CHAPTER I

THE PROBLEM AND ITS SETTING

Introduction

The decision to attend a college or university and the admission to this

institution education has important outcomes for individuals and for society. Most

of the attention given to these decisions by researchers and by public

policymakers has focused on how high school students make their decisions.

Attention has also been given to how the institutions make their decisions about

the applicants they admit. There are many good reasons for the attention that

has been given to these decision-making processes. It is clear that individuals,

society, and colleges and universities benefit when more students choose to

continue their formal education after high school. Economists have demonstrated

that individuals who graduate from two-year and four-year courses in colleges

and universities typically have better jobs and incomes. College graduates are

financially stable and their quality of life is usually better. Colleges and

universities also benefit from students who enroll because of the contributions

that students make to the intellectual and social life of each campus and the

tuition offers students and their parents pay to both public and private institutions.

Public colleges and universities also benefit from the public funds that states

provide to educate their citizens.

In addition, the marketing tactics of colleges and universities also have an

influence on both the search and the choice stages. Colleges and universities

that are more timely and personalized in all of their interactions with prospective

students are more likely to exert a positive influence upon enrollment decisions.

The Philippine educational system produces one of the biggest numbers

of college graduates, compared to other countries worldwide, but generates one

of the smallest numbers of graduates with science and engineering skills

Prospective graduates are less attracted to science and engineering

courses. Higher education in science and engineering during the American

regime was driven mainly by the colonial government's need for competent public

servants and engineers to fill the gaps in the colonial bureaucracy and

administration rather than a benevolent desire to create a local pool of scientific

talent for national development.

Mariners Polytechnic Colleges Foundation in Legazpi City is a tertiary

educational institution, which has committed themselves to the task of extending

quality services to the students for higher education. After almost 25 years of

existence, it offers hotel and restaurant management and hotel management

courses for both degree and associate level. The hospitality department

continues with its goals, mission, and vision of producing professional committee

to the development of our country in the field of hotel management. Since, in

Hotel and Restaurant Management degree, can be ideal for those seeking

advancement in their already established careers in hospitality industry. By

obtaining hospitality students, students will be prepared for moving towards the

higher levels of the industry in specialized areas such as food and beverage

services, housekeeping, kitchen and front office.

This institution aims to ensure that the graduate who leaves its portals can

take advantage of the opportunities and meet the challenges of the times.

Mariners Polytechnic Colleges Foundation has been very serious in networking

with plethora of institutions, agencies and individuals indispensable in its quest to

assist graduates acquire employment.

This school provides a balanced interrelationship of academic requirement

and trainings needed to complete a degree of program. Today, more and more

shipping agencies and companies have been recruiting maritime graduates for

employment. Likewise local and international agencies have helped the school in

sending its students in BSHRM and BSHM to OJT. Some students, through the

IPTP- International Practicum Training Program, had their OJT in the USA and

Singapore.

Having introduced the opportunities for hospitality degree holder,

graduates of the different high schools in the BIcol Region have perceptions

of the course and the school when they enrolled this first semester 2010-

2011. The researchers have decided to looked into these perceptions of

the freshmen BSHRM and BSHM about the course and why they enrolled in

the course.

Statement of the Problem

This study assesses the perceptions of the first year Hospitality students

at Mariners Polytechnic Colleges Foundation, Legazpi City for school year 2010-

2011, on their course preferences. Specifically it seeks to answer the following

questions:

1. What is the demographic profile of the hospitality students in MPCF-LC, in

terms of:

a. age

b. sex

c. status

d. number of siblings in the family

e. school graduated from

f. family monthly income?

2. What are the perception of the students about hospitality course in MPCF-

LC, in terms of:

a. facilities

b. employment opportunity

c. departmental programs

d. parents choice

e. advertisements?

3. What are the problems encountered by the freshmen students of BSHRM

in MPCF-LC, in terms of:

a. enrolment procedure

b. admission requirements

c. classroom condition

d. subject with problems

e. Subject instructor?

4. What recommendations can be proposed to address the problems

encountered by the respondents in terms of :

a. enrolment procedure

b. admission requirement

c. classroom condition

d. subjects enrolled

e. subject instructor?

