years that county and state offices are up for
grabs, absentee voting — one indicator of turn-
out — hasn’t quite matched expectations.
Less than two weeks before the Aug. 6 prima-
ries, fewer than 400 people have casted ballots
in Lowndes and Oktibbeha counties combined,
according to local election officials.
“It’s kind of low right now,” said Lowndes
County Circuit Clerk Teresa Barksdale.
In Lowndes County, 150 people had voted
by absentee ballot as of Tuesday. In Oktibbeha
County, there have been 201 absentee ballots
cast.
“We’re not as busy as I thought we’d be,” said
Oktibbeha County Deputy Circuit Clerk Sheryl
Elmore.
Barksdale said that while the absentee votes
to date are a bit lower than expected, she doesn’t
believe that will mean a low turnout for the Aug.

Voice of the people
An appeal to work together
I am calling on everyone to be greater. If ever
there was a time to hold one another accountable it
is now. When I say everyone I mean every title, ev-
ery entity in our city, our community, our county.
No one is exempt. Holding someone accountable
does not have to start publicly but in some cases it
must. We must first exhaust all measures behind
the scenes peacefully. I know that we can all do
more. We all can treat one another better. How can
we label all white as racist? How can we label all
blacks as thugs? How can we label all law enforce-
ment as corrupt? We need order or we would be in
total chaos. Rules and regulations are established
for everyone’s overall protection. There are bad in
every group of life but this categorizing everyone
because of one or a few is ridiculous. I strongly
believe everyone needs a raise but right now I am
speaking of law enforcement and teachers. I want
you take a moment and think about their jobs. We
are going to hold one accountable and make our
community greater.

Honey promotes the browning of
tuna steaks on the grill.

How to grill tuna

with a smoky
char and a
tender interior
BY AMERICA’S TEST KITCHEN

P
erfectly grilled tuna steaks
should combine a hot, smoky,
charred exterior with a cool,
rare center. For a home cook, this
ideal can be an elusive goal.
For grilled tuna steaks with an
intense smoky char and a tender
interior, we started with a hot grill.
We moistened the tuna steaks’
flesh with a vinaigrette to promote
browning and allow the oil to pen-
etrate the meat of the tuna steaks.
And instead of using sugar in our
vinaigrette, we used honey.
Both promote browning, but
honey does it faster, which was
important with the quick cooking
times for tuna on the grill. It’s easy
to add complementary flavors to
this dish by mixing up the season-
ing in the vinaigrette.
We prefer our tuna served rare
or medium-rare. If you like your
tuna cooked medium, observe the
timing for medium-rare, then tent
the steaks with foil for 5 minutes
before serving.
