nach. Das von Restaurants, Küchenchefs oder von Starköchen empfohlene Le-
bensmittelangebot nimmt stetig zu und entwickelt sich kontinuierlich weiter.
Die zunehmende Darbietung professionellen Kochens hat zur Folge, dass Ver-
braucher höhere Erwartungen an Aromen und Geschmackserlebnisse haben.
Dies wiederum führte dazu, dass die Nachfrage in den eher genussorientier-
ten Premium-Segmenten beflügelt wurde.

New global product launch activity with an indulgent and premium positioning
increased by 18 % (2014 vs. 2013), signifying that there is no slowing down for
new product development for premium lines. In regard to more specific claims,
Innova Market Insights reports a recent surge (+51 %) in product launches
which carry either “fine dining”, “chef” or “restaurant” claims (2014 vs. 2013).
The leading market categories for such claims in 2014 were: Snacks (26 %),
Sauces & Seasonings (15 %), Soup (11 %), Ready Meals (11 %), and Meat,
Fish & Eggs (11 %). It is anticipated that more fine food lines will traverse to
supermarket shelves in the near future.

Wer heute von sich sagt, er lebe vegan, gilt nicht als verschrobener Sonder-
ling, sondern als hipper Trendsetter. Der völlige Verzicht auf Produkte tieri-
schen Ursprungs ist auf dem Weg in die Mitte der Gesellschaft. Vor diesem
Hintergrund ist das Marktforschungsinstitut concept m (Köln/Berlin/London)
der Frage nachgegangen, wie nachhaltig diese Entwicklung ist und ob der
Veganismus langfristig als Ernährungsalternative eine Bedeutung entwickeln
kann. Im Rahmen einer Initiativstudie wurden Verbraucher tiefenpsycholo-
gisch interviewt, Experten befragt und die Behandlung des Themas in den
sozialen Medien untersucht.
Als Toptrend für das Jahr 2015 wurde „From Clean to Clear Label“ identifiziert.
Dieser Trend spiegelt die Entwicklung zu klarer und einfacher formulierten
Produktversprechen und Produktverpackungen und somit zu größtmöglicher
Transparenz wieder. Weitere Trendschwerpunkte in diesem Vortrag sind die
Erfüllung der Bedürfnisse der sogenannten Millennial Consumer, also der
zwischen 1980 und 2000 geborenen Verbraucher sowie das „Convenience for
Foodies“-Angebot für Konsumenten, die auch in den eigenen vier Wänden
nicht auf Gourmetkost verzichten wollen. Einen weiteren spannenden Trend
bildet „A Fresh Look at Frozen“ ab. Um einerseits mit der gesunden Anmutung
der Frischeregale und andererseits mit dem von Konserven gebotenen Kom-
fort konkurrieren zu können, hebt das Produktmarketing etablierter Anbieter
von Tiefkühlkost – unter Hinweis auf deren hohen Nährstoffgehalt – den

Die Kategorie „Free From“ löst sich rapide von ihrem „Nischendasein“ und
wird zum Mainstream. Die erste „Free From“-Plattform war „Glutenfrei“.
Der Anteil glutenfreier Produkte an allen Neuprodukteinführungen weltweit
im Bereich Nahrungsmittel und Getränke stieg zwischen 2010 und 2014 von
5,2 % auf 9,4 %. „Vegetarisch“, „Vegan“, „Milchfrei“ und „Eifrei“ sind nur eini-
ge der neuen Plattformen, die es zu beobachten gilt, während die Nachfrage
nach Produkten mit den Kennzeichnungen „Koscher“ und „Halal“ zusätzlich
Innovationen hervorbringen.
Besonders stark ausgeprägt mit einer jährlichen Wachstumsrate von 30,6 %
in den Jahren von 2010 bis 2014 ist der Anstieg der Produkte mit der Kenn-
zeichnung „Vegan“ für die zunehmende Zahl der Konsumenten, die sich für
Nahrungsmittel ohne tierische Inhaltsstoffe entscheiden. Auf der Packungs-

