BLT Ranch Pasta Salad
Ingredients
1. 1 pound bacon, chopped and fried
crisp
2. 12-16 ounce pasta, cooked well
3. 1-2 large firm tomatoes, diced
4. 1 bunch green onions, diced
5. 1 cup mayonnaise
6. 1/2 cup ranch dressing
7. 1/2 cup milk
8. 1 teaspoon fresh ground black pepper
9. 1 teaspoon dill weed
Method
1. Cook pasta, a little over cooked is best because it firms up when chilled. Rinse
in cold water and leave to drain well.
2. Chop and cook bacon until crisp and drain on paper towels.
3. Mix remaining ingredients in a large bowl.
4. Add in cooled pasta and bacon.
5. Mix well and serve immediately or store to let flavors blend.
6. Great as is, or over some greens of your choosing. I had baby spinach on hand,
so that's what I used. I also used a 12 ounce box of bow tie pasta this time, but I
also love this salad with small-medium shell pasta, but anything you like will
work.

Orange Marmalade Granola

(8 servings) Printable Version

2 and 1/2 cup Old Fashioned oats

1/2 cup all purpose flour
1/2 cup chopped pecans
1/2 cup brown sugar
1 teaspoon salt
1/2 cup butter
1/2 cup orange (or other fruit) marmalade
2 Tablespoons maple syrup
1 teaspoon vanilla
1/3 cup cranberries

I've made this recipe twice now... once with orange marmalade and once with a
beautiful homemade kiwi marmalade. Both times, it worked great. Mrs. Breakfast
took a jar full of the kiwi creation to her work and it got rave reviews. The thing that
makes this granola special is a slight tang from the fruit rind in the marmalade. Also,
I think most of us are used to honey or maple syrup providing the sweetness in
granola. This recipe prompts a kind of "oh, this is different" response because the
sweetness comes from something you don't usually equate with granola. Hope you
like it as much as I do!

1/3 cup raisins (or other dried fruit)
1/4 cup wheat germ - optional

Place nuts in a microwave-safe baking dish (I used an 8x8 Pyrex baking pan) and
microwave them on high for a 1 minute and 20 seconds. Remove baking dish from
microwave.
