Recipe: Pierogi Dough

1. Wisk eggs, milk, sour cream, salt and cup water in a large bowl until combined

2. Add 1 cups flour and mix with a wooden spoon until the dough starts to come
together

3. Turn out the dough on a work surface and continue to knead, adding cup flour as
needed if the dough sticks to the surface(you may not use all the flour), until smooth
4. Transfer dough to a lightly floured surface and cover with an overturned bowl or plastic
wrap. Let rest for 30 min to 1 hour

1.combine these 3 ingredients in a bowl


2. pour cold water into bowl with flour and mix by hand until the dough takes all the flour
3. knead the dough for 2-3 minutes until the dough ball is smooth
4.portion dough into equal size balls
Roll out dough ball on a lightly floured surface. Cut in half and stuff dough with various
fillings.

1. Combine the ground beef and both onions and mix well
2. Cook the mixture in a SAUTE PAN until all the pink has gone from the
meat
3. Place cooked mixture in a COLANDER to remove excess oil
4. Put the mixture back to the SAUTE PAN
5. Combine the 5 dry ingredients first
6. Now stir these ingredients into the meat mixture

7. Add the water to everything, bring to a boil and simmer COVERRED for
about 10 minutes
8. Put the mix in a STAINLESS STEEL BOWL, let it cool and save it for
later

1. Shift flour, salt and baking powder in a stainless steel bowl

2. Cut shortening into flour and combine until small pea size balls begin to form in the
mixture

3. Add wet ingredients to dry mixture with shortening. Mix only until the dough forms into
a ball without over working the dough
4. Knead very lightly 10-12 times. Let rest for 5 minutes
5. Usind dough/ cookie cutter or portion scoop, portion onto lined sheet pan and brush
with egg wash
6. Bake at 400 degrees for 15 minutes in preheated oven

1. Combine these four ingredients in a bowl and let sit for 10 minutes

2. Mix flour and salt together

3. Add steps 1 and 2 together and knead for 10 minutes


(YES 10 MINUTES CONTINUOUS KNEADING)
4. PORTION DOUGH into 150 gram balls
Roll out dough into a circle-7 inches in diameter
Add 1 fluid ounces of pizza sauce and spread evenly
Cover with 2 ounces of grated mozzarella cheese
Place 5 piece of pepperoni on top and
Bake at 350F for about 25 minutes