Auf der Anuga 2015 präsentiert sich der Bundesverband des Deutschen
Lebensmittelhandels e.V. (BVLH) mit seinen Partnern wieder auf dem BVLH-
Retailforum. Unter dem Motto: „Sustainability. Food Safety. Transparency.“
zeigt der Verband die vielfältigen Facetten des Lebensmittelhandels sowie
unterschiedliche Lösungen verschiedener Organisationen zu diesen aktuellen
Themenfeldern.
In diesem Jahr steht der mobile Lebensmittelhandel im Mittelpunkt der
BVLH-Messepräsentation. Die so genannten „rollenden Supermärkte“ sind im
BVLH-Fachverband „Mobile Verkaufsstellen“ organisiert. Sie spielen vor allem
bei der Nahversorgung mit Lebensmitteln im ländlichen Raum eine wichtige
Rolle. Der BVLH präsentiert auf dem Retailforum ein mobiles Verkaufsfahr-
zeug. Es führt Messebesuchern anschaulich vor Augen, dass man ein Vollsorti-
ment von mehr als 2.000 Artikeln auf einer Verkaufsfläche von nicht einmal
zehn Quadratmetern platzieren kann.
Darüber hinaus präsentieren sich auf dem Retailforum wieder die food aka-
demie und das food hotel. Der BVLH als Hauptgesellschafter der führenden
Bildungseinrichtung des Lebensmittelhandels stellt mit dieser Messepräsen
tation einmal mehr die hohe Bedeutung bestens ausgebildeter Fachkräfte
unter Beweis.
Auch das Thema Nachhaltigkeit nimmt wieder breiten Raum auf dem Retail-
forum ein. Die Partner Fairtrade Deutschland, das Forum Nachhaltiger Kakao
und das Thünen-Institut mit dem Datenbankprojekt „Fischbestände online“
zeigen, was Lebensmittelwirtschaft, Wissenschaft, Zivilgesellschaft und Politik
unternehmen, um die sozial- und umweltverträgliche Erzeugung, Verarbeitung
sowie Distribution von Lebensmitteln zu verbessern.
Mit IFS und GLOBALG.A.P. gehören auf der Anuga 2015 wieder zwei der füh-
renden Initiativen zur Qualitätssicherung bei Lebensmitteln zu den Partnern

des BVLH. Erneut am Retailforum beteiligt ist GS1 Germany. Der Spezialist
für die Entwicklung und Implementierung offener, branchenübergreifender
und weltweit gültiger Standards präsentiert sein Leistungsportfolio für eine
effiziente Gestaltung unternehmensübergreifender Prozesse entlang der
Wertschöpfungskette. ORGAINVENT wird sein System zur Herkunftskenn-
zeichnung von Fleisch präsentieren, dass neben der Rindfleischetikettierung
auch die Herkunftskennzeichnung der anderen Fleischarten umfasst.
Neu in diesem Jahr dabei ist die Initiative „Die Lebensmittelwirtschaft“. Der
Verein wird getragen von Unternehmen und Institutionen aus der Landwirt-
schaft, dem Lebensmittelhandwerk, der Lebensmittelverarbeitung und des
Lebensmittelhandels. Sein Ziel ist die Verbesserung des Verbrauchervertrauens
in unsere Nahrungsmittel durch fakten- und wissensbasierte Information.
Im Zentrum der Beteiligung am Retailforum steht das Thema Bioökonomie.
Auf ihrem Stand präsentiert „Die Lebensmittelwirtschaft“ Ansätze die zeigen,
welchen Beitrag die Bioökonomie zur Nachhaltigkeit in der Lebensmittelkette
und zur Ernährungssicherung leisten kann.
Wie in den zurückliegenden Jahren ist das Retailforum mit seinen Themen
auch wieder Anlaufstelle für die offiziellen Messerundgänge. Journalisten aller
Mediengattungen sowie den Fachbesuchern aus dem In- und Ausland stehen
die Experten des BVLH gern mit Rat und Tat zur Seite.

