfect for sipping after dinner, or anytime.
INGREDIENTS
1/2 Liter Weissbier (Wheat Beer) - preferably a German Brand (i.e. Weihenstephaner).

While keeping the glass at an angle, so that it does not develop too much foam, pour
the beer into the glass.

The bottleneck should be dunked slightly into the beer and then slowly pulled up.

Since the yeast that settles at the bottom of the bottle is a small remnant of wheat beer,
shake the bottle and dump it into the wheat beer glass.
5.
Once the foam head sets, fill the glass with well chilled banana juice.
Bul's Eye!
Some people are beer purists. Each beer type has a special glass. The idea of
putting a lemon in anything but a Hefeweizen is tantamount to treason.
Confusing with an IPA with an ESB is as crazy as saying you have ESP in your
IPO.
To you I say bul! No, not bull. Bul! As in the refreshing beverage sipped by
Cubans that incorporates beer, ginger ale, and lime juice. Never heard of it?
Never fear, Ill show you how
Youll need four limes, 1 12 oz can of light beer, 1 12 oz can of ginger ale, 1
2 tablespoons of sugar, and ice.
Juice enough limes to make 1/3 cup. Youll need about 3 limes for this. (Hints:
Nuking your limes for 5-10 seconds will help get the juices flowing. A citrus
reamerwill make quick work of the juicing.) Thinly slice the remaining lime for
garnish.
Pour the lime juice into a pitcher, then add one 12 oz can of your favorite light
beer. Make sure the beer is cold!
Add one to two tablespoons of sugar, to taste, and stir it up until the sugar is
dissolved. (Superfine or bakers sugar makes this go faster.)
This is the perfect beverage to enjoy with a Cubano, a toasted Cuban sandwich.

SNAKEBITE
In the UK they drink a lot of hard cider. They usually have several varieties on tap at most
bars. Also popular in the British bar scene is the Snakebite, which is a layered concoction of
beer and cider. The best of both worlds.
Our rating: B+ A pretty interesting combination of flavors, and especially good if you can find
the blackcurrant syrup.

RECIPE
1/2 a pint of beer. Brits like to use lager, in the States we seem to use Guinness more. I guess we think it's
more "authentic." For craft brew lovers, try Old #38 Stout from North Coast Brewing Co., orBlack Sun
Stout from Three Floyds Brewing Company.
1/2 a pint of hard cider, such as Woodchuck or Strongbow.
a dash of blackcurrant syrup (optional)
Pour into the same glass. If you want to get really fancy, use the back-of-the-spoon method. Turn a spoon
upside-down over the beer and gently pour the cider over the back of the spoon. This allows the cider to
pour down the edge of the glass and rest on top of the beer in a pousse-cafe layering..

WHERE TO FIND IT
Try local Irish pubs. Usually they'll advertise Snakebites if they serve them. Really, any bar that serves
cider on tap can make you a Snakebite. It's the blackcurrant juice, a necessity by the drink's definition in
England, that's really hard to find. Try Whiskey Tavern on Baxter Street in Manhattan, orThe Slaughtered
Lamb in the West Village.
Spicy Michelada
Makes 2
Ingredients:
2 teaspoons honey, spread into a thin layer on a plate
1/4 cup kosher salt
1/2 teaspoon smoked paprika
Chelada/Michelada
There are quite the variations of micheladas. Some are made with lime juice and assorted
sauces, spices, peppers, and tomato juice, but I like to keep mine simple and make more of a
Chelada.
INGREDIENTS:
1/4 cup ice
Mexican beer (recommend: Dos XX or Tecate)
cup fresh lime juice
Sal Limn or coarse salt
DIRECTIONS:
Moisten rim of glass with a lime and coat with Sal Limn or salt. Add ice and lime juice. Add
beer, and drink before the ice melts.
Lemon Shandies

3/4 cup fresh lemon juice (from about 4 lemons), plus wedges, for serving (optional)

Made with traditional Guinness Draught and Harp Lager, when made right the Black and Tan
forms two distinct layers in the glass. The secret to making a great Black and Tan is the Black
and Tan spoon and the proper pouring technique. Follow our simple steps for the perfect pour!
Step 1:
Pour a pale ale, like Harp Lager, into a pint glass, filling the glass halfway. Whether the glass is
half full or half empty at this point well, thats your call.
Step 2:
Float the Guinness on top to fill the glass by slowly pouring it over the back of a teaspoon. Place
the spoon down in the glass just above the lager (it may help to bend the spoon so it fits down in
the glass). As your pour the Guinness, slowly raise the spoon until the glass is full.
Step 3:
Remove the spoon; two distinct layers will appear in the glass. Enjoy!
Pegu Club bartender Kenta Gotos lovely cocktail La Fleur de Paradis spends its evenings
perched atop a weathered zinc bar, sipped by the beautiful people of New York. Our rendition of
it using wheat beer instead of champagne is more at home in a plastic cup, enjoyed by folks
sporting cut-off shorts and soaking in the sun on a picnic blanket or the open gate of a pickup
truck.
What to buy: We like Plymouth English gin in this drink because of its smooth juniper finish and
earthy flavor.
St-Germain is an elderflower liqueur that is sweet and floral. It can be found at high-end liquor
stores and online.
Game plan: If youre bringing this to a tailgate or party, make the recipe through step 2 and
keep chilled. Add the cold beer when ready to serve.

