ABSTRACT
Protein is one component of nutrients in foods that are important fot the human body.
Protein content in each foodstuffs is different, so it is necessary to know it. The protein content
analysis method used is kjeldahl method. The principle of kjeldahl method is calculating of protein
content by calculate element N based on sample. The purpose of this practicum is to calculate
and analyze protein content in several foodstuff. The results showed that the highest average
protein content was found in tepung talas 7,5%, followed by batagor ikan 7,12%, and the lowest
was gula aren 1,72%.
