difference is that

mami uses beef
shank with bone marrow in it which make the dish taste richer and more flavorful.

Ingredients

 1½ kilo bone in beef shank with bone marrow, sliced to serving pieces
 1 tsp. whole black peppercorns
 1 large onion, chopped
 5 cloves garlic, minced
 1 medium Chinese cabbage, cut into 2 inch lengths
 2 whole corn on the cob, cut into 2 inch pieces
 200 grams dried egg noodles
 2 beef bouillon cubes
 12 pcs hard-boiled quail eggs
 sliced spring onions
 fried garlic for garnishing
 1 Tbsp. patis (fish sauce) (optional)
 salt and pepper to taste

Instructions
How to cook beef bulalo mami:
1 In a medium size pot, saute garlic and onion until fragrant. The add the beef shank and saute until
slightly brown.
2 Add water just enough to cover the meat or about 8 cups. Add in the corn and peppercorns. Bring to a
boil and remove the scum floating on the broth.
3 Lower the heat and simmer until the meat and tendons are tender for about 2 to 3 hours. Add more water
if necessary.
4 Then add in the bouillon cubes, patis (if desired) and egg noodles. Cook for another 2 minutes. Next add
in the Chinese cabbage and cover then simmer for 1 minute more. Adjust the seasonings with salt and
pepper.
5 To serve in individual bowls: divide the noodles in serving bowls, add one serving of beef shank, corn
and cabbage. Pour some beef broth, add hard boiled quail eggs then garnish with spring onions and fried
garlic. Serve hot.

 1 Tbsp. minced garlic

6 Make a marinade by combining olive oil, garlic, paprika, rosemary, salt, pepper and cayenne in a bowl
and mix well. Set aside.
7 Place beef cubes and vegetables in a bowl. Pour marinade over beef and veggies. Put in a zip lock
container or zip bag and seal.
8 Refrigerate for 30 minutes and gently mix occasionally. Thread meat and veggies alternately on skewers.
9 Grill the kebabs on hot charcoal or flame. Then baste with the remaining marinade halfway through
cooking. Serve hot.

How to cook Beef Afritada:


28 In a pot, boil the beef chunks in water, just enough to cover the meat. Cook until tender.
29 Remove the beef chunks from the broth and set aside. Save the broth.
30 In a saucepan, heat some cooking oil and saute garlic until fragrant.
31 Then add onions and tomatoes. Saute until tender. Add the red and green bell peppers.
32 Add in the beef cubes and mix well. Pour tomato sauce then followed by the beef broth. Mix well.

 1 kilo beef briskets, cut into ¾ inch cubes


 2 medium size potatoes, quartered
 2 medium size carrots, slice into slabs (slanted cut)

How to cook Beef Curry:


35 In a medium size wok, heat cooking oil and fry potatoes and carrots until color turns light brown. Drain
and set aside.
36 In the same wok, saute garlic until fragrant. Add onion and saute until soft.
37 Add in beef briskets and stir fry until the color turns to brown. Dissolve curry powder and hot water.
38 Pour fish sauce, curry powder and 1½ cup water then simmer meat for 40 minutes or until meat is
tender. Add more water if necessary.

40 Pour in coconut milk, salt and ground pepper then simmer for another 4 to 6 minutes or until the liquid

For the spice paste:


 8 dried chilies, softened in boiling water and drained
 10 small shallots, finely chopped
 7 cloves garlic, minced
 3 Tbsp. ginger, minced
 2 Tbsp. cooking oil
 5 tsp. galangal, peeled, cut into thin slices (can be substituted with ginger)
 2 stalks lemongrass, pounded
 1 pc tumeric leaf
 5 kaffir lime leaves, torn
For the beef rendang:

 brown sugar or muscovado sugar to taste

How to make the spice paste:


49 With mortar and pestle, grind the softened dried chilies, shallots, garlic and ginger into a fine paste.
50 Heat the oil in a stew pot over moderate heat and fry the paste for 10 minutes and until fragrant.
51 Be careful not to burn the paste. Keep adding some oil a little at a time if the paste becomes too dry.
52 Add the galangal (or ginger), lemongrass, turmeric leaf, and kaffir lime leaves.
How to cook beef rendang:
53 Add beef cubes to the fried spice paste. Stir in coconut milk and add salt to taste.
54 Bring to a simmer (don't boil), cover and stir from time to time until beef is tender for about 3 to 4

The procedure below requires combining water and oil. The beef is boiled until the water evaporates - this
makes it more tender. The remaining oil fries the beef. You can skip this process by directly frying the beef in
oil.

Ingredients

 1½ lb beef sirloin, thinly sliced


 5 tablespoons soy sauce
 3 tbsp minced garlic or 1 tablespoon garlic powder
 2 tbsp sugar
 ¼ teaspoon salt
 ¼ teaspoon ground black pepper