Assumptions of the Study

This study is guided by the following assumptions:

1. The demographic profile of the respondents in MPCF varies in terms of age,

sex, status, family monthly income and school graduated from.

2. The hospitality students have varied perceptions in taking up hospitality

course in MPCF-LC in terms of: facilities, employment opportunity,

departmental programs, faculty, parents choice and advertisements.

3. There are different problems being encountered by the BSHRM students in

MPCF-LC in terms of enrolment procedure, enrolment requirements, and

classroom condition, subject enrolled and subject instructor.

4. There are recommendations that can be proposed to address the problems

encountered by the respondents in terms of: enrolment procedure,

enrolment requirements, classroom condition, subject enrolled and subject

instructor.

Scope and Delimitation

This study focuses on the hospitality students of Mariners Polytechnic

Colleges Foundation enrolled this first semester for SY: 2010- 2011. The main

respondents of the study are one hundred freshmen students and transferees of

the BSHRM and BSHM who are randomly interviewed and given survey

questionnaires. The study looks into the perceptions of the freshmen students in

taking up hospitality course in MPCF-LC in terms of: age, sex, status, family

monthly income and school graduated from; the perception among the freshmen

students about hospitality course in MPCF-LC in terms of: facilities, employment

opportunity, departmental programs, parents choice, faculty and advertisements;

the different problems being encountered by the hospitality students in MPCF-LC

in terms of: enrolment procedure, enrolment requirements, classroom condition

subject enrolled and subject instructor; and the recommendation that can be

proposed to address the problems encountered by the respondents in terms of:

enrolment procedure, enrolment requirements, classroom condition, subject

enrolled and subject instructor. Other year levels and other freshmen taking

maritime courses are not included in this study.

Significance of the Study

The findings of this research may arise the interest and give significant

benefits or contribution to the following:

Hospitality Students. The findings of this study will encourage them to

pursue the course that they have enrolled and enjoy their stay in the institution.

Faculty. Result of this study will motivate the faculty members to further

improve their service and perform their duties to students that can result for

student retention of satisfaction. .

MPCF Administrator. The result may serve as an eye opener and guide

to satisfy the needs of the hospitality students.

Researchers. The findings of this study will serve as a baseline data and

will give them additional ideas, theories in creation of the study and facts why

students enrolled in MPCF.

Parents. The result will help the parents to decide which school is the best

for their children and what future awaits for their children if they enroll them at

Mariners Polytechnic Colleges Foundation.

Future Researchers. The findings will help future researchers to have an

idea about the topic.

CHAPTER II

REVIEW OF RELATED LITERATURE AND STUDIES

This chapter presents the review of literature and studies both from foreign

and local sources. This also includes the synthesis of the art, gap bridged by

the study, and the theoretical and conceptual frameworks. Terms are also

defined conceptually and operationally for clarity.

Foreign Literature

Powers and Borrows cite that education is clearly important. Indeed,

education has become essential in all walks of life. There is, moreover, a clear

connection between education, work and income. Studies have shown that

college graduates earn much more annually than those workers with just a high

school basic education. This difference is expected to grow as the demand for

knowledge worker continues to increase. The evidence, then, is that your

commitment to education will pay off.1

Education is an essential for every man. MPCF has included in the

Hospitality curriculum specific trainings for each year level. The more training the

student will acquire the more skills he may gain. This is one aspect of the

hospitality course that MPCF is proud to offer to the new students.

Training is necessary when new process or procedures are introduced,

new products are added, or new services are offered to guests. Training can

take place in several ways. This process may or may not be efficient or effective,

is likely to be non-standard, and has the potential of passing along the bad habits

or practices of employees doing the training. Training focuses on developing the

employees skills and ability to do the job to which he or she is assigned.

Development is the process for preparing workers for future job opportunities;

organizational development refers to efforts to provide additional skills to the

entire work group.2

The cited literature is relevant to the present study since training is

employed by MPCF to the Hospitality students to let them develop their

knowledge and skills and to prepare them for their future job. The only difference

is that in the cited literature it is focused on the employees while the present

study is on training of students.

