RESUMEN
SUMMARY
The following investigation aimed to evaluate the main characteristics such as the weight
and size of the egg, as the color of the yolk, clear and peel was made in the feeding and
nutrition laboratory of the FMVZ-UNA the samples were 4 eggs of the hen Creole, 3 eggs
from the fmvz farm chicken, 3 eggs sold in stores; the weight was measured using a digital
precision balance of akita brand that has a capacity of 500 g, the average weight of Creole
chicken egg is 49.9 g, shell weight 5.5 g, yolk weight 12.5 g, light weight 24.9 g. The
average chicken egg that is on the FMVZ farm has an average egg weight of 54.4 g, shell
weight 7.9 g, yolk weight 16.7 g, light weight 24.9 g. The egg average of the store the
weight of egg 58.3 g, weight of skin 7.3 g, weight yolk 17.1 g, light weight 33.8 g in
conclusion the eggs of the stores have greater weight, followed by eggs of the farm and
eggs of criollas . Besides that the eggs of stores stand out for having greater proportion in
weight of shell and smaller of clear, the commercial eggs present major proportion in
weight of yolk. The field have higher protein content than farm and commercial eggs and
have higher prices.