Clean label has truly entered the mainstream, as manufacturers and foodservice
operators look to address consumer calls for shorter and more recognizable
ingredient lists. Over 20 % of US products tracked in 2014 featured a “no
additives/preservatives,” “natural” or “organic” positioning, up from 16.7 %
in 2013. Globally, and especially in Europe, the trend is far more established.
Innova Market Insights reported +206 % CAGR growth in the number of global
products with a “natural” positioning from 2008-2014. There is no sign of this
trend slowing down, as.
The China Cuisine Association (CCA) is the national organization of the catering
industry in China. Its 3,000 members and 11 specialized sub-committees cover
all major business categories of the industry. CCA also organizes some of the

The “free-from” category is rapidly transforming from a “niche” part of the store
to the mainstream. Gluten free was the first “free from” platform to reach far
into the mainstream. The share of gluten free claim products jumped from
5.2 % to 9.4 % of global food & beverage launches from 2010 to 2014. Veget-
arian, vegan, dairy and egg free trends are just some of the new platforms to
watch, while kosher and halal demands are also leading to innovation. The rise
in vegan claims is particularly dramatic, with 30.6 % CAGR from 2010 to 2014;

The “free-from” category is rapidly transforming from a “niche” part of the store
to the mainstream. Gluten free was the first “free from” platform to reach far
into the mainstream. The share of gluten free claim products jumped from
5.2 % to 9.4 % of global food & beverage launches from 2010 to 2014. Veget-
arian, vegan, dairy and egg free trends are just some of the new platforms to
watch, while kosher and halal demands are also leading to innovation. The rise
in vegan claims is particularly dramatic, with 30.6 % CAGR from 2010 to 2014;
as consumers opt for foods that are free from animal-based ingredients. Front

In the last 15 years, the state initiative “Plant genetic resources in North
Rhine-Westphalia” has brought several grains from the Plant Genetic Resources
group into cultivation in various agricultural operations. In the process, at
least the same income must be ensured for the farmer as would be available to
him through conventional strains already established in the current economic
cycle. Only consistent demand for these raw materials at an acceptable price
can assure sustainable cultivation! So much for the theory! In this lecture we
will show that it is quite possible to raise the enthusiasm of consumers through
innovative and sophisticated craftsmanship in brewing culture and to acquire an
appropriate price. The network of experienced farmers, institutes and brewers
and their products will also be introduced.

Someone who now claims to live a vegan lifestyle is not considered an eccentric

a move to clearer and simpler claims and packaging for maximum transpar-
ency. Meeting the needs of the Millennial consumer has also become a key
focus, as has targeting the demands of the gourmet consumer at home, with
“Convenience for Foodies.” Another exciting trend is “A Fresh Look at Frozen.”
In order to compete with the healthy appeal of fresh aisles and the convenience
of canned foods, established frozen foods are focusing on freshness in their
marketing, stressing the superior nutritional content in frozen food. At the same
time, the frozen segment is witnessing new product launch activity in new
categories.

Clean label has truly entered the mainstream, as manufacturers and foodservice
operators look to address consumer calls for shorter and more recognizable
ingredient lists. Over 20 % of US products tracked in 2014 featured a “no
additives/preservatives,” “natural” or “organic” positioning, up from 16.7 %
in 2013. Globally, and especially in Europe, the trend is far more established.
Innova Market Insights reported +206 % CAGR growth in the number of global
products with a “natural” positioning from 2008-2014. There is no sign of this

organization of cross-company processes along the value chain. ORGAINVENT
will present its origin labelling system for meat which includes beef labelling as
well as origin labelling for all other types of meat.
The initiative “Die Lebensmittelwirtschaft” (“The Food Industry”) will be a
new participant this year. The association is supported by companies and
institutions from the agricultural industry, the craft-based food industry, the
food-processing industry and the food trade. It aims at enhancing consumer
confidence in food by fact-based and knowledge-based information. The initi-
ative’s presentation at the Retail Forum will focus on bioeconomy. “Die Lebens-
mittelwirtschaft” will demonstrate at its stand how bioeconomic approaches
can contribute to sustainability in the food chain and to food security.
Like in the last years, the Retail Forum with its themes will be the point of
contact for official tours of the exhibition. Journalists from all media genres and
trade visitors from all over the world are invited to contact the BVLH experts
who will be pleased to assist them.
Two special highlights are taking place on the Anuga Culinary Stage - first one
will be on Sunday, 11th October 2015 - the Patissier of the Year and the other
one will be on Monday, 12th October 2015 - the Chef of the Year.
