In the edition of our IN magazine (a short magazine which we hope you will find time to read) you will find various articles and reports based on some of the values closest to our heart. Everything we do at Porto Bay Group is so that in Portugal and in Brazil, our brand will not only be synonymous with a quality product, but also a natural reflection of the cultural and social responsibility present in the activities we perform, or we are associated with. The young American jazz singer and bass player Esperanza Spalding won the 2011 Grammy in the Best New Artist category. Its worth asking what this information has to do with an article about Madeiras cultural life ? The answer is, that this is a prime example of this islands cultural activity, given that Esperanza headlined Funchal Jazz Festival in 2010, sharing the stage with Al di Meola, for example. The Jazz Festival is one of the most important events in Madeiras cultural life. If we look back to recent years and other events, names like Diana Krall, Joaqun Corts, Nelly Furtado, Jos Carreras and Andrea Bocelli, among others, have all performed on Madeira stages, the same stages where ballets such as Swan Lake and the Nutcracker have already been performed. More recently the hailed Portuguese pianist Artur Pizarro interpreted the work of Chopin in a series of concerts to mark the bicentennial of the Polish composer.

A jovem cantora de jazz e contrabaixista norte-americana Esperanza Spalding venceu o Grammy de 2011 na categoria de revelao. Vale a pena perguntar o que que esta informao tem a ver com um artigo sobre a vida cultural da Madeira ? A resposta que este um bom exemplo da actividade cultural desta ilha, j que Esperanza foi cabea de cartaz da edio do Funchal Jazz Festival em 2010, pisando o mesmo palco do que, por exemplo Al di Meola. O festival de jazz um dos eventos mais importantes da vida cultural madeirense. Se olharmos para os ltimos anos e para outros eventos, nomes como Diana Krall, Joaqun Corts, Nelly Furtado, Jos Carreras ou Andrea Bocelli, entre outros, j pisaram palcos madeirenses, os mesmos onde j se danaram bailados como o Lago dos Cisnes ou o Quebra Nozes. Mais recentemente, o consagrado pianista portugus Artur Pizarro interpretou a obra de Chopin num ciclo de concertos destinados a assinalar o bicentenrio do compositor polaco.

The range of cultural activities that Madeira has to offer isnt limited to these types of events, which are the high points of an all-year-round line-up calendar. The reality is that practically every week there is a wide array of cultural events, particularly in the music field. The theatre has experienced an increase in choice, there being in Funchals main theatre - Teatro Baltazar Dias, almost always a performance running. The widest choice is in music. There are regular events throughout the year. One of them, the Festival de Msica da Madeira takes place in June, bringing together international performers of various styles of classical music. The concerts are spread out over different venues, including churches, in events inspired by the famous Salzburg musical festivals. In October there is the Festival de rgo da Madeira, following a spate of restoration work on historic Funchal church organs dating from the XVII and XIX centuries. In November, for a week, there is also the Festival Internacional de Cinema do Funchal. In the summer, the Festival Razes do Atlntico strikes a different chord. This takes in ethnic and folk music, not only from regional groups, but also others hailing from the most different points of the world. The stage is set up at Funchals Municipal Gardens, but not all events take place in Madeiras main city. In Calheta, the Centro de Artes Casa das Mudas, a building awarded for its architecture, hosts exhibitions at an international level, in addition to an eclectic line-up of events such as Madeira DIG, a digital arts festival, which takes place annually in the autumn. In this arts and culture centre, one of the largest in Portugal, shows by one of the more unusual and acclaimed dance groups in Madeira, Danando com a Diferena can be enjoyed. This is a wholly contemporary dance troupe including disabled dancers, who has been travelling around Europe, and puts on brilliant shows with beautifully creative choreography.

A oferta cultural madeirense no se faz apenas deste tipo de eventos, que so pontos altos num cartaz com oferta ao longo de todo o ano. A realidade que praticamente todas as semanas existem acontecimentos culturais de diversa ordem, sobretudo no domnio da msica. O teatro tem vindo a conhecer um aumento da oferta, havendo na principal sala do Funchal, o Teatro Baltazar Dias, quase sempre um espectculo em cartaz. Mas na msica que as opes so maiores. Ao longo do ano existem vrios eventos regulares. Um deles, o Festival de Msica da Madeira, tem lugar em Junho e rene artistas internacionais dos vrios estilos de msica erudita. Os concertos espalham-se por diferentes salas de espectculos e at mesmo em igrejas, num acontecimento inspirado nos clebres festivais de msica de Salzburgo. Em Outubro, o Festival de rgo da Madeira, surge aps um trabalho de recuperao e restauro dos rgos histricos (sec. XVII a XIX) existentes nas igrejas do Funchal. Em Novembro, acontece ainda, e durante uma semana, o Festival Internacional de Cinema do Funchal. No Vero, o Festival Razes do Atlntico segue um registo diferente. Aborda a msica tnica e folk, no s de bandas regionais, como tambm de outras, oriundas dos mais diferentes pontos do Mundo. O palco o Jardim Municipal do Funchal, mas nem todos os eventos acontecem na principal cidade da Madeira. Na Calheta, o Centro das Artes, edifcio premiado pela sua arquitectura, acolhe exposies de nvel internacional, alm de um eclctico cartaz de eventos, como o Madeira DIG, um festival de arte digital, que todos os anos tem lugar no Outono. Neste centro de artes e cultura, um dos maiores de Portugal, podemos apreciar os espectculos de um dos mais curiosos e aclamados grupos de dana da Madeira, o Danando com a Diferena. Trata-se de um grupo de dana contempornea inclusiva que tem viajado pela Europa e oferece espectculos de enorme qualidade, com coreografias de enorme beleza.

