AMERICAN BREAKFAST
Fresh Fruits
It’s made from 3 kinds of fresh fruits such us slices of Papaya, Watermelon,
Pineapple.
Juices
It’s made from fresh blend fruits and have 3 choice about it such us Papaya,
Watermelon, Pineapple.
Cereal
Its main dishes for American breakfast, and we have 3 choices about it such us
Oat Meals, Rice Crispy, Corn Flake.
Bread/ Butter
It’s serve with mix bread such us Doughnut, Danish, Croissant, Berliner.
Egg Dishes
Its main dishes for American breakfast, and we have 5 choices about it such us
Omellete, Scramble, Poach Egg, fried Egg, Boiled Egg.

D. SERVICE PROCEDURES RESTAURANT DRY PRACTISE
1. Breakfast Service Prosedure
a. Opening the glass ( open The glass before the guest in to restaurant, open the glass
from the right side)
b. Welcoming the guest “ Good morning, welcome to Tambora Restaurant”
c. Seating the guest (escort the guest to the table, and seat the guest) “have a sit
please”
d. Unfolding the napkin (unfolding napkin from the left side, unclock wise)
e. Pouring ice water ( take ice water from side stand then pouring into water goblet,
serve from right side, clock wise, ladies first.)
f. Explain the menu (explain the menu yang example : “good morning ladies and
gentlemen, I’am Iza to be your waiter for your breakfast, today we have American
breakfast menu for your first course we have slice of mix fruit or Juice such as
Pinaple, Apple and Orange, for your second course we have Bread such as
Doughnut, Danish, Croisant, for your third course/main dishes we have egg
dishes such as Omellete, Scramble, Poach Egg, fried Egg, Boiled Egg or cereal
such as Oat Meals, Rice Crispy, Corn Flake and for your hot beverage we have
Hot Coffe or Tea
g. Collect the meal coupon ( take the meal coupon from the guest “ may I collect your
coupon meal? please” dan take meal coupon clockwise)
h. Taking the order :
 Fresh Fruit and Juice
 Bread
 Cereal
 Egg
 Coffee or Tea.
i. Serve coffee or tea from right side according clockwise
j. Adjusting Cutleries (Excuse me, May i adjust your cutleries, please?”)
k. Take bread and serve it. “ here is the bread, please enjoy”
l. Serve juice or fresh fruits from right side of the guest (ladies first and clockwise).
“here is fruit/juice, please enjoy.”
m. Clear up plate for fresh fruits, if juices move glass of juice near the water goblet.
n. Serve egg dishes/cereal. “ here is your Egg Dishes/Cereal, please enjoy”
o. Clear up egg dishes and cereal. “ how was the egg/cereal? May I clear up, please?”

p. Refill coffee or tea.
q. Clear up empty dishes such us high ball glass, creamer, etc.
r. Farewell the guest “thanks you for your coming to our restaurant and I hope you
come back again in another time, see you, good morning”.
