Microbiologa aplicada I
Abstract. Cellulose is the most abundant organic molecule in nature and it is of great
importance for industry; it is synthesized by a variety of organisms, including plants, algae,
fungi, bacteria and animals. Acetobacter Aceti has the capacity of cellulose production and
it constitutes the model organism in research on the biosynthesis of polymer. This paper
offers a review of the progress in the understanding of the process of cellulose synthesis,
particular characteristics of the bacterial cellulose as alternative source to vegetal cellulose
and its biotechnological applications.
Introduccin.
El gnero Acetobacter engloba un grupo de bacterias con habilidad para oxidar azcares y
etanol generando cido actico. Entre los productores ms eficaces de celulosa figuran A.
xylinum A. aceti, A.hansenii y A. pasteurianus. De entre ellos A. xylinum se ha tomado
como organismo modelo para los estudios bsicos y aplicados sobre CB, debido a su
habilidad para producir, partiendo de diversas fuentes de carbono, altos niveles del
polmero como producto primario de su metabolismo.
La estructura molecular de la celulosa que sintetiza A. aceti es idntica a la de la celulosa
vegetal, sin embargo, y a diferencia de sta, la CB se halla en la naturaleza con un elevado
grado de pureza, libre de lignina, hemicelulosas y pectinas.