Madeira also has a superb classical orchestra, which offers a full line-up with concerts that accompany the seasons of the year and mark festive moments like Christmas and the New year. It has been more than a few times that Maestro Rui Massena (who has already played in venues like Carnegie Hall in New york) has invited to the Madeira Tecnoplo, which is the orchestras home, soloists and performers that make each concert unique. And it could well be said that this is a versatile orchestra. It comes as no surprise to learn that at a Carnival concert, the musicians of ten turn up in fancy dress. This versatility has got to the point where the orchestra has already played with a Portuguese hiphop band, Da Weasel. In a more institutional vein there are two inevitable references. The Associao dos Amigos do Conservatrio (Friends of the Conservatory) is dedicated to promoting classical music concerts. The Gabinete Coordenador de Educao Artstica (Arts Education Coordinating Office) is in charge of music teaching programmes in Madeira schools. This department has discovered a novel way of promoting the talents of young artists, by setting up concert promoting groups. There are currently more than 20, interpreting all styles of music from folk and pop music, to wind and chord instruments, and its rare not to find one or other of these groups performing somewhere on the island at the weekend. The Orquestra de Bandolins da Madeira puts on concerts every week at the English Church, while a nod to traditional Madeira music is provided by the Banda dAlm group, whose concerts can be seen at Madeiras Porto Bay Group hotels. Of course we could also refer to more folksy offerings, from folk to the openair festivals with their more popular artists because these are also cultural events. But the thing that stands out is that Madeira, despite having less than 300,000 inhabitants, has such a wide variety of such events for an island of its size. Furthermore, in this latitude, with this climate, music, theatre, dance and dance touch the senses in a different way, with a certain Atlantic flavour . ..

