ABSTRACT
Organizing food in hospitals includes the procurement of foodstuffs, storage of
foodstuffs, transportation of cooked food, storage of cooked food and serving
food. They should pay attention to hygiene and sanitation requirements. The
problem of a food is determined by the presence or absence of contamination of
food. Knowing the amount of ALT in enteral foods processed in Nutrition
Installation of the Bukittinggi National Stroke Hospital.
It was pure experiment research in laboratory to determine (ALT) contained in
enteral foods processed in Nutrition Installation of Bukittinggi National Stroke
Hospital. Total plate number on 3 enteral foods processed in hospital, first test
protein 0 cfu / cm2; second 0 cfu / ml; the third 0 cfu / ml, the first pan-enteral
milk testing 430 cfu / ml; second 310 cfu / ml; the third 320 cfu / ml, the first test
entrasol milk 0 cfu / ml; second 0 cfu / ml; third 0 cfu / m
ALT found in pan-enteral milk but normal threshold according to BPOM
Regulation Number 13 of 2019 (≤104 colonies / ml). Then, it is suggested to
Hospital Nutrition Installation, to do regular training on food hygiene and
sanitation for food handlers and do regular training on food safety in order to
remind and improve the knowledge and skills of food handlers. It will improve the
performance and quality of food products produced by nutrition installation.
