Strawberries give a very summery feel just by mere thought of them,so what best

way than to enjoy them in a piece of cake!Delicious...


Eggless strawberry cake
Ingredients:
3to4 tbsp unsalted butter at room temperature
11/4 cups plain flour
1/4 tsp salt
1/4 tsp vanilla extract/vanilla essence
1/2 cup sugar + 1 tsp for dusting strawberries
2 1/2tsp baking powder
1/2 cup milk
1 cup fresh strawberries chopped
a few drops of lemon juice
Method:
Sprinkle 1 tsp sugar and lemon juice on chopped strawberries and keep aside. Thi
s will make them a little moist and juicy. Sift together the baking powder, salt
and flour.Next, whisk the butter and sugar to creamy texture. Then add a little
flour to the butter and sugar mixture. Mix it and then add a little milk and mi
x. This way, add all the flour and milk little by little stirring to avoid lumps
formation throughout. Finally, fold in the strawberries to the batter using a s
patula. Grease and dust baking pan with butter & a little flour to prevent cake
from sticking. Bake in a 375 degrees F preheated oven for about 35-40 minutes. R
emove from oven and let cool before cutting pieces.
Enjoy sliced cake with tea or just as it is!
Note:1.peach,apple,any kind of berries,pineapple and cherries can also be used f
or the cake with little variations the recipes of which i will post later.Also t
he quantities are dynamic for sugar.

Eggless Cake Recipe (Pressure cooker cake)

Type of Meal : Simple home made cake
Preparation Time : 20 minutes.
Cooking Time : 40 minutes.
Ingredients

Plain flour (maida) - 1 and 1/2 cup


Powdered sugar - 1 cup
Refined oil or plain butter - 1 cup
Baking soda - 1 teaspoon
Milk - 1 cup
Vanilla essence - 1 teaspoon

Method
Mixture Preparation ( Batter )
1. Mix sugar and oil together and stir them pretty hard till the mixture becomes
light and fluffy.
2. Now prepare a mixture of "all purpose flour" (maida) and baking powder and si
eve it to avoid any lump.
3. Now gradually add this maida mixture, to the batter prepared by mixing sugar
and oil mixture.
Note: As you stir the mixture, it will become dense. Add some milk in small amou
nt to make it smooth. Keep on repeating the process of adding maida and then mil
k as required, till batter is well blended (It should look fluffy/ soft) and you
find air bubble in the batter
4. Add Vanilla essence to the batter and again blend thoroughly.
Cake Preparation
5. Grease the baking tin (or cake tin) with oil and dust it by sprinkling maida
over greased surface evenly.
Note: Use baking tin of 6 inch in diameter, so that it can easily get into the p
ressure cooker.
6. Pour the mixture into the greased baking tin.
Note: Baking Tin should be made of Aluminium
7. Heat the presure cooker on high heat for 2 minutes.
Caution: If baking tin comes into direct contact of the base of cooker, it can h
arm ( overbake ) the cake.
Remedy: Use cooker container which has big holes in it. You can put the baking t
in on that container and then put it inside the presure coker. Even if you do no
t have the cooker container cake can be made, but there is a big chance of getti
ng its lower part overbaked
8. Now put the cake tin containing the cake batter, inside on cooker dish.( Do n
ot put water inside the pressure cooker)
9. Close the cooker lid and do not put the whistle on the lid.Lower the flame fr
om high to low after 2 minutes.
10. Let it cook for 40 minutes, then switch off the heat. Do not open the lid im
mediately.
Cooked Cake Testing
11. After 10 minutes open the lid to check whether the cake is done. Put a skewe
r inside the cake. (Skewer - a long thin pointed piece of metal or wood, used to
test whether something is completely cooked )
12. If the mixture will not stick on it, means that cake is done.
13. Serve.

banana cake:
Ingredients:
Ripe bananas 3
Rava (wheat sooji) 1 cup
Sodium-bi-carb(baking soda) 1/2 tsp
Cardomom powder 1/2 tsp
Coconut milk 2 cups
Sugar 1/2 cup
Cashewnuts 1 tsp
Salt
I did not add salt and used 1 tea spn baking powder instead of baking soda.
Method:
Roast rava over low heat in a kadai until aroma wafts from pan. Soak the rava in
coconut milk for 2 hours.
Mash the bananas and add to rava along with sugar. Add soda, salt and cardamom p
owder. Mix the cashews. Apply little ghee to cake mould (I used parchment paper
in the baking tray), pour in the mixture.

Preheat the oven at 350F for 10mins. Bake for around 35mins at 350 F or until a
knife put in center comes out clean.

Decorate in whatever way required (optional).