A Madeira tem tambm uma orquestra clssica de reconhecido mrito, que oferece um completo cartaz com concertos que acompanham as pocas do ano e assinala os momentos festivos como o Natal e o Ano Novo. No raras vezes o Maestro Rui Massena (que j subiu aos palcos do Carnegie Hall em Nova Iorque) convida para o palco do Madeira Tecnoplo, casa da orquestra, solistas e intrpretes que tornam cada concerto nico. E pode bem dizer-se que esta uma orquestra verstil. No estranho, por isso que, num concerto de Carnaval, os msicos possam aparecer disfarados. Esta versatilidade chega ao ponto de a Orquestra j ter tocado com uma banda portuguesa de hip-hop, os Da Weasel. Numa vertente mais institucional existem duas referncias incontornveis. A Associao dos Amigos do Conservatrio dedica-se promoo de concertos de msica erudita. O Gabinete Coordenador de Educao Artstica responsvel pelo ensino da msica nas escolas da Madeira. Este gabinete encontrou uma forma original de promover o talento dos jovens artistas, atravs da criao de grupos que promovem concertos. Actualmente so mais de vinte, que interpretam todos os estilos musicais, desde o canto msica pop, aos instrumentos de sopro ou cordas. raro o fim-de-semana em que pelo menos um destes grupos no esteja em concerto nalgum ponto da ilha. Todas as semanas, na igreja inglesa podemos assistir aos concertos da Orquestra de Bandolins da Madeira. Uma nota a uma referncia da msica tradicional madeirense que o agrupamento Banda dAlm, cujos concertos podem ser vistos nos hotis do grupo Porto Bay na Madeira. Claro que poderamos ainda referir as manifestaes mais etnogrficas, desde o folclore aos arraiais com os seus artistas mais populares, porque esses acontecimentos tambm so culturais. Mas a ideia que fica que apesar de a Madeira ter menos de 300 mil habitantes, tem uma oferta que supera a sua dimenso. Porto Bay Hotels & Resorts has joined in celebrating the bicentenary of of Frdric Chopin, celebrated in Madeira with the complete series of works for piano, performed in nine concerts and interpreted by Artur Pizarro, the portuguese pianist of international renown. This is an initiative from the Associao dos Amigos do Conservatrio de Msica da Madeira (Association of Friends of the Music Conservatory of Madeira). Artur Pizarro began studying the piano at the age of three in Lisbon, and went on to study in the United States, where he lived for 21 years. He has performed internationally in solo recitals, duos, with chamber music groups and a soloist with the worlds leading orchestras. He has an extensive discography available and has received numerous awards. Although the world is his home, since he travels constantly from one end to the other, he changes suitcases in his house in the United Kingdom. During the presentation of the Chopin cycle in Madeira, it was in room 2327 of the Porto Mare Hotel where Artur Pizarro retreated to prepare for the concert. Since I came often this year, I witnessed the growth of this fantastic garden and its dynamic qualities !, he told us, emphasising that every morning he loves to walk through the gardens of Vila Porto Mare resort, savouring the different fragrances and listening to the chirping of the birds. Madeira is very special he noted in our conversation, emphasising its natural beauty and the genuine friendliness of the people. There are habits and regional differences that distinguish every performance and every audience for whom I play. After being on many world stages, Pizarro says that it was on the island, at the Baltazar Dias Theatre, where he discovered his most international audience, since over half of the audience for the Chopin cycle is foreign. Ive already had the experience, during the concerts Ive given across Europe, of being approached by people who tell me that they have already heard me play in Madeira. Durante a apresentao do ciclo Chopin na Madeira, era no quarto 2327 do hotel Porto Mare que Artur Pizarro se recolhia para preparar o concerto. The second edition of the Stars Route, has once again set off from The Cliff Bay Hotels Il Gallo dOro, the only restaurant in Madeira to boast a prestigious Michelin star. Between April and November this itinerant gastronomic festival is winding its way around six Michelin star restaurants in Portugal. Joining host chef Benot Sinthon were a firmament of the finest chefs, including Michel Roth, head chef at the sumptuous Michelin two-star Paris Ritz hotel and one of Frances ambassadors for fine food ; Dieter Koschina virtuoso of the Vila Joya hotel in the Algarve, the only establishment in Portugal to be awarded two Michelin stars, and Spanish Diego Guerrero, who runs top Michelin onestar Madrid restaurant El Club Allard. The roving ambassadors to gourmet created a host of tantalising dishes rounded off by delectable desserts from renowned pasty chef Yves Michoux, who in turn invited Chef Gilles Marchal from Pariss world-famous Maison du Chocolate. In the build-up to the event, the Cliff Bay organised a Gastronomy Week, which ran from 25th to 30th April and included a range of activities, tasting sessions, visits and workshops. Il Gallo dOro (The Cliff Bay, Madeira), Ocean (Vila Vita Parc, Porches), Arcadas (Quinta das Lgrimas, Coimbra), Largo do Pao (Casa da Calada, Amarante), Vila Joya (Algarve) and Fortaleza do Guincho (Cascais) are hosting this years edition. 2kg oxtail in pieces
olivel oil to taste 200g carrots 200g onions 200g leeks 20g ginger 20g lemon grass FOR THE GARNISH 60g scallop flesh per person 70/80g shelled shrimp per person 10g samphire per person flower petals to taste olive oil to taste salt and pink pepper to taste xiso sakura mix Alourar os pedaos de rabo de boi numa frigideira. Colocar em cima de um pano limpo para retirar o excesso de gordura. De seguida, colocar o rabo de boi num tabuleiro que vai ao forno a assar durante 25 minutos a 180. Entretanto, alourar tambm numa frigideira a cenoura, a cebola e o alho francs, todos cortados em cubos. Juntar o rabo de boi assado e adicionar 2 litros de gua fria. Cozer este preparado em lume muito brando durante 2h30 (sem deixar ferver). Depois, passar este preparado num funil forrado com um filtro de caf grande, de modo a extrair o consomm j translcido. Na hora de servir, fazer uma infuso com o consomm aquecido em lume brando, o gengibre descascado e a erva-prncipe (sem ferver). No final, juntar a pimenta rosa, o sal, as salicrnias, as ptalas de flor e xiso shakura mix. Numa frigideira, fritar os carabineiros e as vieiras, durante cerca de um minuto e meio de cada lado. Empratar.
Brown the pieces of oxtail in a frying pan. Place on a clean cloth to remove excess fat. Next, place the oxtail on a baking tray and roast in the oven for 25 minutes at 180. Brown the carrot, onion and leek, all diced, in frying pan. Add the roasted oxtail and add 2 liters of cold water. Cook this mixture on a very low heat for 2h30m (do not boil). When serving, infuse the consomm on a low heat with the peeled ginger and then lemon grass (without boiling). Finally, add the pink pepper, salt, samphire, flower petals and xiso Sakura mix. In a frying pan, fry the shrimp and the scallops for around one and a half minutes on each side. Plate.

