Marjorie started teaching in New South Wales in 1954. Her journey then took her to Vancouver,
Emerson College in the UK, and Wynstones Steiner School. She had a break to look after 2
daughters, and started teaching again at Michael Park School in New Zealand. She was a pioneer
at Taruna Steiner School in NZ, became principal there and director of the Early Childhood
Faculty. Since that time she has focused on teaching Early Childhood staff.
She is an inspired –and inspiring- speaker with a wealth of knowledge and experience. This talk is
highly recommended to all parents and caregivers in our school. Bring friends and grandparents
too!

A Healthy Grain for Breakfast?

With the increased awareness of the health devastation that is sugar, many
of us are now coming to terms with the reality that “grains” are also largely
sugar. Sugar is at the heart of ALL dis-ease, this is no longer up for debate.
But for many of us it is an addiction and replacing it altogether seems an
almost impossible option.

Good health is about what you do most of the time (85%), so if you are
unable to give up grains, at least minimise them. In addition, it is crucial to
lessen their impact by properly preparing them. This means to soak them to
neutralize the phytate (anti-nutrient) content and release the nutrients so
they become more absorbable. A grain that is not prepared well is nothing
short of challenging to the body and the driver of dis-ease in ourselves and
our kids. Added to that, typical grain based foods provide little to no
nutrition and in fact draw on the body’s stores of nutrients to be digested.
For example, grains deplete the body of essential magnesium, a mineral
needed for hundreds of reactions in the body especially for the nerves and
heart.

Here is an example of a breakfast that is an option for healthy grain lovers


(healthy refers to anyone who is consistently at peak health). This quinoa
based porridge is full of the nutrients kids need most, quality fats and
protein as well as filling nutrient rich quinoa. Soak 1 cup of quinoa
overnight with a little whey. In the morning drain and rinse and add to a
pot with 1 cup coconut milk or cream and 1 cup of water and simmer until
tender, allow to cool slightly. Add ½ cup dried fruit of choice, ½ cup fresh
fruit such as pear, 1 cup of nuts/seeds, grind of real salt, 2 large eggs
beaten and 1 tbsp coconut oil or organic butter. More coconut cream can be
used if the mixture appears too thick. Pour this into a baking dish and
sprinkle with additional roasted pistachios and Rapadura sugar. Bake in a
moderate oven until golden and crunchy on top and set in the middle.

This recipe is very versatile and can be adjusted to suit even lower sugar
needs by omitting the dried fruit. Knowing the right foods to feed kids to
create optimal health is a real challenge in this age of misinformation. Join
