Jeedi Pappu Upma 

upma rava(semolina/sooji)-2 cups butter-1 tbsp oil-2tbsps

blackgram(minnapappu/urad dal)-1tsp bengalgram(senagapappu/chana dal)-1tsp

mustard-1tsp cashewnuts whole(jeedipappu/kaju)-1 cup onion-1 finely(long) sliced

curry leaves-few fresh ginger green chillies-4 nos salt to taste

1.In a pan roast the rava with butter on a low flame till it turns golden,but not

brown.Cool the rava 2.Heat the oil.Fry kaju to a nice light golden brown colour and

keep them aside.Add pinnapappu and senagapappu.Fry till they turn golden

brown.Now add the mustard,ginger,onions and green chillies.Once the onions turn

transparent add 4 cups water.Bring it to boil.Slow down the heat and pour in the

roasted rava slowly and gently into the pan.Stir well while you are mixing the rava so

that no lumps are formed.Now add halfcup kaju. 3.On a moderate heat cook it covered

till its texture is smooth and soft. 4.Transfer it to the serving plates and decorate with

the remaining kaju .The glazed kajus will give a delightful look to your dish. 5.Serve

hot with coconut chutney/ginger pickle/sambar. BON APPETITE! TIP- The quantity of

the water added varies depending on the texture of the rava.For 2 cups fine rava you

may add 3 cups water and for 2 cups coarse rava you may add 4 cups water.

Adai

2 cups Rice Flour 

1 tsp Cumin seeds

4 Green chilies 

1 cup grated Coconut

1 bunch Coriander leaves

1" Piece Ginger 

2 Tomatoes 

Oil for shallow fryin

Blanch, remove skin from the tomatoes, Scrapes skin from ginger. 
Wash green chilies and coriander leaves. Chop the chilies, coriander leaves, ginger, onions and
tomatoes fine. 
Add together in a bowl the rice flour, cumin seeds, green chilies, coconut gratings, coriander leaves,
ginger, onions, tomatoes, salt to taste, and water mix thoroughly. 
Place a skillet on the stove, heat it. Lower heat. Pour a teaspoon of oil on it. 
Take one portion of the dough mixture, put it on the skillet, flatten it with your index and middle
fingers into as round a shape as possible, taking care to see that your fingers don't touch the hot
skillet. 
Pour drops of oil all around the adai. Allow to get cooked, say, for 5 minutes. Turn adai gently with a
spatula. Pour drops of oil again all around it. Let cook until done. 
Remove. repea tthe same process with the other 3 portions of the dough. Serve hot with chutney or
pickle.
Poha Dosa
1 Cup Poha 

3 Cups Rice 

2 tsp Jeera

2 cups Sour Butter milk or curd

Salt to taste

1 Cup Poha 

3 Cups Rice 

2 tsp Jeera

2 cups Sour Butter milk or curd

Palak Roti

1 bunch of Palak leaves

1/2 "piece Ginger

2 Green Chillies 

1/4 cup Coriander Leaves

1 tsp Tamarind juice

2 tsp Jeera

Salt to taste

2 cups of flour for Rotis

Blanch the palak well i.e boil in hot water for 2 mins and put them under cold running

water. 

Grind all the above ingredients to as fine paste. 

Mix this mixture with the flour and make a soft chapathi dough. 

Roll out the rotis,roast them on a tava both sides and applly ghee on both sides. 

serve with Pickle or Dahi or you can have it with Tea as an evening snack.
Rice Noodles
1 packet Rice noodles

2 Lime 

2 Green Chillies Chopped

Curry Leaves

For seasoning -

Peanuts - 1 tbsp

1 tbsp Chana daal 

/12 tbsp Urad daal

1 tsp Mustard

A pinch Turmeric 

2 tbsp Oil 

Salt to taste

Boil water in a saucepan. Add salt to the water. When it is rolling, add noodle and

leave for 2 min. Now the noodles are cooked. Remove water and keep it aside. 

Heat oil in a pan and add seasoning with all the above ingredients and when mustard

splutters add green chilli and curry leaves. Add this to cooked noodles. 

Squeeze lime and add the juice to the noodles,toss it with a ladle. 

Tasty noodles are ready.

Uthappam

4 cups Long Grain rice 

2 cups Uncle Ben's Converted rice 

1 cup Urad dal whole 

Salt to taste. 

1 big Onion(chopped finely)

4 Green chillies(chopped fine

Few Coriander leaves (chopped finely) 

oak the long grain rice for 6-7 hrs. 

Soak urad dal for an hour. 

Dry grind the Converted rice. 