3 ounces freshly squeezed lemon juice (from about 3 medium lemons), chilled

Using a vegetable peeler, remove 6 wide strips of peel from the grapefruit, making sure
to avoid the white pith; set aside. Squeeze 3 ounces of juice from the grapefruit and place in a
3-quart container (save the remaining juice for another use).

The classic, nonalcoholic version of a cream soda contains club soda, cream, and usually
vanilla syrup. Our boozy version uses vanilla and ginger liqueurs instead of syrup and the
creamy froth of Guinness stout instead of cream to take this drink from soda fountain to bar top.
What to buy: Domaine de Canton is a ginger-flavored liqueur that can be found at specialty
liquor stores.
Navan vanilla liqueur is a vanilla-infused Cognac made by Grand Marnier. It can be found at
high-end liquor stores or online.
We preferred the creamy head attained with canned Guinness Draught versus the bottled
variety.
Game plan: If youre bringing this drink to a tailgate or party, mix the ginger and vanilla liqueurs
together and keep chilled. Add the cold club soda and beer when ready to serve.

Steamroller Recipe
Steam beer, created in California in the 1800s, is made with lager yeast and fermented without
refrigeration at ale fermentation temperatures. The result is a beer that is full-bodied and more
bubbly than ale, but still clear and crisp. San Francisco bartender Joel Teitelbaum uses the
unique qualities of this style of beer in a cocktail sweetened with cherry and elderflower liqueurs.
What to buy: Cherry Heering is a Danish cherry liqueur invented by Peter Heering in the early
1800s. It is viscous and sweet with an intense dark-cherry flavor. A little goes a long way, so use
it sparingly in cocktails.
St-Germain is an elderflower liqueur that is sweet and floral. It can be found at high-end liquor
stores and online.

This months Mixology Monday theme, as chosen by me, is Retro Redemption. The challenge:
To resurrect a cocktail from the Dark Ages of mixology that fell between Prohibition and the
contemporary cocktail renaissance, defending it on its merits or giving it new life with the
addition of better techniques and ingredients.
This is a fitting theme for me to choose, because part of my job as a brand ambassador for
Lucas Bols is promoting Galliano, an Italian liqueur flavored with anise, vanilla, and other herbs.
Galliano was absolutely huge in the 1970s, showing up in a variety of cocktails served against
the wall and by far most prominently in the Harvey Wallbanger. My parents, who dont drink
much but do keep a well stocked bar for guests, include a bottle of Galliano in their collection.
They estimate they acquired it around 1978. I am pleased though not surprised that Galliano
has shown up in several of the MxMo entries that have been sent in so far.
In the year-and-a-half that Ive been working for Bols Ive thought off and on about how to
update the Harvey Wallbanger, which is made with vodka, orange juice, and Galliano. Theres a
good flavor pairing there. Vanilla and orange go very well together. Look at the Creamsicle
cocktail or the success of the Orange Julius chain. This combination works. The ingredient that
doesnt bring anything except alcohol to the drink is vodka. Its just there in the background, not
doing anything aside from getting people drunk. So to modernize the Harvey Wallbanger, the
obvious thing to do is replace the vodka with something else.
So OK, what else pairs well with orange? If you read this blog you know that I love beer
cocktails, and people have been putting oranges in wheat beers for years. Sometimes they do
this in the brewing stage, as with Belgian witbier thats flavored with coriander and orange peel.
Sometimes a wedge of orange is simply added to the rim of the glass, as with some less
complex American wheats. Either way, this is another flavor pairing that works.
Putting these pairing ideas together, you can omit the vodka and replace it with beer. Then you
get the Harvey Weissbanger:
1 oz Galliano
2 oz orange juice
6 oz quality wheat beer
Build in an ice-filled collins glass, stir gently, and garnish with a strip of orange peel.
You can make this with just about any wheat beer, but the more flavorful ones work best. At
my beer cocktail seminar with Ryan Conklin last month we served it with the Upright Four made
here in Portland. For something more widely available, the classic Weihenstephaner is also
fantastic. Give it a try. I think its a refreshing beer cocktail for sipping on the patio or knocking
back at brunch.
Cascadian Caipbeerinha
A Portland favorite.
I started with sloe gin, beloved of Anglophiles and snooty mixologists, and Lone Star, beloved of
me, while floating down the river. While some friends had suggested that 'Down the River With
Nancy' would be a delightful name for a cocktail, I was stuck on 'Redneck Mother', and sloe
gin (which is red) and Lone Star (which is a little redneck) seemed to fit the bill. To this I added
ruby red grapefruit (newly in season - buy local!) and ginger beer. I confess I was inspired in this
by the Shiner brewery's summer seasonal, the Ruby Redbird, which is (was) brewed with ginger
and grapefruit. So it's unsurprising that the finished product is a bit reminiscent of Shiner's
summer brew - but that's not a bad thing. I could use a little remembrance of summer right now.
Redneck Mother
1 oz Rio Star ruby red grapefruit juice (fresh-squeezed!)
.75 oz sloe gin (Get the Plymoth, if you can. It's a bit hard to find, but completely worth it. If you
can't hunt down the Plymoth, use a bit less, as other brands tend to be sweeter.)
Lone Star beer
Ginger beer
Add the sloe gin and grapefruit juice to the bottom of a pint glass (or mason jar). Fill the
remaining portion of the jar halfway with Lone Star and top with ginger beer. Cheers.