I would like to begin by giving my point of view about what I understand by quality. A quality company is made up of the people who work there, the quality of a school, its teaching and education, is built by its teachers, pupils and families. A nation is measured by the quality of its ctizens . .. and they are the people that create the union and quality of a family. Services are measured by the way in which they are performed. Any company, school, family or service is considered to be of quality from its professionalism, availability, investment, capacity to work as a team and, above all, the sensibility in the timely and oportune manner by which those who work there respond to the needs of those they serve. All that I have mentioned here, I had the pleasure of finding at The Cliff Bay hotel, on the island of Madeira. It is the professionalism, the fellowship, the team spirit of the pool staff, the waiters, reception and maintenance staff that make The Cliff Bay a five-star hotel. The easy access to the sea is one of Madeira islands assets. Its pleasant temperature, the lulling of the tides and, at times, the anger of the eddies and currents, make the service given at the pool, a strategic point to qualify the hotel. Being paraplegic, I dont normally have the occasion of being able to enjoy the pleasure of the sea. The Cliff Bay that I found, apart from the exemplary professionalism of its staff, the friendship and the concern shown by all those who carried me down to and accompanied me in the sea, sincerely and spontaneously sharing the pleasure that they gave me, the joy and well-being that the sea always transmits to everyone that it receives. That is why I have, each year that I return, an experience which, after the accident, I never thought I could live again. That is why I would like to express my gratitude and recognition for the pleasure shared, by the pool professionals and by my family who for the past 14 years have accompanied me to this hotel.

Porto Bay has been organising Summer Games for its staff for years an event which is not only great fun, but also aims to bring staff from different hotels together in team spirit, in which they can really let their hair down and have a good time. The idea took root in Madeira, where the Porto Bay Hotels & Resorts has five hotels, and it is on this island which has provided the main stage to these Summer Games. This year, some colleagues from hotels in Brazil and the Algarve took part. In the last edition, the activities began with a boat trip along Madeiras fantastic south coast and wound up with dinner at the Quinta Magnlia. Along the way a photo competition photographing dolphins took place and that of the most creative Porto Bay t-shirt. Special thanks go to all our colleagues who this year couldnt make it to our Summer Games because they were at work. A BIG THANK YOU !!

Desde h muitos anos que Porto Bay organiza os Jogos de Vero, um evento que tem por objectivo reunir a equipa proporcionando momentos de descontraco e convvio. Originrio da Madeira, onde Porto Bay tem cinco unidades hoteleiras, nesta ilha que os Jogos de Vero tm o seu palco principal. Este ano, juntaram-se alguns colegas do Brasil e do Algarve. A edio de 2011 dos Jogos de Vero comeou com um passeio de barco pela fantstica encosta sul da ilha da Madeira e acabou com um jantar-convvio na Quinta Magnlia. Pelo meio, desenrolaram-se os concursos de fotografia a golfinhos e o da mais criativa t-shirt Porto Bay. Deixamos aqui um especial agradecimento a todos os colegas que este ano no puderam estar nos Jogos de Vero, por estarem em desempenho de funes. Um MUITO OBRIGADO!!

Last May, LHotel Porto Bay So Paulo has had the pleasure of hosting jazz singer Stacey Kent and saxophonist Jim Tomlinson, who were in So Paulo to take part in presenting the project TUCCA Music for the Cure with the Trio Corrente in the So Paulo room. To receive them, LHotel Porto Bay So Paulo welcomed them with very Brazilian items such as local banana souffl and a mix of Brazil nuts. One of the loveliest voices of jazz, Stacey received the British Jazz Award for best vocalist 2001 and the BBC Jazz Award in 2002.

Madeira has a unique botanical relic, a forest that covers twenty percent of the island and was classified by Unesco as a Natural World Heritage site in 1999. Spread across 15,000 hectares, most of which is part of the protected Madeira Natural Park, trees dating back thousands of years can be seen. Called the laurissilva, the latin term laurus for laurel and silva for forest, the earliest of these forests date back twenty million years to Continental Europe where they became extinct during the ice age in the Quaternary Period. Today these laurel forests are found only in the region known as Macaronesia which includes the Azores, Madeira, Canary Islands and Cape Verde, but it is in Madeira that the largest and the best-preserved forests exist. The forests have over 85% humidity levels, with constant mists and fogs hanging over them, producing abundant sources of water used for drinking, irrigation and creating electricity for the whole island. The laurissilva, which used to cover most of the island, can now be found on the northern coast at an altitude for 300-1300 meters, especially well preserved in the deep valleys of Caldeiro Verde, Caldeiro do Inferno and Faj da Nogueira. Along the southern coast the forest reaches from 700-1200 meters and the remaining clusters here are in Madalena do Mar, Ribeira de Santa Luzia and Funduras in Machico. The forests are home to numerous trees belonging to the Lauraceae family such as the laurel (Laurus azorica), Madeira laurel (Ocotea foetens), Canary laurel (Apollonias barbujana), Madeira mahogany (Persea indica) and the myrtle (Myrica faia). Other trees include the lily-ofthe-valley tree (Clethra arborea), the picconia (Picconia excelsia) and the rare Madeira cheesewood (Pittosporum coriaceum). The Madeira laurel pigeon (Columba trocaz), exist only there. This pigeon feeds on fruits from the forest and total about 7 thousand. They can be recognized by their white striped tail feathers. The Madeiran firecrest (Regulus ignicapillus madeirensis), the smallest bird on the island and the chaffinch (Fringilla coelebs madeirensis), also live here. The levada cannals, which allow you to reach deep into the remote glistening rocks, take you back thousands of years . ..

