ABSTRAK

Bioteknologi saat ini mengalami perkembangan yang sangat pesat. Bioteknologi memiliki
peran yang sangat luas dalam berbagai aspek. Salah satu tujuan utamanya adalah untuk
memenuhi kebutuhan manusia, terutama dalam bidang industri makanan. Pada proses
bioteknologi, baik secara konvensional ataupun modern tidak terlepas dari peranan
mikroorganisme. Rhizopus oligosporus adalah salah satu contoh mikroorganisme yang
dimanfaatkan dalam proses bioteknologi. Proses bioteknologi yang menggunakan Rhizopus
oligosporus mempunyai peranan dalam penyediaan makanan tradisonal yaitu tempe. Dalam
pembuatan tempe ditentukan oleh mikroorganisme yang berperan selama proses fermentasi
berlangsung. Oleh karena itu, penelitian ini bertujuan untuk mengetahui alasan Rhizopus
oligosporus digunakan untuk membuat tempe. Serta, untuk mengetahui proses pembentukan
tempe menggunakan Rhizopus oligosporus.

ABSTRACT

Biotechnology has rapidly developed right now. The use of biotechnology was very extensive
for many aspect. One of the main purpose is to human needs, especially in the food industry.
In the process of biotechnology, both conventional or modern were inseparable from the use
of microorganisms. Rhizopus oligosporus is one example of microorganism that utilized in
the process biotechnology. Process biotechnology which uses Rhizopus oligosporus has a
function in the provision of traditional food, called tempe. In making tempe was determine by
involved microorganisms which plays a role during the fermentation process. Therefore, this
study aims to obtain the reason Rhizopus oligosporus used to make tempe. Also, to know the
process of forming tempe using Rhizopus oligosporus.
