Grilled
Sweet Potatoes Thought for the week ~ Happiness is not having what
you want but wanting what you have.
3 sweet potatoes, unpeeled
Pinch of cayenne pepper
¼ cup olive oil
1 tsp lemon zest
Ground black pepper
Salt
Flat leaf parsley, finely chopped
Place the potatoes in a pot of water and boil until fork tender, let
cool. Slice each potato lengthwise into eighths or into ½ inch
rounds. Preheat grill to medium. Mix 1 tablespoon of salt, lime zest
and cayenne in a small bowl. Brush the potato wedges with oil and
season with salt and pepper. Grill until golden brown on all sides
and just cook through (about 1 ½ minutes per side).
Transfer to a platter and immediately season with
salt/cayenne mixture and sprinkle with
fresh chopped parsley.

Remembrance Day Awards


On May 7 Holy Cross Collegiate was pleased to welcome members of the Royal Canadian Legion to present three of
their students with awards for this year’s Remembrance Day Poem, Essay and Art Work Contest. Winning Second Place
Intermediate Essay at the District Level and First Place at the Area Level was Jade Hupe with her essay “Dear Uncle”.
Jade says that the inspiration for her essay came from a trip to France that her family took in 2009. On this trip Jade
had the opportunity to see the Vimy Ridge Memorial and visit the gravesite of her great-great uncle Henri Plouffe who
fought and died in World War I. Also in the Intermediate age group, Kirstyn Johnson’s poem, “Daddy’s in a Better Place”
won First Place Intermediate Poem at the Area Level. Her poem is a heartfelt, emotional piece about what it is like for a
daughter to see her father leave for war. In the Senior age group Lisa Simenoff ’s untitled art work won First Place Senior
Poster at the Area Level and Second Place at the District Level. Lisa wanted to show a connection between the past,
present and future with her work so the words “Lest We Forget” figured prominently on her drawing. Well done, ladies,
and good luck on the next level of competition.
