Ingredients
6 nos Egg yolks 6 nos Egg white
70g Vegetable oil 90g Castor sugar
90g CARNATION® Evaporated Creamer ½ tsp Salt
100g Cake flour, sieved 1 tsp Cream of tartar
Methods:
1. Preheat the oven to 170°C. Line a 9” baking tray with parchment paper.
2. Combine egg yolks, vegetable oil and CARNATION® Evaporated Creamer. Mix well.
3. Slowly fold in sieved flour and set aside.
4. Whisk egg white in a clean bowl until slight frothy. Add in castor sugar, salt and cream
of tartar. Continue to whisk until stiff peak.
5. Fold the egg white into the batter carefully until evenly combined.
6. Pour the batter into the lined baking tray and gently tap the tray against the table
to remove trapped air.
7. Bake the cake over a tray of hot water at 165°C for 50 mins or until the skewer inserted
into the cake comes out clean. Turn off the oven, open the door slightly and let the
cake sit inside for 5 mins.
8. Remove the cake from the baking tray and cool on a wire rack.
9. Allow the cake to cool slight before cutting it and serve.

1. Combine all marinade ingredients in a seal bag. Mix well.
2. Place the chicken chops into the bag and marinate for at least 3 hours or best overnight.
3. Roast the marinated chicken in a pre-heated oven at 175°C for 25 mins.
4. Garnish with some sesame and spring onion. Ready to serve.

Methods:
1. Peel and slice the fuzzy melon into 4cm pieces or 6 equal parts.
2. Core the inner part of each piece to form bowl. Soak in salt water for 15 mins.
3. Finely chop half of the melon seeds and pulp. Combine with all the ingredients
in egg mixture. Mix well and set aside.
4. Steam the melon pieces for 5 mins. Pour the egg mixture into each piece and place
the prawns on top of each piece.
5. Steam again at high heat for 15 mins. Ready to serve.

Methods:
1. Combine sugar and custard powder. Mix well.
2. Finely chop the pineapple and set aside.
3. In a pot, boil pineapple syrup and CARNATION® Evaporated Creamer. Remove from heat
and slowly add in custard mixture. Stir well.
4. Return to medium heat, add in chopped pineapple and stir until the custard thicken.
Set aside to cool and chill in the chiller before use.
5. Pipe the pineapple custard into the tartlet shells and garnish with pineapple,
mint leaves & cherry.

Methods:
1. Steam pumpkin for 30 mins until soft. Remove from heat set aside to cool.
2. Set aside 200g of diced pumpkin and blend the rest of the pumpkin into puree.
3. Add water, pandan leaves, pumpkin puree, CARNATION® Evaporated Creamer into a
sauce pan and keep stirring with a whisk until it starts to boil. Add in the remaining diced
pumpkin and stir well.
4. Keep the low heat and quickly stir in cold butter, whisk it until butter fully melted.
Ready to serve.
