TORT CAFEA

Ingrediente

CAKE LAYERS  125 gr zahar


 75 g cup almond flour  40 gr amidon de porumb
 25 g confectioner's Swerve Sweetener  1 varf cutit sare
 40 g cup cocoa powder  esenta cafea
 6 large egg whites, room temperature  200 g branza si zahar pudra
 1/8 tsp cream of tartar ( 1 tsp amidon, 1tsp
Glazura
otet )
 1/8 tsp salt  20 g unt de cacao
 63g granulated Swerve Sweetener  40 g lapte praf degresat
 10 g cacao cu continut redus de grasime
Crema cafea  40 g whey cu aroma de ciocolata fara
 500 ml lapte zahar
 2-3 linguri cafea solubila  30 g eritritol cu stevia
 4 galbenusuri  50 ml lapte 0.1% grasime

CAKE LAYERS:
1. Preheat oven to 150C and line an baking sheet with parchment paper. Lightly grease paper.
In a medium bowl, whisk together almond flour, confectioner's sweetener, and cocoa powder,
breaking up clumps as much as possible.
2. Beat egg whites with salt and vinegar until frothy. Slowly add granulated sweetener, amidonul
and continue to beat until stiff peaks form. Mixture should be glossy and not dry.
3. Gently fold almond flour mixture into egg whites until just combined. Spread evenly onto
prepared pan into a 25,4 / 38 cm rectangle.
4. Bake 20 minutes, until just firm to the touch. Remove from oven and let cool on pan. Cake will
shrink, this is okay. When cool, cut into 3 rectangles, 5 inches wide each.

Crema de cafea
1. Dizolvam cafeaua solubila in lapte, adaugam putina esenta de cafea si il punem pe foc mic, intr-o
craticioara potrivita, sa se incalzeasca bine.
2. Separat, mixam galbenusurile cu zaharul pana se deschid la culoare si isi dubleaza volumul apoi
adaugam amidonul si mixam pana la omogenizare. Adaugam laptele cald treptat peste crema de
galbenusuri si amestecam bine. Punem crema din nou pe foc mic si amestecam incontinuu pana
se ingroasa ( cca 5-6 minute).
3. Stingem focul, punem o folie de plastic alimentara direct pe suprafata cremei si o lasam sa se
raceasca. Dupa ce s-a racit, o putem amesteca cu 200 gr branza cu indulcitor praf.

Glazura
Combinam laptele praf cu cacaoa, whey-ul si eritritolul cu stevia. Incalzim laptele si il turnam peste
amestecul obtinut anterior. Adaugam untul de cacao topit si mixam pana la omogenizare.
