Serues 8-10

Cut into cubes:


7r/z lbs. firm tofu

Mix together until smooth:

crtp soy sauce


2 Tbsp. peanut butter

Pour over the tofu cubes and mix together.


Brown the cubes in:
2 Tbsp. oil

In another skillet, saute:


1 Tbsp. oil
1 large onion, chopped
When the onion pieces become limp add:
2r/z Tbsp. fresh curry powder
r/z tsp. coriander
1/z tsp. cumin
1 tsp. salt

cup uncooked rice, brown or white

Mix all together and toast 5 minutes while stirring. Then pour in:
3Vz cups boiling water or stock
the browned tofu
Mix, bring to a boil, stiX, covel, turn heat to low and simmer 45 minutes for brown rice,20 minutes
for white rice. Serve.

Stuffed Baked Tomatoes

Serues 8-12

Wash 8 large or 12 small ripe tomatoes, then cut or scoop out a hollow on the stem end, leaving

Stuffing
Saute together until soft:
2 Tbsp. oil
1 cup onion, diced
1/z cup green peppet diced
Preheat oven to 400"

Mix together in a bowl:


1 lb. tofu, mashed

Combine sauteed vegetables and tofu mixture. Stuff tomatoes arid aifiange in a 9' square_oiled
baking pan. Top with bread or cracker crumbs. Bake for 20 minutes. Serve hot or ci:illeci'
