INTISARI

Penulisan Tugas Akhir ini bertujuan untuk mengetahui sarana dan


prasarana, serta proses pemotongan yang dilakukan di Rumah Potong Hewan
(RPH) Giwangan Kota Yogyakarta sehingga menghasilkan daging yang aman,
sehat, utuh, dan halal (ASUH), layak untuk diedarkan dan dikonsumsi.
Pengambilan data diperoleh dengan wawancara langsung, pengamatan
langsung, serta mengikuti kegiatan proses pemotongan ternak sapi di RPH
Giwangan selama satu minggu.
Berdasarkan data yang diperoleh dapat disimpulkan bahwa letak,
bangunan, luas lahan, sarana, dan prasarana RPH Giwangan telah sesuai dengan
SNI No.01-6159-1999. Proses pemeriksaan dan pelaksanaan pemotongan ternak
sapi yang dilakukan sudah baik dan memenuhi persyaratan halal menurut Fatwa
MUI No.12 tahun 2009.

Abstract

The writing of the final project aims to find out the facilities and
infrastructure, as well as the cutting process is carried out at the Slaughterhouse
animals (RPH) Giwangan Yogyakarta so that produce meat that is safe, healthy,
whole, and halal (ASUH), deserves to be circulated and consumed.
Data retrieval is obtained by direct interviews, direct observation, as well
as follow the activities of the process of cutting cattle in RPH Giwangan during
one week.
Based on the data retrieved can be inferred that the layout, building, land
area, infrastructure, means of RPH Giwangan were in accordance with SNI No.
01-6159-1999. Review process and execution beef cattle cutting is done well and
already meets the requirements according to halal MUI No. 12 in 2009.
