Ingredients
16 large, ripe, green bananas
4 large eggs
4 Tablespoon vanilla extract
12 Tablespoons light brown sugar
8 Tablespoons granulated sugar
4 teaspoons ground cinnamon
4 teaspoons baking powder
4 teaspoons baking soda
2 teaspoons salt
6 cups all-purpose flour
8 Tablespoons olive oil
Instructions
1. Grease a standard muffin pan (or line with paper muffin liners). Preheat oven to 350
degrees F.
2. Mash bananas in a mixing bowl. Add egg, vanilla, brown sugar, granulated sugar, and
cinnamon and stir well to combine.
3. In a separate small bowl stir together flour, baking powder, baking soda and salt. Add
to banana mixture and stir, just to combine.
4. Gently stir in melted butter. Don't over-mix the batter.
5. Spoon the batter into prepared muffin pan and bake for 18-25 minutes. Makes 48
muffins.
