Break Cycle

Break Cycle means breaking the cycle of topping up an existing batch of


ingredient over multiple days by discarding the ingredient

This is different from secondary shelf life as in the case of secondary shelf life,
ingredients from different batches cannot be mixed

Example: Discarding flour after 7 days of continuous usage in the lug is a break
cycle as it keeps getting topped up with fresh batches. On the other hand,
grated cheese is discarded after 72hours of grating because of its shelf life

Break cycles are done because over a period of continuous usage of

ingredients in the given conditions, the ingredients may not retain their ideal
properties, freshness and taste.

Hence, in order to ensure that we only serve best quality products that are
also safe, break cycles are carried out

Break cycles are done for flour, ice cubes, Krusher mix and oil

Where break cycle is dependent on no. of days of usage, it is recommended


that all break cycles with same no. of days should be done on same day. Eg:
Flour and ice have a weekly cycle and hence can be done on the same night

It is also recommended that weekly break cycles are done on the same night
as weekly inventory. This not just helps in getting correct inventories for
weekly counts but also helps put a uniform system in place

Oil is the only ingredient for which break cycles are done basis quality and not
basis no. of days
