We all have our go-to meals, the ones that are
easy to make with no recipe required because
we’ve made them so many times.
Mine is quiche.
Quiche is described as a savory open tart featur-
ing a pastry crust, eggs, milk or cream, and cheese.
Different kinds of meats and vegetables can be
added.
Quiches are a staple of French food, but a num-
ber of different countries, including Italy, have
similar foods. Eggs, milk and cheese is a pretty
basic combination.
I first learned about quiche when I was a
teenager. My parents owned “The French Chef
Cookbook,” featuring Julia Child gleefully swing-
ing a mallet, ready to attack some defenseless

My parents enjoyed watching “The French
Chef” on PBS, though they rarely ever cooked
anything she made.
My father loved to comment that Julia Child
was not a French chef. She was neither French
nor did she work in a restaurant.

great cook, I wanted something easy.
