ABSTRAK
Terasi merupakan produk fermentasi yang hanya mengalami perlakuan penggaraman
dan dibiarkan beberapa waktu hingga proses fermentasi dapat terjadi. Proses fermentasi dapat
berlangsung karena adanya enzim yang berasal dari bahan baku yakni ikan. Peran garam
dalam pembuatan terasi ikan teri ialah sebagai bahan pengawet. Perbedaan perlakuan
pemberian kadar garam akan memberi hasil yang berbeda pula pada produksi terasi ikan teri.
Penelitian ini bertujuan untuk mengetahui pengaruh dari pemberian berbagai kadar garam
pada pembuatan terasi ikan teri terhadap kualitas organoleptik yang dihasilkan melalui proses
fermentasi. Bahan dasar yang digunakan ialah ikan teri (Stolephorus sp) sebanyak 1500 g
yang dibagi menjadi 3 kelompok masing-masing sebanyak 500 g dengan kadar garam
masing-masing yakni 250 g, 500 g, dan 750 g. Metode pengambilan data yang digunakan
ialah dengan melakukan uji organoleptik pada lima orang subjek uji coba dengan parameter
warna, aroma, rasa, dan tekstur. Rata-rata hasil uji organoleptik terkait warna menunjukkan
warna abu-abu, dan rata-rata hasil uji organoleptik terkait tekstur, aroma, serta rasa yang
paling menonjol ialah pada terasi dengan kadar garam 250 g. Hasil tersebut menunjukkan
bahwa kualitas terbaik dari ketiga jenis terasi tersebut ialah pada terasi dengan kadar garam
250 g.
ABSTRACT
Terasi is a fermented product that only undergoes salting treatment and is left for
some time until the fermentation process can occur. The fermentation process can take place
because of the presence of enzymes derived from raw materials, namely fish. The role of salt
in the production of teri terasi is as a preservative. The difference in the treatment of giving
salt levels will give different results in anchovy shrimp paste production. This study aims to
determine the effect of various levels of salt in making anchovy paste on the quality of
organoleptic produced through the fermentation process. The base material used is 1500 g of
Stolephorus sp, divided into 3 groups of 500 g each with salt content of 250 g, 500 g, and 750
g respectively. The data retrieval method used was organoleptic testing on five test subjects
with color, aroma, taste and texture parameters. The average result of organoleptic test
related to color shows gray color, and the average result of organoleptic test related to
texture, aroma, and the most prominent taste is in shrimp paste with 250 g salt content. These
results indicate that the best quality of the three types of shrimp paste is in shrimp paste with
a salt content of 250 g.
