TOPIC OVERVIEW:

I chose the topic of “culinary trends,” because I am very interested in culinary arts! I have

found a lot of interest in some of the rather “off the wall” trends of 2018 and 2019, such as

cannabis infused food and beverages. I intend to discuss the most popular food and drink trends

of 2019 and the past few years, as well as how the trends of today compare to trends and

traditions of the past. I found most of my sources by using the Boolean format on EbscoHost or

searching “2019 food trends” and other keywords on google scholar. The trend that I have found

most interesting so far is how people are switching to more “natural” eating habits.

Gelb, D, et al (2015-Current). Chef’s Table. Netflix.com/chefstable

Popular Source: Netflix Show

Content: Chef’s table gives perspectives on global food trends. It goes in depth on certain food

trends in each episode. This is a good place to get ideas on global food trends that you would like

to research more in depth.

CRAAP Evaluation: This source is relevant (within the last 4 years). The intended audience is

anyone interested in learning about food trends and global food traditions. I believe that this

source is a great way to learn about lots of different types of food trends! The show consults
multiple chefs and food experts. Overall, the information seems accurate, but some may be bias,

due to personal tastes and opinion. The purpose of this source is to inform and entertain, so it

may be “jazzed up” for viewer benefit.

Grew, R. (2000). Food in Global History. New York: Routledge,

https://doi.org/10.4324/9780429500411

Traditional Source: Food in Global History Book

Content: This source gives information on more of the global food issues as well as trends and

traditions. It is a great way to compare trends and traditions of today to trends and traditions of

the past. It also explores food issues in other countries.

CRAAP Evaluation: This source is a little outdated for my topic. It provides a good overview

on food trends and issues in the past. This source is not very accurate for my topic. It focuses

more on food insecurity and food issues globally, instead of food trends. There is nothing listed

about the author's credentials, but it is a peer-evaluated, published book, therefor, I believe it is

reputable. The language is quite scholarly, so you may need previous knowledge about food

issues to be able to fully understand the book. The purpose of this book is primarily to inform,

but I believe there may be some persuasion tactics as well.

Le, Emily (2017). Today’s Business of Food: Behind the Scenes of Modern Food

Businesses. The University of Texas, Austin.

Nontraditional Source: Personal Research Project

Content: This source evaluates the most popular food companies in the world. If you are

wanting to focus on how companies affect food trends, this would be a good place to start.

CRAAP TOOL Evaluation: This source is relatively up-to- date. The information is relevant

to my topic and is easy to read and understand. The author is likely not a reputable source or an

expert. There is no information listed about the author or her credentials. There is also no

information regarding editing or peer-evaluation. Overall, I do not think this source is very

reputable. It does not provide any credentials on the author or give any information about the

accuracy of the information.

Vey, P. (2007). "We succumbed to your hype.". Retrieved from

https://library.artstor.org/asset/ACONDEIG_10313752317

Artistic Source: Cartoon

Content: This source shows an image of a restaurant hostess saying, “we succumbed to your

hype.” This image is a good representation of how restaurants are ever evolving with food

trends.

CRAAP TOOL: This source is difficult to evaluate using the CRAAP tool, since it is just a

picture.

WHAT’S HOT FOR 2019? Cannabis- and CBD oil-infused food and drinks are top trends for

this year. (2019). Restaurant Business, 118(2), 15. Retrieved from

https://emporiastate.idm.oclc.org/login?url=http://search.ebscohost.com/login.aspx?direct=true&

db=b9h&AN=134761121&site=eds-live
Traditional Source: Article

Content: This resource is a great place to start when looking for food trends in 2019! It lists the

hottest food and drink trends and gives a brief description. It also goes a little more in depth

about the CBD oil and cannabis in food trend. This article would be a great place to get an idea

of what to focus your food trend research on.

CRAAP Evaluation: This source is very relevant. It is an article written within a few months,

which means the trends listed are up-to-date. I believe that the source is reputable, since it is a

national organization. However, there is no specific author listed, so it may be hard to determine

if whoever wrote this article is reputable. Using the CRAAP tool, this source would not be a

great one to use for all your information, due to its questionable author and their credentials. I

believe it is a great place to start and get ideas of where to start your research.