A Madeira tem uma relquia botnica nica, a floresta Laurissilva, que cobre cerca de 20% da ilha e que foi classificada pela Unesco como patrimnio Natural da Humanidade, em 1999. Estende-se por 15.000 hectares, protegidos pelo Parque Natural da Madeira, onde se podem encontrar rvores com milhares de anos. Designada de Laurissilva, o nome provem do termo latino laurus, que significa loureiro, e silva que significa floresta. As manchas mais antigas destas florestas tiveram origem h 20 milhes de anos na Europa continental. Com a glaciao do perodo Quaternrio, extinguiram-se no continente europeu. Actualmente apenas subsistem na chamada regio da Macaronsia, que inclui Aores, Madeira, Canrias e Cabo Verde, subsistindo na Madeira a maior e mais preservada mancha florestal. Na zona das florestas os nveis de humidade so geralmente superiores a 85%. Com nevoeiros e neblinas constantes, esta regio uma fonte de gua usada para consumo domstico, irrigao e produo de electricidade. A Laurissilva que antes cobria grande parte da ilha, pode ser vista hoje no norte da ilha a uma altitude entre os 300 e os 1300m, estando especialmente bem conservada nos vales do Caldeiro Verde, Caldeiro do Inferno e Faj da Nogueira. J na costa Sul, a floresta encontra-se entre os 700 e os 1200m, junto Madalena do Mar, Ribeira de Santa Luzia e Machico. Estas florestas tm vrios tipos de rvores pertencentes famlia Lauraceae, como o caso do louro (Lauruz azorica), til (Ocotea foetens), barbusano (Apollonias barbujana), vinhtico (Persea indica), faia-das- ndias (Myrica faia). Para alm destas encontram-se o folhado (Clethra arbrea), pau-branco (Picconia excelsia) e o raro mocano (Pittisporum coriaceum). O pombo trocaz, Columba trocaz, s existe aqui. Este pombo alimenta-se de frutos do bosque, e ao todo, pensa-se que existam na ilha cerca de 7 mil. Podem ser reconhecidos pela sua cauda caracterstica, manchada de branco. O bis-bis (Regulus ignicapillus) madeirensis, o pssaro mais pequeno da ilha e o tentilho (Fringilla coelebs madeirensis), tambm aqui vive. Os canais das levadas permitem desvendar as profundezas da floresta laurissilva, um mundo praticamente intocado de rvores de folha persistente, cascatas, lagoas e ribeiros, que pouco mudou desde tempos imemoriais . ..

