Vegan Traditional Herb Stuffing

INGREDIENTS
• 2 (25 oz.) Dave’s Killer Bread 100% Whole Wheat
• 1/2 cup olive oil
• 7 cups yellow onion, chopped
• 4 cups celery, chopped
• 1 cups parsley, chopped
• 1/4 cup sage
• 3 tablespoons rosemary
• 3 tablespoons thyme
• 2 tablespoons sea salt
• 1 tablespoon black pepper
• 8 cups Pacific Organic Vegetable Broth – Pacific Brand

DIRECTIONS
1. Preheat oven to 250 degrees. Break bread into 1/2 inch cubes and scatter bread in a single
layer on a lined baking sheet. Bake, stirring occasionally, until dried out, about 1 hour. Let cool
completely.
2. In a large skillet add olive oil over medium high heat. Add onions and celery and cook until
translucent.
3. In a large mixing bowl mix bread, onion, celery, parsley, sage, rosemary, thyme, sea salt, black
pepper, and vegetable broth.

Cranberry Orange Relish

INGREDIENTS
• 4 cups whole cranberries
• 1/2 cup orange juice
• 1 cups sugar
• 2 peeled oranges (cut in qts)
• 1 orange (rind on)

DIRECTIONS
Combine all ingredients in food processer or blender

Cranberries, Orange Juice, Cane Sugar, Orange Zest, Sea Salt.
Vegan Green Bean Casserole

INGREDIENTS
Crispy Onions
• 1/2 lb. yellow onion thinly sliced
• 1/4 cup GF all-purpose flour
• 2 tablespoons Ian’s GF bread crumbs
• 1/2 teaspoon sea salt
• 2 tablespoons olive oil
Casserole
• 1.5 lb. green beans, snip ends
• 2 tablespoons Earth Balance Soy Free Buttery Sticks
• 1/4 cup onions, chopped
• 6 oz. mushrooms, sliced
• 1/2 teaspoon sea salt
• 1/2 teaspoon black pepper
• 1/2 teaspoon dried thyme
• 1/2 cup GF all-purpose flour
• 1 cup vegetable broth – Pacific Organic
• 1 cup almond milk

DIRECTIONS
1. Preheat oven to 475 degrees. Combine the sliced onions, flour, breadcrumbs and salt in a bowl until well coated.
Place onion mixture in a single layer on a lined baking sheet and cook until crispy, about 25-30 minutes, stirring
halfway through.
2. Add water to a large stock pot, heat over high heat until a rolling boil is reached.
3. Make an ice bath by combining 1-quart of water with 1-quart of ice, set ice bath aside.
4. Add green beans to the boiling water and cook until the green beans are bright green and crisp tenders, 2-3
minutes.
5. Immediately transfer beans to the ice bath and let sit for 5 minutes. Completely drain all water and ice from the
green beans.
6. Heat the butter in a large skillet over medium heat. Add the onions and cook for 2-3 minutes until soft. Add in
mushrooms, salt, pepper, and thyme. Continue cooking for 10 minutes until mushrooms are browned and liquid
has evaporated.
7. Sprinkle flour over mushrooms and cook for 1 minute, then whisk in vegetable broth. Stir together and cook until
thickened. Add in the milk and whisk, then reduce heat to low and cook until bubbly. Completely cool mushroom
mixture before next step. If you do not cool, the sauce will go straight to the bottom of the container.
8. Place green beans in reheat package and top with cooled mushroom mixture. Add crispy onions on top of
mushroom mixture and then close package with lid.