As the internet becomes an increasingly popular and credible place to

research and enroll in education programs, marketers of leading educational

institutions are seeking ways to market their offerings online. Online lead

generation is one innovative approach for using online channels to drive

enrollment. In this approach to--saving educational institutions time and effort by

ensuring their enrollment service reps are focusing only on those students who

are most likely to enroll in their courses or degree programs. 3

The cited literature is relevant to the present study because those

incoming college students scribble the internet to choose schools and course to

enroll. And MPCF created its own site to showcase also its profile and courses

offered.

Local Studies

The government has instituted several incentives to students entering

science and mathematics courses such as grants, scholarships in science high

schools. Enrollment to some basic science and engineering courses in some

universities (like the University of the Philippines) have increased but

corresponding support structures have not been augmented such as

laboratories, teachers and classrooms. Furthermore, upon graduation, there are

not enough available research positions in universities or industry, prompting

many to go abroad or to be employed differently from their educational training,

either as managers, line inspectors or sales personnel. 4

Incentives are given to the students who enroll in the course. MPCF offers

scholarships and incentives to the entrants particularly those who have above

average grades and honor students. 5

Foreign Studies

Linking-learning styles preferences and ethnicity of international students

studying hospitality and tourism management. Findings show that majority of

students who are studying hospitality management programs in United Kingdom

preferred learning styles the practical way which will develop their skills and

knowledge and less with theorizing and reflections. These students show

special priority in joining organizations which will fully develop their skills in

hospitality and tourism management. 6

This study has bearing with the present study since freshmen perceived

that they will also experience the same the learning styles, that is the practical

way which will develop their skills and knowledge when they are in MPCF.

The necessary ability for teachers in Presentation in Kyoto University of

Education focusing on Communication in Teaching Learning Process. He

stressed that cultivating a teachers presentation ability makes an important

contribution to the improvement of school education. According to him,

nowadays, the style of education has been changed gradually. People seem to

be more attached to the importance of students initiative in developing their

personality.7

The study of Hayashi is relevant to the present study because it

emphasized the learning style adopted by teachers and that the ability and

qualifications of the teachers are important factor in the educational

institution. The students perceived that the faculties of the MPCF possess such

ability.

Hotel management curriculum which was the first organized effort to

acquire needed by tourism suppliers in the United States. Seminars and trainings

were held in various locations in the States in order to provide off-campus

extension educational opportunities. He said that the whole realm of training is

subdivided as follows: 1) Psycho-Motor Habits (Skills), 2) Cognitive Habits

(Knowledge), and 3) Affective Habits (Attitudes). 8

Hotel management curriculum in the United States provides trainings and

seminars to provide off-campus extension educational opportunities. This is also

true to the present study because MPCF also provides trainings and seminars for

the students.

The teaching and learning begin with the family and gradually build to

include, although they are not limited to, community, schools, the workplace,

farms, hospitals, prisons, colleges and universities. Therefore to understand

educational institutions and the teaching and learning process, students

developing concentrations in Educational Studies will inquire into who, when,

where and why people participate in educational and learning activities.

Consequently, students will include the history, philosophy, sociology and

psychology of education as basic foundation studies. In addition, todays

educators should gain knowledge and skills in the uses and applications of

technology in education.9

This has bearing with the present study in terms of why students enroll

in a certain course. Before the student have decided to enroll in MPCF

Hospitality course they have been briefed by their families as to what course

they will take and the student have already done survey by themselves and

perceived that what they wanted in a certain school.

In recent years there has been a growing appreciation of the issues of

career preference in medicine as it may affect student learning and academic

performance. Therefore, the researchers carried out this study to investigate

the career preferences of medical students at Jordan University of Science and

Technology and determine factors that might influence their career decisions. A

cross-sectional questionnaire-based survey was carried out among second,

fourth and sixth year medical students at the Jordan University of Science and

Technology, Irbid, Jordan during the academic year 2006/2007. A total of 440

students answered the questionnaire which covered demographic

characteristics, specialty preferences, and the factors that influenced these

career preferences. Possible influences were selected on the basis of a literature

review and discussions with groups of medical students and physicians. Students

were asked to consider 14 specialty options and select the most preferred career

preference. The most preferred specialty expressed by male students was

surgery, followed by internal medicine and orthopedics, while the specialty most

preferred by female students was obstetrics and gynecology, followed by

pediatrics and surgery. Students showed little interest in orthopedics,

ophthalmology, and dermatology. While 3.1% of females expressed interest in

anesthesiology, no male students did. Other specialties were less attractive to

most students. Intellectual content of the specialty and the individual's

competencies were the most influential on their preference of specialty. Other

influential factors were the "reputation of the specialty", "anticipated income", and

