Kitchen this Christmas
ARE you sure you know how to prepare your turkey this
Christmas? The Food Standards Agency says many of us
don't and poor preparation and cooking can lead to food poi-
soning.
December is the worst month of the year for food poison-
ing. One in five of all cases can be traced back to under-
cooked poultry such as chicken or turkey. So here are some
of the things the FSA wants to warn against:
- Don't cook the stuffing inside the turkey. This can prevent
either from cooking through properly, so they should be
cooked separately instead.
- Do not wash the turkey before cooking: this can spread
bacteria around the kitchen and lead to cross-contamination.
Correct cooking will kill all bacteria.
- Ideally a frozen turkey should be defrosted in the fridge.
Two thirds of people defrost at room temperature but again
this can cause problems.
- Cook your turkey for 18 to 20 minutes per pound in
weight. An undercooked turkey can result in food poisining.

Christmas dinner is the biggest meal many of us will cook.


We're often preparing meals that we wouldn't normally
make - and we frequently buy more food than we can store
in the fridge.
The FSA’s head of microbiology says, "The ad campaign
encourages people to think about how to prepare, cook and
eat safely, most food poisoning incidents are easily avoided
and with a little bit of extra thought everybody can enjoy the
festive season."
One of the problems is catering for higher numbers, the
average Christmas cook will be serving dinner for at least
seven people. And we all seem to be guilty of buying a big-
ger turkey than necessary, the average weight of the
Christmas bird is 12 pounds and that's enough to feed up to
18 people, but however big it is, you should use up all left-
overs within 48 hours.
But the agency's advice is simple: plan a realistic amount
of food, store raw meat in the bottom of your fridge, wash
utensils used on raw meat and make sure the bird is fully
thawed and cooked thoroughly to ensure you stay healthy
this Christmas.

"We have a bunch of young players coming through now who are
very determined to work really hard for one another. We had
another another hard match against Liscarroll but came out at the
right end. The hunger and the hurt from the year was a big factor
in our eventual final win against Donoughmore".
The Munster championship which followed was to produce two
very different performances. In the drawn match against
Ballymacarbery it was a strangely subdued Inch performance as
many of the side looked a bit leaden footed. However, the replay
was to provide a huge contrast.
"There was a sombre feeling after the drawn match", admits Noel.
"We asked ourselves was this it, were we coming to the end of the
road? It was difficult for many of the girls who played with
Killeagh just the week before in the camogie final to readjust
quickly. We opted for an easy week before the rematch with
Ballymacarbery and tried to factor in as much rest as possible. We
battled on and then went on to win the replay in Dungarvan".
As winter approached an away game at the other end of the coun-
try would hardly be classed as a prize gig for the Munster winners.
An away match in Donegal is about as difficult as it comes at this
time of year for a team from the south.
"Our luck with home matches on the previous years and home
draws had run out. It took a massive effort form everybody with

properly. As expected it was a huge battle and a demanding match
physically, but luckily we came out on the right side and Carnacon

Youghal man Jim Daly’s commitment to maintaining a healthy

Eamon O’Cuiv T.D., that he has decided to renew the contract for
services provided under the Community Services Programme for

employ people on a full-time basis and is designed to work in part-
nership with local service providers. Under the scheme

swine is so noisome (annoying) to all the town by the filth and dirt'
that it was allowable to either kill or seize the animal on the spot
if it was found roaming loose about the town. Whether the present
town council will eventually be proclaiming such measures for
loose or fouling dogs remains unknown!
But concern was also shown in the medieval town over littering

Public order concerns can also be traced back to these medieval
minutes. In 1617, the corporation was demanding that alehouses
enter into recognizances for the keeping of good order whilst once
a fortnight, 'the Bailiffs for the better restraining of disorder'
would inspect taverns and alehouses and fine any they found there
on Sundays during 'divine service.'
In 1646 however, the corporation was seeking to protect the town's
imbibers, accusing innkeepers of selling unregulated measures of
beer and requiring that they henceforth be sold by the 'pottle, quart
and pint,' a pottle containing four full pints for those who think a
Germanbeer stein (two pint beer mug) is a handful.
The number of alehouses was also regulated. In 1616, it was pro-
posed to limit the number of alehouses to 20 but by 1656, the num-
ber proposed was increased to 30 who were to 'give security to
keep good order.' In comparison, the modern town of Youghal
with its expanded area and larger population has less than twenty
licensed premises to its name.
Concerns raised by Councillors recently over the state of roads
and pavements are also a repetition of times past. In June 1616, a
survey of paving was undertaken in 'Broad Street' and the town at
large with repairs to be conveniently carried out by the inhabitants
rather than the corporation. This problem is to be constantly found
throughout the records, in May 1729 for example, 'the streets
being very much out of repair' that 'every person be obliged to
pave before their holdings to the gutter.'
The state of the roads were also a concern. Again it was on the
inhabitants that the labour fell, with one person out of every