Look left, look right, look up, look down. you can even cover eyes, stamp your foot, deny your mother and father, but you have to admit : Rio is an amazing city !! Few of the worlds urban landscapes combine the sheer blue of the sky and sea with the green lushness of nature so sublimely. you get a different perspective at every turn. From the peak of Corcovado or the Vista Chinesa, the view opens out onto the Atlantic, as your eyes linger over the inlets, beaches and islands in Guanabara bay, the hills covered by the Atlantic Forest, the citys jarring architecture ; skyscrapers here and shanty towns there. Seeing Rio from the outside in is the great attraction of taking the funicular up the Po de Aucar mountain. Still on high, it is well worth having a helicopter flight to get the widest possible panorama over this natural wonder, now tamed by man. Rodrigo de Freitas lake, sandwiched between Ipanema and the hills, is one of the points the flights go from and makes for an unforgettable circuit for natural beauty lovers. An excellent alternative for the healthy outdoors is the Tijuca rainforest, 3,300 hectares of unspoilt nature. As well as the abundant fauna and flora you will find trails and waterfalls, lakes and picnic spots, the Aude da Solido and the Mayrink chapel. Continuing on this green tour, the Botanical Gardens, with their collection of centuriesold trees, flowerbeds, hothouses and lakes, make for a magnificent, provide a manificent trip to awaken the senses, one which natural science fans will enjoy too. For something completely different, go on a journey through time and into the historic centre of the city. In Rio de Janeiro every taxi driver is a budding historian, well-versed in matters regarding Dom Joo VI and the questionable beauty of his wife Dona Carlota Joaquina. If for the Portuguese the then Prince Regent left them at mercy of Napoleon, for cariocas (the name for people from Rio) the sovereign is an icon. On 7th March, 1808, the Portuguese royal family and respective court weighed anchor at Largo do Pao in Rio de Janeiro, nowadays Praa XV de Novembro (15th november, the date the Republic was created in 1889). This historical chapter of the two countries was responsible for the transformation of the city, which was christened So Sebastio do Rio de Janeiro by the Portuguese in 1502, although the city (the capital at the time and the subject of countless poems) would have to wait until the beginning of the 19th century to see its heyday. D. Joos passion for Rio was soon evident with creation of the Real Biblioteca (Royal Library), the Botanical Gardens, the So Joo theatre and the arrival of the French arts mission in 1816. Industry was encouraged with the Junta do Comrcio, Casa da Moeda and Banco do Brasil. The vestiges of colonialism and the Empire can be still be found in the city centre, starting with the So Bento monastery (1590), whose Baroque and Rococo elements attract countless tourists. If Avenida Rio Branco has become the business centre of the city, the colonial influences of the surrounding area can still be seen in the architecture of its colourful sobrados (twostorey houses with balconies). Special mention goes to number 13 on Travessa do Comrcio, where Crmen Miranda once lived, and Praa XI, the birthplace of samba. The Pao Imperial boasts a wealth of other stories and the legend that inspired the expression, Maria vai com as outras, which is used to describe someone who is easily influenced by others. It seems that because of mental health problems, Queen D. Maria I liked running into the street naked, being immediately surrounded by her ladies-in waiting. No Rio de Janeiro cada taxista um historiador em potncia, versado em Dom Joo VI e na questionvel beleza de sua mulher Dona Carlota Joaquina. A 7 de Maro de 1808 a famlia real portuguesa e respectiva corte ancorava no Largo do Pao do Rio de Janeiro, hoje praa XV de Novembro (dia da implantao da Repblica, em 1889). Este captulo da histria dos dois pases foi responsvel pela transformao do Rio, baptizado pelos portugueses, em 1502, como So Sebastio do Rio de Janeiro. Seria pois no princpio do sculo XIX que esta cidade ( data capital do Brasil) inspiradora de infinitos poemas teria a sua apoteose. A paixo de D. Joo pelo Rio depressa se fez sentir com a instalao da Real Biblioteca, com a criao do Jardim Botnico e do teatro So Joo ou com a chegada da misso artstica francesa, em 1816. Isto para no falar do incentivo produo industrial, da instituio da Junta do Comrcio, da Casa da Moeda e do Banco do Brasil. no centro que se encontram vestgios do colonialismo e do Imprio. Comecemos pelo mosteiro de So Bento (1590), cujo barroco e rococ atrai um sem nmero de turistas. Se a Avenida Rio Branco se tornou o centro de negcios, nas imediaes h vestgios da arquitectura colonial nos coloridos sobrados (casas de dois pisos com varanda). Meno especial para o nmero 13 da Travessa do Comrcio, onde viveu Crmen Miranda, ou para a Praa XI, onde ter nascido o samba. No Pao Imperial, alm de outras histrias, conta-se a lenda que deu origem expresso Maria vai com as outras. Ao que parece, a braos com a loucura, a rainha D. Maria I gostava de fugir nua para a rua, sendo de imediato cercada pelas suas aias. Mas no Rio h sempre mais do que uma verso da mesma histria . .. descubra a sua !!

Botecos (taverns) are Rios greatest culinary institution, according to Guilherme Studart, author of the Rio Botequim guide. This is where you will find traditional Rio cuisine and friendly service, together with cod fishcakes, really cold beer and caipirinhas (lime and rum cocktail) for the customers in flip-flops. For a romantic dinner, where better than Zoz, which boasts one of the most beautiful backdrops in Rio, the Sugar Loaf Mountain. With its mix of old and new, Chef Marcelo Tanus presents a new look on international cuisine, which can be washed down with any of 300 different Brazilian wines, all to the sound of bossa nova style MPB. With concepts brought from So Paulo, the Astor and Brz pizzeria have integrated well into the Rio spirit. The former goes for the 1950s bohemian feel, while the Brz is such an in place, dont be surprised if you spot a soap opera star. Evergreen classics include the Gula Gula, with its famous salads and the Nova Capela, which opened in the Lapa district in 1923. Another tradition is street food. From the beach to the centre of town, the little food stalls camels sell everything from curd cheese to sushi, not to mention the famous Rio pastries and an endless variety of tropical drinks, often including guaran and coconut milk. For a culinary journey back to the 19th century, go to Confeitaria Colombo, where you can sample fub (cornflour) cake with cheese, among other delicacies in an old-style tea room atmosphere.

