Hazard analysis and critical control points


Hazard analysis and critical control points or HACCP is a systematic preventive approach to
food safety from biological, chemical, and physical hazards in production processes that can
cause the finished product to be unsafe, and designs measurements to reduce these risks to a safe
level.
Implements of HACCP

The successful execution of the HACCP plan is helped by the formal decision from top

management.
The next step is to prepare a plan that contains the people responsible for developing,

keeping, and putting into action the HACCP system.


At first, the HACCP team and planner are prepared and trained as necessary. The team is
then responsible for developing the initial plan and implements it into use. Product teams
can be selected to develop HACCP plans for particular products. A significant aspect in
expanding these united teams is to make sure they have appropriate training. The workers

who will be responsible for supervising them also have to be well enough trained.
Upon end of the HACCP plan, supervising and corrective action are developed. Often it
s a good idea to develop a timeline for the activities mixed up in the initial use of the
HACCP plan. Execution of the HACCP system consist of the constant supervising,
record-keeping, corrective action ways of doing things and other activities as defined in
the HACCP plan.

Maintaining a successful HACCP system very depends on regularly scheduled checking


activities. The HACCP plan should be updated and fixed as needed. An important thing to
remind of maintaining the HACCP system is to make sure that all individuals involved are
properly trained so they understand their role and can successfully fulfill their
responsibilities.

ISO 14000
ISO 14000 is a series of environmental management standards developed and published by the
International Organization for Standardization (ISO) for organizations. The ISO 14000 standards
provide a guideline or framework for organizations that need to systematize and improve their
environmental management efforts.
Implements of ISO 14000

ISO 14000 sets out the characteristic for an Environmental Management System (EMS).
It does not state needed things for environmental performance, but maps out a framework
that a company or organization can follow to set up an effective EMS. The standard can
be applied to a variety of levels in the business, from organizational level, right down to
the product and service level. Rather than focusing on exact measures and goals of
environmental performance, the standard highlights what an organization needs to do to
meet these goals.
ISO 14000 can be applied by single site to large companies, low risk to large risk
corporation, manufacturing, process and services industries even the local government.
Before applying ISO 14000, an initial review or gap analysis of the organizations
processes and is recommended, to help in identifying all elements of the current operation
and, if possible, future operations, that may interact with the condition of the Earth. This
review helps the organization in beginning and building on their environmental goals,
which should be measurable.
During applying the process, the organization identifies the valuable supplies needed and
works out those members of the organization responsible for the EMS. This includes
beginning and building on procedure and process, although only one supported procedure
is specified related to operational control.
During the checking stage, performance is supervised and occasionally measured to make
sure that the organizations targets and goals are being met. Also, internal audits are
managed and done at planned period of time to check whether the EMS meets the users
expectations and whether the process are being well maintained and supervised.
ISO 14000 encourages a company to continually improve its environmental performance.
The continuation of the process can be achieved in three ways; expansion, enrichment
and upgrading.
Lastly, the ISO 14000 standards expects the organization to move away from limiting
operational environmental measures towards a strategic plan on how to deal with
environmental challenges.
