Introduo

O mdulo de Lngua Inglesa servio de cafetaria, balco e mesa na restaurao,
integrado no curso Hotelaria e Restaurao, tem como objectivo orientar a
aprendizagem de conhecimentos bsicos, ao nvel da conversao em ingls, essenciais
para o bom desempenho profissional.

Partindo do vocabulrio mais corrente da lngua inglesa, passando pela terminologia


especfica do mbito profissional da restaurao e finalizando com exemplos de
conversao, este manual facilita um apoio indispensvel para todos os formandos que
desejem iniciar uma carreira no sector de hotelaria e restaurao.

Maitre

No que diz respeito ao restaurante, como se fosse um anfitrio para os clientes. Dever
distinguir-se pela sua educao, boas maneiras e cortesia. Ele supervisiona e controla
todo o trabalho executado no restaurante, garantindo a qualidade do servio. Cabe-lhe

receber o cliente na entrada do restaurante, observar e indagar do cliente, durante a
refeio, se tudo corre a seu gosto, atender a uma reclamao. Despede-se do cliente
sada deste, ao trmino da refeio.

Sommelier Wine steward

o que apresenta a carta de vinhos e sugere ao cliente, na faixa de preos desejada,


qual poder ser o melhor para acompanhar o prato que foi escolhido. Cabe-lhe
esclarecer dvidas e atender as reclamaes pertinentes bebida. Assiste degustao
do vinho pelo anfitrio e serve as taas depois daquele aprovar a qualidade do vinho
escolhido. Se o sommelier se apresentar com a tastevin o anfitrio pode pedir que ele
experimente e aprove o vinho, em seu lugar.

Chefe de fila Chef of rang

Tem um papel de superviso com ateno voltada mais para o desempenho da equipa,
enquanto o maitre tem a ateno mais voltada para o cliente. Est subordinado ao
maitre e pode substitu-lo, exercendo as duas funes simultaneamente.

Empregado de mesa Waiter

Acomoda o cliente, inclusive juntando mesas ou providenciando cadeiras, ajudado pelo


commis. Anota os pedidos dos clientes e serve os pratos escolhidos; quem apresenta
a conta quando solicitado, ao final da refeio. parte do trabalho do empregado de
mesa esclarecer o cliente sobre os pratos constantes do menu. O cliente no deve recear
pedir informaes sobre cada item que lhe interessar, seja um prato, ou um vinho.

Commis Waiter Staff

o auxiliar do empregado de mesa no servio aos clientes, principalmente na sua


acomodao, na chegada. Limpa as mesas vazias, troca as toalhas, junta mesas para
grupos maiores de pessoas, transporta a comida da cozinha at o guridon (mesinha ou
carrinho colocado junto ao cliente para facilitar o servio).