In this wonderful city (whose name was immortalised in a song by Andr Filho in 1935) the rhythm is samba, marchinha and saracoteio. From the sound of the waves to that of the leaves on the trees, from the sway of the hawkers to the foot tapping of the women on Ipanema beach listening to the latest iPod, everything is made of the peoples innate swing and cadence. In terms of music proper, theres everything from samba to rock, from bossa nova to funk, from marcha to rap, and songwriters sing and play Rio de Janeiro in different times and ways. Travelling further back in time, we find chorinho, which arrived with the Portuguese royal family in the 19th century. Traditionally instrumental and urban, it was a reflection of Rio and its different neighbourhoods. Later, with the freeing of the slaves (1888), the black population from Baia arrived, bringing with them the roda do samba that became an integral part of the genetic make up of the cariocas. Another Rio musical genre is bossa nova, which appeared in 1958 as a new form of samba. It was the ever-green Desafinado, written by the movements maestro Antnio Carlos Jobim, and performed by the genius Joo Gilberto, that came up with the term, which was taken from the verse : isto bossa nova, isto muito natural (this is something new, this is very natural). Love, the sea and a woman loved are the most important themes in the lyrics of Vinicius de Moraes.

Despite the beach being a constant temptation, Rio is a cultural magnet with dozens of cultural centres, and in tune with the citys democratic bent, many are free. Lets start with the Centro Cultural Banco do Brasil, where visitors will find scenic arts and fine arts, as well as music. Located in Gvea, the Instituto Moreira Salles collection contains over 550 thousand images from the 19th century, the majority of which are of Rio de Janeiro. During a picturesque cable car ride, the Santa Teresa neighbourhood is worth seeing for its large Spanish-style houses, countless art galleries and shops that mix art and design. After passing the Parque das Runas viewpoint, you have to visit Chcara do Cu, a house-museum that houses Raymundo Ottoni de Castro Mayas private collection : the perfect combination of contemporary art and 17th and 18th-century colonial furniture in lush surroundings. Returning to the centre, keep an eye out for the mega-library of the Real Gabinete Portugus de Leitura and respective Neo-Manueline architecture. Near Cinelndia, previously known as Rios Broadway, we recommend a visit to the Theatro Municipal, one of the citys calling cards, whose boards have been trodden by the likes of Fernanda Montenegro, Enrico Caruso and Maria Callas, amongst other stars. To really appreciate this classic theatre, which was restored in 2009, visit the backstage area with a friendly local guide.

Na cidade maravilhosa cognome consagrado numa cano de 1935, do compositor Andr Filho o ritmo samba, marchinha e saracoteio. Do rumorejar das ondas do mar, ao das folhas das rvores, do bamboleio de quadris do camel, ao bater de p da gatinha na praia de Ipanema, ouvindo o seu iPod de ltima gerao, tudo feito do balano e da cadncia que vive dentro de cada um. Quanto msica propriamente dita, do samba ao rock, da bossa nova ao funk, da marcha ao rap, os compositores cantam e tocam o Rio de Janeiro em diferentes pocas e gneros. Recuando aos primrdios, encontramos o chorinho, que chegou com a famlia real portuguesa no sculo XIX. Tradicionalmente instrumental e urbano, era o retrato do Rio e dos seus bairros. Mais tarde, com a libertao dos escravos (1888), chegaram cidade os negros baianos e com eles a roda do samba que se entranhou nas gentes cariocas para nunca mais sair. Outro gnero com gnese carioca a bossa nova, que surge em 1958 como uma nova maneira de encarar o samba. O eterno Desafinado, composto pelo maestro do movimento, Antnio Carlos Jobim, e interpretado pelo gnio de Joo Gilberto, popularizou o termo retirado do verso : isto bossa nova, isto muito natural. O amor, o mar e a mulher amada so os temas maiores nas letras sadas da pena de Vinicius de Moraes.

ON by porto bay is a fusion art festival with social solidarity ends organized and produced by Porto bay hotels and resorts. The third edition of ON filled the streets of the old town of funchal last july and exceeded the best of expectations. More than 300 participating artists, a large public and 41 thousand euros raised for beneficiary social institutions : the group danando com a diferena (dancing with difference) e a associao comunitria do funchal (community development association). o ON by porto bay um festival de fusion art com fins de solidariedade social organizado e produzido por porto bay hotels & resorts. A terceira edio do ON encheu as ruas da zona velha do funchal no passado ms de julho e superou as melhores expectativas. Mais de 300 artistas participantes, muito pblico e 41 mil euros angariados para as instituies de solidariedade social beneficirias : o grupo danando com a diferena e a associao de desenvolvimento comunitrio do funchal.

this festival, first presented in 2006, repeated in 2008, and returned to the street in 2011, has been warmly received by the public. it combines fusion art with artistic performances, using the main streets of the old town as a stage. the festival has two aims : to liven up the old town of funchal through different cultural expressions, and on the other hand to help social solidarity institutions, in this way intending to set the example in taking on social, civic and cultural responsibility. the name ON comes by mixing the words old and new and translates into boosting, enlivening and energising the . .. old part of the city, its revitalization and dynamism motivated the porto bay group to undertake this activity in the belief that the unique characteristics of the area called for a more intense cultural and urban outreach.

the beneficiary associations are also involved in producing ON by porto bay . .. henrique amoedo, artistic director of danando com a diferena, created a site specific using the waves from the almirante reis garden as a backdrop, in a performance which involved almost one hundred people, young and not-so-young, with and without special needs. this show was truly one of the highlights of ON. as a way of promoting ON, 250 children signed up for the happy holidays programme run by the associao comunitria do funchal decorated the streets with balloons, crossed the centre of funchal to the old part. some of these children also took part in the danando com a diferena performance.