INCH COMMUNITY CENTRE
The coal fires are burning, there is a nip in the air, the winter is fast
approaching. Our thoughts are on the season in hand but before we
get cosy by the fire our chairman John Geaney and the Inch
Committee would like to thank you all for supporting them in our
recent Festival. We kicked off with the Inch Queens in the hall, it
was a great night with great talent and a lovely bunch of girls. We
thank our sponsors for putting them forward to represent their
businesses or clubs. Congratulations to our winner Trisha Arnold
who represented Leahys Open Farm.
Our Table Quiz in Powers Bar had a great selection of questions
to get our memories stirring. Thanks to all who took part. Our
Bingo went well and our schools Table Quiz had a great turn out
and thanks to all who took part. Then it was onto our Fashion
Show, a first in many years to be held in the hall. The place was a
hive of activity the night before with ramps, carpets, lights, flow-
ers etc. on the ready. We had a great turn out and a great selection
of clothes and sizes to suit all. A big thanks to the shops and their
staff for putting a fantastic display together to wow us so please
support local this year - we have a great selection on our
doorsteps. And then it was down to the final day, our bazaar. We
were blessed with a dry day, the spinner was in full swing with
great prizes to give away, Our brick-a-brack was awash with bar-
gains, cakes flew out the door, plant sales tables were full of
colour, our outdoor side shows went down a treat with kids and
adults having a go at the wet sponge as well as our treasure hunt
and soccer and other side shows. Our visit from the animal road
show went down a treat with a range of reptiles and mammals on
display and a chance to hold them.
Then it was our finale the Duck Race, what excitement as they
bobbed down the river fighting for a place. We had a great crowd,
a lovely family day with quite a lot of new faces in the area, so
welcome to you all. Then it was time to tidy up, have a cuppa and
head home to shower and get all dressed up for our get together in
Powers Bar. It was a fun packed week but would not have hap-
pened without the help of our hard working committee who gave
so much time to organise this event. Your support is very much
appreciated.
In the New Year all going well we will have to undertake a big
project of renovation to our Community Hall to bring it up to stan-
dard so we hope we can call on you to support us. The results of

YOUGHAL CAMOGIE CLUB
Last Saturday night the Annual Youghal GAA dinner dance was
held in Club Aras in the fantastic settings that the committee mem-
bers yet again pulled off. The night went off with out a hitch, with
fantastic food and great music.
Joan O’Flynn, president of Camogie was the honoree guest of the
night and gave a fantastic speech on what Camogie means to the
community and what a fantastic achievement it was to win the dou-
ble. She also said some very nice words about our own
Chairperson Kelly McCarthy whom along with Secretary Kelma
McCarthy has done Trojan work in the background to get the
Youghal Camogie team back on its feet.
The work sometimes goes unnoticed in the background, but not
with this team as we are sure that the 2 girls have made themselves
known through out the town, as well as the County board in order
to get support and sponsorship for the club.

It has been a week of highs and lows for the club. Highs were
reached when our Senior girls were crowned County Senior
League Champions and a particularly low ebb when with the blow
of the referees whistle our girls were on the Imokilly team were
denied the County Senior A Championship title for 2010. Despite
playing to the best of their abilities it was not to be, well done and
hard luck.
Senior League Final: Wednesday 10th saw our Senior girls trav-
el to Riverstick for the 8pm throw in under lights against
Clonakilty. Clonakilty opened the scoring and worked very hard

and Tadgh who have been involved in training the girls during the
season. We look forward to the slide show of all the photos taken
by Martin to be presented at our Annual Dinner Dance (more
details later).

The new office will allow Ardmore Equine Nutrition to grow their
business servicing the horse and camel industry in the UAE - a
market in which they have been active for almost 20 years.

