Greens Extravaganza

Serving Size: 1 1/2 cup


Yield: 4 servings

Ingredients:
1 package (10 ounce) fresh or
frozen mustard greens, or
collard greens, spinach, or
broccoli
2 fresh tomatoes or 1 can (32
ounces) stewed tomatoes, no
salt added
1 cup brown rice, cooked
1 cup cooked beans or 1 can
(15 ounces) ounce beans -
rinsed and drained
pepper to taste