"focus on urgent care".10

The cited study is relevant in terms of students course preference. It is

the students decision to take the course that they prefer based on their

perceptions of the course offered by a particular college. The findings indicate

that before students decide to take a course they should properly weigh the pros

and cons of a course with the proper guidance of school authorities.

The cited study is similar to the present study in term of course

preferences or their course specialty. The students have reasons why they

prefer to take one course over the others. Intellectual content of the specialty

and the individual's competencies were the most influential on their preference of

specialty. The only difference between the study is the location and the

course being taken.

This research study11 set out to understand student attitudes toward the

value of adding lecture capture to existing courses and to assess preferences for

classes with a streaming option. A survey was sent to 29,078 undergraduate and

graduate students at the University of Wisconsin-Madison in April 2008. Average

response rate exceeded 25%. Of the survey participants, a significant number of

undergraduates (47%) have taken a class in which lectures were recorded and

made available online. Respondents answered 10 multiple-choice questions

related to their perspective regarding streaming lectures and reference for

streaming content. It is clear from the survey results that undergraduate students

would value the web casting of lectures and that, given the choice, would prefer a

course in which lecture content is recorded and Streamed over one that is not.

Benefits of making up for a missed class, watching lectures on demand for

convenience, improving retention of class materials, Improving test scores, and

reviewing material before class indicate the perceived value of streaming

services as a complement to in class interactions. Results showing interest in

having course material available online after course completion indicate potential

benefits for alumni interaction and continuing professional development.

Bertillo also made a dissertation on the institutional capability of Mariners

Polytechnic Colleges Foundation in Bicol Region. The salient finding were: 1)

The enrollment gradually increased in the BSMT/BSMarE programs; 2) The

graduates in both institutions were observed to be small in number most probably

because students needed to undergo a quite expensive apprenticeship program

for one year as a requirement for graduation for BSMT and BSMarE degrees; 3)

Approximately 85% of the graduated of MPCF-Bicol landed jobs through the

efforts of the schools placement agency or Office for Apprenticeship and

Employment Assistance (OAEA);4) Organization and administration obtained an

average ratings of very good;5) The purpose and objectives of the maritime

institution are clearly defined. They promote linkages between and among

regional, national maritime institutions and international development goals

obtained a very good rating; 6) The instructor is qualified to teach his assigned

subjects/courses as evidence by his educational background, training/license

and work experience in accordance with national and international standards with

an average rating of very good; and 7) There was an effective monitoring of

apprenticeship program, and the school had tie-up with shipping companies for

the actual instruction of students, and obtained a very good rating; 8) The

school had definite admission policies and procedures, such as: (a) entrance

organization/aptitude, (b) interview, evaluation of past errors, (d) physical and

medical including eyesight and hearing examinations; and (9) There was

qualified and responsible administrators who managed financial operations of the

school and this obtained a very good rating.

This is relevant to the present study in terms of linkages between and

among regional, national maritime institutions and international development

goals, the instructor is qualified to teach their assigned subjects/courses as

reference according to his educational background, training/license and work

experience.

Synthesis of-the-Art

Powers and Borrows emphasizes that education is an essential in for

The only difference is that in the cited literature it is focused on the

employees while the present study it is training of students.

Consumer Preference Index (CPI) by Prospective, states that the internet

is a valuable tool for consumers seeking information about university degree and

certificate programs online lead generation is one innovative approach for

using online channels to drive enrollment. In this approach, potential students

actually request to be marketed to--saving educational institutions time and effort

by ensuring their enrollment service reps are focusing only on those students

who are most likely to enroll in their courses or degree programs. MPCF is doing

this through advertisement in the national TV program to ensure that students

can view the said advertisement.

The government has instituted several incentives to students entering

science and mathematics courses such as grants, scholarships in science high

schools. Enrollment to some basic science and engineering courses in some

universities (like the UP) has increased. Some courses have a Retention QPI.

