ABSTRACT

Pindah massa adalah suatu operasi dimana suatu massa bahan atau komponen bahan berpindah
dari suatu system ke system lain. There are many applications in the area of food packaging that
use mass transfer phenomena. Permeation, absorption, and diffusion are typical mass transfer
phenomena occurring in food packaging systems. Permeation is the ability of permeants to
penetrate and pass through an entire material in response to a difference in partial pressure-the gas
and water vapor transmission rates of packaging materials give a good indication of permeation.
Thus, the mass transfer coefficient for permeation is permeability. Permeabilitas kemasan
adalah suatu ukuran yang untuk menyatakan kemudahan zat tersebut melalui kemasan. Jadi
kemasan yang permeable (permeabilitas nya tinggi) adalah kemasan yang mudah ditembus oleh
gas-gas seperti uap air, O2, N2, dan CO2. Oleh karena itu produk-produk yang rentan terhadap uap
air atau oksigen, diperlukan kemasan-kemasan yang memiliki sifat permeabilitas yang rendah
terhadap uap air atau oksigen.
