CHAPTER I
THE PROBLEM AND ITS BACKGROUND

Introduction
malnutrition and economis crisis are the most problems confronted not only by Filipinos but also
other countries around the world. In the course of history famine and starvation has been plaguing
humanity throughout the country even despite the biological technology of modern times. this
basic human need is at the bottom of thebpyramid yet places on top in the foremost soci and
economic issues. this signifies that the need to adress the problem is urgent and imperative.

it has been qouted by some psychologists that there is no other environmental factor that affects
man so despotically as the factor of human nutrition. to perform and function soundly the
individual must be physically and mentally capable and it is onlybmade possible by being
nutritionally attended. such being the case, various government agencies all throughout the world
are exhuasting time and efforts to look for solution to appease the starving humankind.

in the philippines alone, various feeding programs have been conducted in the school and the non
- government agencies and other private institutions sponsor communities of which this implies
that in peoples health lies the destiny of nation. Itay sound cliche but truly, health is wealth.
Moreover, the ingenuity of people was aroused due to the needs for solving these problems.
Nutritionist and deiticians are preparing food ordinarily in our backyards yet, nutritious and
economical. With country's fertile soil and good climate food production is not possible.

food shortage maybe a virtual reality, our creativity and practicality as an antidote to this global
problem and by just going to the basic, we could be able to meet both ends.

In consonance to these problems, the researcher. a s a would- be teachwe came up with the idea of
studying a philippine native yam crop called ulabe. with the philippines rich bowels, yam of
different varieties grow in the country abundantly. it is common knowlege, that it can be
substituted for rice, for having the same nutrition content found in rice. it can also be processed
into dessert, viand and flour. uet despite its abundance, a little recognition of its importance id
givi. to yam beacuase we are accustomed to the conventional foods such as rice, fish meat bread
and also the various foreign cuisines by the western countries that filipinos adopted as their basic
food.

furthermore, most of oir naturally grown food products are just wasted due to pur lack of
knowlegde on their usefulness. at this point, reseracher attempted to undertake an invetigative
study on the nutritional value of yam specifically ulabe and found out its nutriotuin content isa
relative to the much recognize ld types of root crops.

this is in hope. will help solve problems in our war against malnutrition and starvation. this study
is also havinh athe built in vehicle for biologic awareness by prseraving the endemic ulabe yum
thus preventing its extinction.
BACKGROUND OF THE STUDY

root crops have been considered one of the most nutitious food to human. Nutritionist a d
deiticians agree that protein fiber and carbohydratesbar ethe major component kf root crops. This
is the main reason why it is a versatile substitue for rice which is the main staple food for filipinos.
with more than 60 varieties known throughout the world the philippines may have got a large
share of its variety through no official number and study had been conducted yet. In the market,
root crops such as camote, gabi san fernando, ube and cassava are commonly seen. some of us are
not familiar with wild variety that we tend to feed to animals. by undergoing an in depth study of
the wild types, we can utilize it as a potential substitute to our conventional diet. with its high
nutrition content we arevassured of healthy diet and economic benefits

ulabe is no different. through many are unaware of its existence, people who are familiar with it
use this as their staple food. they can make merienda, viand, kakanin, susch as cake and suman out
of it. with its usefulness and versatility, it would be demmed necessary to examine its nutritonal
component or value so that people may adopt this as part of their diet

STATEMENT PF THE PROBLEM

this undertaking is conducted to uncover the nutritional value of dioscorea luzonensis commonly
known as ulabe.

significantly it sought to answer the following question.

1. what are the crude protein, crude fat and crude fiber content in Dioscorea lunzonensis?

2. what are the importance of the findings with regards to the nutritional content of dioscorea
luzonensis?

3. what are the suggestions and recommendations to promote the cultivation of dioscorea
lunzonensis?

SIGNIFICANCE OF THE STUDY

food is the fundamental needs of people, life is impossible without food. proper body functioning
is attributed to the health conditions of the individual

a healthy individual is the one who can meet his daily nutritional needs. a common misconecption
about diet is being able to eat on a regular basis. thisbis not an ide one because nutrition must be
taken into consideration as always.
it cannot also be denied that maany of our foods are usually made from chemicals of commonly as
monosodium coated in which after a long period of consumption affects our health.

this study may serve its purpose to the following persond cited below.

to the biology teachers

It may widen their knowldge about the existing crops in the loaclity and being a transmitter of
knowldge to learners and students to become cognizant to yans importance

to school community

they are the potential vehicle for the promotion of the cultivation of the endemic variety of yam
thus preventing thier extinction; by designinga program such as planting drive, production is
assured

to the agriculturist

thus study may help them as a guide and reference. information about the nature of yam may help
them understand the how and why of planting an cultiviating yam.

to the future researchers

this may add additional infornation for those who wants to further study the yam. review of
relateed literature and study of findings will ascertain the researchers reliability of data and
information.

to the community
the people became. aware of its existence and its significance. It may be an opportunity for them
to utiluzed different products when this variety of yam is processed

scope and limitation

this study is limited only in dioscorea luzonnensis which is one species of yam that was available
in the are of ------- a d focused on the nutritional value of the species.

DEFINITION OF TERMS

to further understand the study, the researcher provided terms the definitions either operational and
lexical

carbohydrates - it is an organic compound containing a molecule of carbon, hydrogen and oxygen.

it is the basic source of sugar and other sugar compound
diet- it is regulated course of eating and drinking
famine- it is a situation wherein people dont have enough food to eat
fat- it is a chemical compound that is formed from fatty acids and glycerol molecules
fiber- these are food element that helps in the proper digestion
malnutrition- it is a condition where our body does not get enough nutrients.
nutrition- the proper amount of vitamins and minerals nedded by the body to function well.
nutritional value - its is the quantity of nutritional conetnt of foof based on recommended dietary
allowance (RDA)
proteins- these are large, complex molecule:contain carbon, hydrogen, oxygen and nitrogen