In some courses, there is a minimum QPI in which students have to reach in

order to be retained in their respective courses. If students are not able to get the

minimum QPI, they are asked to shift into another course.

Acordias studies about the linking-learning styles preferences and

ethnicity of international students studying hospitality and tourism management.

This study has bearing with the present study since freshmen perceived that

they will also experience the same the learning styles, that is the practical way

which will develop their skills and knowledge when they are in MPCF.

focus on the hotel management while our study is on both hotel and restaurant

management and hotel management.

the pros and cons of a course with the proper guidance of school authorities.

The course material available online after course completion indicates potential

benefits for alumni interaction and continuing professional development.

The study of Bertillo has relevance with the present study because it

emphasizes that trainings and seminars are important to the students and the

students perceived that these are being offered by the Hospitality course in

MPCF. This is relevant to the present study in terms of linkages between and

among regional, national maritime institutions and international development

goals, the instructor is qualified to teach his assigned subjects/courses as

evidence by his educational background, training/license and work experience in

accordance with national and international standards with and an effective

monitoring of apprenticeship program, and the school had a very good rating on

tie-up with shipping companies for the actual instruction of students.

Given the importance of the above related literature and studies, this

research hope for further studying the issue.

Gap Bridged by the Study

The different studies cites the similarities of different literatures and

studies in terms of training, course offered, learning styles offered; faculty

qualification and linkages and admission. But then, after having a thorough

consideration of the aforementioned data, the researchers has assured that there

is no research work which deals on perceptions of the incoming freshmen on the

school they would want to enroll and their course preference. This was the gap

the study bridges.

Theoretical Framework

This section provides the interpretation viewed from the theoretical

aspects based on the theories stated that anchored on the subject matter being

studied. The researcher employs this theory as guide in the research process:

Thorndikes connection theory or learning theory is stimulus response

theory based on association between stimuli and responses. For every stimulus

there is a corresponding response and the connection between the stimuli and

the response is called the S-R bond.

When a student enrolls in the hospitality course the stimuli is their

perceptions of the Hospitality course or why do they enroll in this particular

course. The response is their active performance in the course during their stay

at MPCF-LC although it is only the first semester.

The researcher adopts this interrelated theories for this has a factual direct

link to the topic in a way that as a person decides to be educated in the

possession or acquisition of skills especially of the interpersonal relation, their

employability has been also enhanced and developed for them to utilize in real

work situation.

Conceptual Framework

This study looks into the perceptions of the freshmen students in taking

up hospitality course at Mariners Polytechnic Colleges Foundation Legazpi

Campus for school year 2010-2011. This to assess their perception why they

enrolled in Hospitality course and the course offering, the problems encountered

and the possible solutions to address the problems. In this study, freshmen

hospitality students and transferees undergoes descriptive survey to determine

their perceptions which results into quality education, motivated and responsible

students. A feedback mechanism is instituted to inform the source respondents

on the result of the investigation.

The conceptual framework is presented in Figure 2.

Definition of Terms

For classification the following terms and expressions has been

conceptually and operationally defined:

Perception. It is the act or state of receiving knowledge of external things

by the medium of the senses, idea or conception. 13 In this study, it refers to the

idea of the freshmen students about the BSHRM course in MPCF.

Hospitality. Is the relationship between guest and host,or the act or

Practice of being hospitable. Specifically, this includes the reception and

Entertainment of guests, visitors, or strangers, resorts, membership clubs,

Conventions, attractions, special events, and other services for travelers and

Tourists. 14

Facilities. The means by which the performance of any act may be more

easily accomplished.15 in this study, it refers to the facilities offered by the school

to the hospitality courses.

Course Preference. Choice of one thing more than the other.16 the term

as used in the study refers to the course the freshmen have enrolled which is

BSHRM and HM.

Linkages. It refers to the link or connection. 17 In this study, the term refers

to the connection MPCF is connected, such as shipping lines, hotels and others.

Trainings. The system of developing strength or faculties. 18 In this study,

the term refers to the hands - on practices that the Hospitality students are

required in preparation for their actual work in hotels and restaurants.
