Rolls (WIP)

1.25 cups warm milk


2 teaspoons active dry yeast
1/4 cup sugar
1 egg
1/4 cup butter, softened
1 teaspoon salt
3.5 cups flour, or until soft dough
1/4 cup butter melted

sprinkle yeast on milk, rest for 5 min


beat in sugar, eggs, 1/4 butter, salt, thoroughly
gradually stir in flour until dough is soft as expected
cover and let rise for 1 hour
punch down, cover, rise one hour (x3)
preheat oven to 400
break into rolls (~18), place in pan, cover and rise until doubled in size
grease baking dish
bake for 10-15 min, golden brown tops, drizzle melted butter

French bread

one packet yeast


1/4 cup warm water
1/4 teaspoon sugar
1 cup hot water
1.5 tablespoons granulated sugar
1/2 tablespoons salt
1/4 cup oil
2.75 cups all purpose flour (or 2.5 cups bread flour)

Dissolve yeast and sugar in warm water


in a bowl, mix hot water, granulated sugar, salt, and oil
add half of flour to bowl slowly and mix well
add yeast mixture to bowl and stir in
add rest of flour and mix
rise for 1 hour
divide into 3 loaves
place on greased cookie sheet, slice the tops of the loaves, brush with egg whites
let rise for 30 min
bake in 400 F (preheated) oven for 25 min until golden brown
