Nicosia Salad

Ingredients:
2 boiled potatoes
2 boiled eggs
4-5 cherry tomato
A few olives
One tuna can
One cucumber
One red onion
Lettuce
Lemon juice
Olive oil
1 teaspoon of herbs
1 teaspoon of Dijon mustard

Method of preparation:
Boil the potatoes and eggs and then chop them into quarters. Also chop the
tomatoes and cucumbers. Peel and chop the onion. The salad can be chunked
manually. Add the olives and tuna.
Make a dressing out of olive oil, wine vinegar, salt and pepper and season the salad.
Swedish Meatballs

Ingredients:
300 grams of minced meat
120 ml of milk
50 grams of bread-crumbs
a small egg
a small onion
half a teaspoon of allspice
salt
pepper
a teaspoon of butter

Method of preparation:
Mix the breadcrumbs with the milk and allow it 5 minutes to absorb the liquid while
chopping the onions. After cooling it, mix all the ingredients and knead well 5-8 min.
Then form the meatballs and fry them in butter.
Couscous salad

Ingredients:
The ingredients below are for 1 person:
60 grams of couscous
90 ml of water
3 tablespoons of olive oil
3 cherry tomatoes
1 green onion
Parsley
Salt
Pepper

Method of preparation:
Boil the water mixed with the tablespoon of olive oil. Then add the couscous and
cover it with a lid. After 5 minutes, mix the couscous. Meanwhile, chop the
vegetables into small pieces and mix it with 2 tablespoons of olive oil, salt and
pepper. Mix the cold couscous with the vegetables and refrigerate until serving.
Oysters with curry sauce

Ingredients:
For four people:
2 kg of oysters
50 grams of butter
150 ml of wine
200 grams of cream
1 tablespoon of curry
1 teaspoon of turmeric
Pepper
Green parsley.

Method of preparation:
In a high pot (in which the oysters can open), melt the butter and stir it from time to
time. Then add the wine and when it all boils, add the oysters, which can boil for 5
minutes. In the liquid remaining from the shell of the oysters, add the cream, in
which you incorporate the curry and turmeric. Add the pepper and let the resulting
sauce boil for another five minutes in order to get consistent. Finally, add the
chopped parsley, mix it and then pour it over the oysters. You can serve it with a
simple cooked rice.
Spaghetti with mushroom sauce

Ingredients:
300 grams of spaghetti
400 grams of mushrooms
200 ml of tomato sauce
1 green onion
1 garlic
basil
oregano
salt
pepper

Method of preparation:
Boil the water, add the salt and the spaghetti. Boil them al dente and then put them
on a plateau. Chop the onions and garlic and smooth them in olive oil. Add the
mushrooms and let them soak in. Add the tomato sauce, season with oregano, basil,
salt and pepper. Pour the sauce over the pasta and its ready to be served.