County B Championships
Youghal AC had twelve juvenile athletes in action at the
County B Championships in Carrignavar on Sunday 14th
November. The event was hosted by Carrignavar who laid out
an excellent course as usual. The weather was again kind to us;
there was ample sunshine despite freeezing conditions during
Saturday night. Picnics were provided by the O' Regan and
Cahill families; it is indeed unusual to be able to sit out with the
flasks at this time of the year. All of our athletes gave outstand-
ing individual performances. Well done girls!
GIRLS U/10 Caoimhe Barry was our first athlete to finish in a
very good 16th place in a very big field. Next in was Tirna
Cahill who ran very well in 24th place. Ciara Cantillon who
was running in her very first race did very well and finished in
Group of Youghal AC athletes warming up with Celia O' Regan
26th position.
BOYS U/10 We had two boys competing in this race both of
whom are only under 9. Evan Villis had a great race to finish
in 24th and Cian Nicholson also did well coming in 32nd. Well
done lads!
GIRLS U/12 The club had three girls competing all of whom
gave thrilling performances with all three girls featuring with
the leading group throughout in a large field. Latisha was in
2nd position for half of the tace with Aine O' Regan and Karynn
Collins in close pursuit. Positions altered with very little
between the girls. Aine finished in 4th , Latisha in 5th and Jessica Carroll, Lauren Murphy and Sarah

BOYS U/12 Newcomer Eoin O' Brien had an outstanding per-
formance. This was only his third race but he is showing great
potential. He was running up an age also. He went out with the
leading group in 6th position from the start. Big gaps started to
open up in this 2000m race. Eoin moved to 4th position ib the
early stages; his position was challenged twice but he main-
taned his placing and he also win an individual bronze medal.

GIRLS U/14 We had three girls competing in this race. Sarah Cian Nicholson, Evan Villis and Eoin O' Brien bronze County medal in B/12
O' Sullivan went out hard with the leading group with Jessica at County B Champiopnships race

Sarah maintained her position throughout the race with big
gaps opening up behind her. She was close to the leader com-
ing in and it was brilliant to see her winning an individual sil-
ver medal. Both Jessica and Lauren did very well in this very
long race of 3,500m. Lauren was 11th and Jessica in 13th.

GIRLS U/16 Rachel Carey who was only running in her sec-
ond cross-country race also running up an age did extremely
well in this race of 4,500m. Rachel went out hard with the
leaders. She moved up positions after 1000m from 4th to 3rd Latisha Moriarty, Aine O' Regan and Karynn
Collins after winning individual medals in G/12 Rachel Carey with her silver
as she was running comfortablty at this stage. She then chal- race in County B Championships medal in G/16 race
lenged Rachel Merritt from Carrignavar in front; both girls
were running closely during most of the race thereafter. Rachel
upped the gears with 800m to go opening upp a gap to finish in
a very strong 2nd position behind the Skibbereen winner.
Rachel won an individual silver county medal. It was a very
good perforamce for this newcomer!
A huge cogratulations from the Juvenile section to Niamh
Walshe who ran an outstanding race also on Sunnday to win the
County Intermediate title. She has already won the County
Novice title and two Munster medals in the Munster
Intermediate race both individual and an inter-county Gold
medal. Best of luck to Niamh who will now run on the Cork
Senior team in the All Irelands in Derry on 28th November.
Well done also to Mossie Cahill who ran in the Intermediate
race and got huge support from his daughter Tirna on the field.

Cork County Leagues
Once again our 3 teams competed in the Cork County Leagues.
Youghal A played against the Crucible on a home and away basis and
were narrowly beaten on both occastions. But the A Team stepped up
a gear against Fermoy by defeating them very impressively. Our B
Team were in action against the A.O.H. from Cork and were unfortu-
nately defeated in both games. The C Team which comprises of some
of the societies young and up and coming talent played top club The

Megan Simms Aideen O’Leary The Christy Hennessy Tournament is on going and is now nearing the
semi-final stage. This should be completed in full by next week. Also
in progress at the moment is the Paddy Joyce Tournament. This tour-
nament is being run as a top 16 tournament but in a group stage for-
mat, winners of each group qualify for semi-finals. This is good prac-
tice for our 3 teams with the Munster Championships coming up in
January.
The entry sheet for the Richard Swayne Snooker Tournament and the
Jack Trihy Billards are now up and members are asked to put their
names down A.S.A.P. As both tournaments will be drawn shortly.
The first knock-out junior tournament is progressing along nicely and
the No.2 tournament entry sheet will be on the notice board by the
end of the week.
Finally the Society would like to remind its members that the Annual
