would help to increase the preciseness of the study.
ABSTRACT
The statistic found out that we could get nutrients like protein, fat, calories, etc.
in eating isaw. In behalf of the positive sides, we could also get disease such as
salmonella, shigellosis, hepatitis-a, hepatitis-b etc. if the supplier didn’t clean and sanitize
the isaw (intestine) very well.
This research contains advices that was consulted from certified nutritionists to
those people who eats isaw and does not eat isaw. This will also serve as a guide to those
isaw lovers for them to monitor their isaw intakes.
We also found out that it is very helpful to those skinny person because isaw is
from an internal organ of chicken or pig that contains high-fat, calories that helps to add
some flesh on their body also make them more energize.
This book also includes recommendation from our respondents (nutritionist) that
you should know how they prepare the intestine and also be observant of the
surroundings where they sell isaw.

It is the intestine of chicken or pork that can be cook in two ways which is by
frying it in a deep pan full of vegetable oil while the other way is by simply grilling it
using a charcoal. This Isaw are usually dipped in a mixture of vinegar, onion, peppers,
Thai Chilis or what we called “Siling Labuyo”, ginger, garlic and other spices and this
mixture called “pinakurat”. You can usually buy this kind of food by the vendors on the

D. Profiles of Respondents
We are going to interview 2 nutritionist students that age ranges from 18 to 25
years old, also two certified nutritionist dietetics that age ranges from 26 to 40 years old.
F. Definition of terms
Isaw- is a kind of street food that is famous in Philippines and there are
two sources of Isaw (intestines) those are from chicken and pig.
Street foods- food cooked by vendors and sells it in a street or in a
public location.
Shigellosis- Shigellosis is an infectious disease caused by a group of
bacteria called Shigella (shih-GEHL-uh). Most who are infected
with Shigelladevelop diarrhea, fever, and stomach cramps starting a day
or two after they are exposed to the bacteria.
Hepatitis A- is a liver disease caused by the hepatitis A virus. The virus
is primarily spread when an uninfected (and unvaccinated) person
ingests food or water that is contaminated with the faeces of an infected
person. The disease is closely associated with unsafe water or food,
inadequate sanitation and poor personal hygiene.
Hepatitis B- is a potentially life-threatening liver infection caused by
the hepatitis B virus (HBV). It is a major global health problem. It can
cause chronic infection and puts people at high risk of death from
cirrhosis and liver cancer.
Salmonella- is a genus of rod-shaped (bacillus) gram-negative bacteria
of the family Enterobacteriaceae.
Carcinogen- a substance capable of causing cancer in living tissue.
Nutrient- A nutrient is a substance used by an organism to survive,
grow, and reproduce. The requirement for dietary nutrient intake applies
to animals, plants, fungi, and protists.
Protein- Protein is found throughout the body—in muscle, bone, skin,
hair, and virtually every other body part or tissue. It makes up the
enzymes that power many chemical reactions and the hemoglobin that
carries oxygen in your blood. At least 10,000 different proteins make
you what you are and keep you that way.
Fats- Fat are an essential part of our diet and is important for good
health. There are different types of fats, with some fats being healthier
than others. To help make sure you stay healthy, it is important to eat
unsaturated fats in small amounts as part of a balanced diet.When
eaten in large amounts, all fats, including healthy fats, can contribute to
weight gain.
High Fat- Denoting or relating to food or a diet that is high or relatively
high in fat, especially saturated fat.
Calories- a unit used
in measuring the amount of energy food provides when eaten and
digested
Carbohydrates- any of a large group of organic compounds occurring in
foods and living tissues and including sugars, starch, and cellulose. They
contain hydrogen and oxygen in the same ratio as water (2:1) and
typically can be broken down to release energy in the animal body.

A. What is Isaw?

We will interview two students most specifically taking up nutrition and dietetics
inside the campus. We will also interview two certified nutritionist dietetics.
C. Research Instrument
The graph shows that out of 4 respondents 2 (50%) of nutritionist said that
in eating isaw we can get a lot of nutrients such as protein, fat, calories etc.
While the remaining 50% is equal to 2 respondents, they said that eating isaw
can cause various diseases. We therefore conclude that in eating isaw we can get
nutrients or either way we can get various diseases.

The graph shows that out of 4 respondents 4 (100%) of nutritionist said that in
eating isaw we can get a lot of disadvantages. We therefore conclude that in eating isaw it
will cause diseases such as Hepatitis-A, Hepatitis-B, Shigellosis, and Salmonella.

The graph shows that out of 4 respondents 2 (50%) of nutritionist said that the
benefits we can get from eating isaw, one is the nutrients. While, the 1 respondent (25%)
said that another benefit we can get from it is for being affordable and delicious. The
remaining one respondent (25%) said that we can get advantages from eating isaw also
satisfies our cravings. We therefore conclude that half of our respondents said that we can
get nutrients from eating isaw.
D. Give some advice to those people who eats isaw?

should be aware of the preparation of your supplier. While the remaining respondent
(25%) said that you should monitor your isaw intake. We therefore conclude that you
should know the preparation of your isaw supplier, so you won’t be worried on eating it.
E. Give some advice to those people who do not eat isaw?

it is right to be vigilant. While the remaining one said that you should find another food
substitute for isaw. We therefore conclude that if you don’t eat isaw it is right to be
vigilant because you already know what danger you can get.
CHAPTER V: SUMMARY, CONCLUSION AND RECOMMENDATION
A. Summary of Findings
The statistic found out that we could get nutrients like protein, fat,
calories, etc. in eating isaw. In behalf of the positive sides, we could also get
disease such as salmonella, shigellosis, hepatitis-a, hepatitis-b etc. if the supplier
didn’t clean and sanitize the isaw (intestine) very well.
We also found out that it is very helpful to those skinny person because
isaw is from an internal organ of chicken or pig that contains high-fat, calories
that helps to add some flesh on their body also make them more energize.
Also we were able to know the possible causes and effects of eating
isaw. They gave us some ideas of what could isaw do to us. We also know that if
the supplier didn’t clean and prepare the intestine very well, the bacteria that
lives inside it will spread that can cause various diseases such as salmonella,
hepatitis a, hepatitis b, and shigellosis. If the vendor overcooked the intestine or
any similar food item, the charcoal that was attached contains chemical that can
cause carcinogen (cancer).
In conclusion, eating isaw is not bad at all. Many people thought that
isaw can only give diseases to the consumers but they are not inform that it has
benefits.
C. Recommendation
We would like to encourage the local government official here in the Philippines
to conduct a further research about isaw. Mostly of the Filipinos are more likely to eat
street foods because it is affordable. It is better to inform the consumers of isaw the
advantages/disadvantages on eating isaw, so they have some knowledge of what they are
eating. Also, the information they will need will be possible with the help of DOH
(Department of Health) and NFA (National Food Authority) by their authority and right
to announce such information to consumers.
It will be a big help to the consumers if they are enlighten with the reality. They
will have an enough knowledge about isaw and other similar food items. It is indeed a
very helpful act to isaw consumers if they will be informed in such a thing.