Grind the soaked rice to a coarse paste and urad Dal to a fine paste. 

Mix all three,add salt and let it ferment at least for a day. 

Heat a griddle and make a round shape with 2 ladle full batter.(thick) 

Sprinkle Onion and Chiili, apply little oil around the edges. After a few minutes, turn

to the other side,let it done till golden brown.

Spring Dosa 
2 cups rice

1/2 cup rice floar

1/2 cup Whole Urad dal

1 Capsicum

1 onion

1 tomatoes

1 Green chillies

oak 4 cups of rice and 1 cup of urad dal for 6 hours.

grind soaked rice and urad dal with blender to make a fine paste.

Mix Rice floar, and paste rice and urad dal. Add salt and keep side for 1 day to ferment.

Chop Capsicum, onion, green chillies and tomatoes finely. 

Heat a griddle & make a round shape with a ladle full batter. 

Sprinkle all capsicum, onion, chillies and tomatoes. Sprinkle spoon oil around edges. 

After a couple of minutes flip them to the other side & let it cook. 

Serve hot with Chutney or Sambhar.

Chat Recipe Ingredients


Use the following ingredients to prepare or make Chat recipe at home.

¼ kg .Yellow peas

3 Alu -

1 ½ spoon Dania powder -

Chilli powder - do-

1 spoon Jeera powder -

1 1/2 spoon Menthi powder -

3 Onions

2 Greenchillies

Boil peas and potatoes. For gravy grind hand full of peas. Take oil in a pan fry onions

and finely chopped green chillies then add chilli powder & dhania ,fry till the raw smell

disappears then add peas & mashed potatoes ,add water with peas paste after it boils

well add salt, jeera & menthipowder . Serve with onions & sev.

Mirichi Ka Curry
1/2 lb. green chillies, large and long

1 lb. onions, sliced

1 tsp cumin seeds

2 tsp ginger garlic paste

1/4 tsp turmeric powder

1 tsp powdered bayleaf

1/2 cup thick tamarind juice

Salt to taste

Roast and powder the following:

4 tsp sesame seeds

4 tsp khus-khus (poppy seeds)

2 tsp coriander seeds

2 tbsp peanuts

1/4 coconut scraped

1 tsp salt
To remove tartness from the chillies,boil chillies in water until color of chillies

change,then remove and strain. Pat dry.

Heat oil and fry the chillies till they turn white. Drain and set aside.

In the same hot oil,fry the cumin seeds.

When they turn color, add the onion slices and fry till they become soft.

Now add the ginger-garlic paste and fry for a minute.

Add the turmeric and powdered spices and fry well stirring continuously.

Add the tamarind juice and simmer.

Add the chillies, powdered bayleaf and salt to taste.

Mix well and cook over a slow fire till the oil starts floating on top.

When cool, store in airtight containers in the refrigerator. This preparation goes well

with biriyani/pulao.

Chicchubuddi samosa 
Wheat Flour - 1Cup Wheat Semolina - 1Cup Salt to taste Ghee - 1/2 Cup Sugar - 1 cup

Milk - 2 Cups Cashew nuts,dry grapes,all dry fruits - 1/2 Cup A pinch of Orange Colour

Rice flour - 1/4 cup

Take wheat flour with salt to taste and mix up thick spread like a puri,take a bowel and

add ghee with wheat semolina (wheat Rava) mix-up in a warm stove flames.Take

another bowel with milk and heat it some time add a pinch of orange colour.If full boil

milk add wheat semolina (wheat Rava) just you mix-up with ghee.take dry fruits fry

with ghee and take all the mix up with wheat semolina.when its completed take a

mixed wheat flour and spread it like a puri and cut it triangle shape do it a cone shape

and add some wheat semolina (wheat Rava) and close the bottom of cone.and boil rice

flour with the water thick and do it small rolls and kept it top of corns and heat up a

small flames and its ready to serve. Cracker Pots are Ready.

Onion - 1, nicely chopped.

Potato -1, Cut into small squares.

Carrot - 1, Cut into small squares.

Beans - chopped and boiled.

Green peas.

Oil - 2 tea spoons.

Cumin seeds - 1 small spoon.

Turmeric Powder - 1 small spoon.

Chilli Powder - 11/2 spoon.

Salt - 1 spoon or as per your taste.

Garam Masala - 1 spoon.

Puff Pastry sheets - frozen, 1 pack.

Onion - 1, nicely chopped.

Potato -1, Cut into small squares.

Carrot - 1, Cut into small squares.

Beans - chopped and boiled.

Green peas.

Oil - 2 tea spoons.

Turmeric Powder - 1 small spoon.
