SOTO BETAWI

(BETAWI SOUP)

Ingredients:

300 grams stewed beef


300 mililiters of thick coconut milk
1 cm of ginger
2 cm of galangal
1 cm of turmeric
1 lemongrass
3 lime leaves
5 candlenuts
5 shallots
3 garlics
1 teaspoon of sugar
1 teaspoon of salt

Garnishes and accompaniments :

1 cook potato, cut into cubes


1 tomato, cut into cubes
Crackers (Emping)

Instructions:

1. Put in the candlenuts, ginger, turmeric, galangal, shallots, and garlics into a mixer,
and blend it into a paste.
2. When the mix ingredients is ready, take a pan and pour a tablespoon of cooking oil,
and then put in the mix ingredients inside the pan.
3. Stir fry the mix ingredients until it cooks and mix well with the cooking oil.
4. When it boils, pour the thick coconut milk, and stir until it change color from white into
yellowish.
5. Add the stewed beef into the boiling pan.
6. Add in the lemongrass and lime leaves, stir it well until you can smell the aromatic
fragrance from those two ingredients.
7. Everything has already put into the pan, and we just have to wait until it cooked well.
8. Pour it into a bowl, and put the garnishes on it. Soto Betawi is ready to be served.
