GREEN PEA CAULIFLOWER

Its so fun to dress cauliflower rice up with new flavors and ingredients. Heres a classic
green pea rice recipe that the kids really enjoy.
Ingredients
1/3 tablespoon olive oil
51/4 tablespoons yellow onion, chopped
1/3 head organic cauliflower
1/3 cup fresh peas (or frozen, if you must)
22/3 tablespoons chicken broth
1/3 tablespoon lemon juice
pinch of sea salt
pinch of white pepper
Instructions
1. In a large skillet heat the olive oil over medium. Add the chopped onion. Saute for about 5
minutes,
until tender.
2. Wash cauliflower, discard the leaves and chop into small pieces. Grate the pieces with a food
processor.
3. Add the shredded cauliflower to the skillet along with the remaining ingredients. Continue to
cook, stirring often, for about 10 minutes. Once the rice is tender, remove from heat. Serve as
you
would traditional rice. Enjoy!
