know about how they treat your money.
To add to that little butt-burner, this year’s prod-

increase (to $325 million) for legislative operations
at a time we’re all told money is tighter than two
coats of paint.
Guess they figure a reward is in order for operat-
ing so well.
Remember, Wolf wants to borrow, too: $1.25
billion against Liquor Control Board profits. If he
does, that could draw a lawsuit. Could also give him
enough money to avoid another budget fiasco next
year while running for re-election.
So, back to the original question: Political upshot
of all this?
My money’s on none.
Pennsylvanians have low expectations. Six, eight
months from now, this budget’s forgotten. Repub-
lican control of the legislature seems safe. Wolf
can point to earlier gains in education, medical
marijuana, and compromises on “historic” action
related to improvements on booze and pension
policies.
Meanwhile, bond lawyers and casino owners

KITCHEN GADGET
QUICK CUTS: A food processor can be a real boon in the kitchen
for frequent cooks, but it also can be pricey, take up a lot of
storage space and require a lot of disassembly and cleaning after
use.
But if you don’t mind using a handled pull cord to whir the blades,
then a manual chopper/processor will fit the bill. Multiple blades
make short work of your ingredients, turning them into anything
from coarse chunks to smooth puree. They require no electricity
and they’re available at relatively low prices.
Many companies make their own version (and some are made
with a crank handle, if that’s easier to operate). The one pictured,
by Zyliss, comes with a 25-ounce bowl and is dishwasher-safe.
n Price: $23.

n What: A round, decorative fried, crispy pastry made with flour, sugar, milk and
eggs, a citrus-and-spice syrup and walnuts.
n Fun fact: A hot, flower-shaped metal mold on a stick is dipped into the batter and
plunged into the fryer. Once they’re fried, the diples are shaken off their molds.
FINIKIA
n What: An oval-shaped cookie, made with butter, sugar and flour, that’s dipped in
a sweet syrup and sprinkled with walnuts.
n Fun fact: The sugar-and-water syrup is boiled in a huge metal vat along with
cinnamon sticks, whole cloves, apples, oranges and lemons.
LOUKOUMATHES
n What: Roundish pastries that are crispy on the outside and moist and tender on
the inside. They’re served hot, with honey syrup.
n Fun fact: These pastries, which resemble fried doughnut holes, are made fresh
throughout the weekend. The volunteers say people line up all weekend to get them
fresh from the fryer. They’re made downstairs in the kitchen and brought upstairs on
trays by the school-age members of the congregation.
RAVANI
n What: A square piece of cake, made with semolina and regular flour and served
with honey syrup.
n Fun fact: Ravani looks similar to another item on the Greek Bazaar menu —
