Molasses Sponge Cake

"This is quite an old recipe, and I hope that you will enjoy this one."

INGREDIENTS:
2-3/4 egg whites
30 g white sugar
2 g salt

70 ml molasses
1 g lemon zest
6 ml lemon juice

2-3/4 egg yolks


30 g white sugar

60 g cake flour

DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C).
2. Beat egg whites to form moist peaks. Gradually beat in 1/4 cup white
sugar and salt. Beat until very stiff and shiny.
3. Beat egg yolks and 1/4 cup white sugar together until very light and
fluffy. Beat in molasses, grated lemon rind and lemon juice. Stir in cake
flour. Fold meringue gently into batter. Pour batter into an ungreased 9
inch tube pan.
4. Bake for 45 minutes. Remove cake from oven, and invert until cool.
Loosen edges, and remove cake from pan.