Its perhaps not surprising that the sweets and deserts from Portugals Algarve region should have a strong Moorish influence ; after all they ruled the southern part of the Iberian peninsular for centuries, and have left their mark not only on the regions history, but also its culture and cuisine. This heritage has also been mingled over the centuries with the culinary traditions of the monks and nuns who ran the religious orders in the south of Portugal and developed what we know today as convent sweets, which are still prepared today using eggs and sugar with various age-old techniques, making them famous all over the country and the peninsula. From the bewildering array of tantalising Algarve sweets, theres one particular one that is simply mouth-watering to ignore : almond marzipan is not only famous because of its distinctive flavour, but also in the shape these sweets are sold, usually in the colourful form of fruits, flowers, and even birds. Marzipan, or almond paste, is made from ground almonds, sugar, and eggs. Different colourings are added to the resulting paste to give the fruit, flowers and animals that these sweets aim to represent a wonderful and artistic realism. The sugar and eggs hail from the religious cloisters of Portugals medieval past, but the almonds were a staple of the countrys Arabic heritage. The living proof of the links these marzipan figures have with Portugals Muslim history can still be seen in the sweets of some North African countries today, which often take on various animal forms and images taken from daily life. A doaria do Algarve fortemente marcada pela influncia rabe, que durante sculos marcou a vida e a cultura no sul da Pennsula Ibrica, com diversos reinos, um dos quais, o dos Algarves. A essa herana, que tambm histrica e cultural, juntou-se a habilidade dos monges e freiras que, usando ovos, acar e vrias tcnicas de confeco, pegaram na herana rabe e integraram-na na doaria conventual to famosa de Portugal. Do conjunto de doces algarvios h um que impossvel passar despercebido : a massa de amndoa, no apenas pelo sabor, mas pela forma como estes doces so vendidos, transformados em figuras de frutos, flores e at aves. um doce de amndoas, acar e ovos, corado com diferentes corantes, que ajudam a dar realismo aos frutos e flores que os doces pretendem representar. O acar e os ovos so herdeiros da doaria conventual. As amndoas, alm de associadas paisagem do Algarve, resultam da herana rabe. The menus of Il Basilico, in the Vila Porto Mare (Madeira) and Porto Bay Falesia (Algarve) have been updated following the Italy with Soul gastronomy week. The guest chef was Angela Campana, a chef whose career has taken her to many different countries including the USA, Nepal, Tibet, China, and Spain. Working with Chefs Alcino Marques and Cristiano Cuttieta, as well as the Il Basilico kitchen team, a fusion of flavors was created, inspired by the essence of Italian cuisine. The dishes ranging from pastas and risottos, to fish and meat, were evaluated by customers throughout the event and those which scored best have been included in the restaurants revamped menu . .. paccheri al forno
4 PERSONS 250g of paccheri pasta (cannelloni pasta tubes) 750g of aubergine (egg plant) 300g of ricotta cheese 5g of savory 1 egg yolk 40ml of olive oil 100ml tomato sauce 4 PESSOAS 250g massa paccheri (tubos canelone) 750g beringela 300g ricotta 5g segurelha 1 gema de ovo 0,4dl azeite 1 dl de molho de tomate
a pinch of salt and freshly ground pepper 1.75kg of tinned cherry tomatoes 2 cloves of peeled garlic 5g of basil leaves 50 ml of olive oil 15g of grated parmesan cheese salt and ground pepper as needed Peel the aubergines and cut up into little cubes, season them with salt cooking them in olive oil until well done. Let them cool and then, when cold, add the ricotta cheese, the savory and the egg yolk. Season with salt and black ground pepper, mixing the ingredients together well before putting to one side. Cook the cannelloni pasta until it is al dente and drain. Slice them down the middle and lay them in a frying pan drizzled with olive oil and tomato sauce. Leave them to cool. Then fill the pasta casings with the filling using a chefs piping bag. TOMATO COULIS Pulp the tomato well in a mincer and then strain it through a colander. Add finely chopped and slightly crushed garlic, the basil leaves, crushed by hand and season with olive oil, salt and pepper. TO SERVE A PORTION (to serve 10) Place the filled paccheri in a heat-proof dish, sprinkle with freshly grated parmesan cheese and put in the oven for five minutes at 180. Meanwhile, heat up a little of the tomato coulis. Then, pour three or four table spoons of the sauce on the plate. Arrange the paccheri with filling on top and serve up decorated with a few basil leaves.
qb. sal e pimenta do moinho 1,75 kg de tomate cereja de lata 2 dentes de alho descascado 5g folhas de basilico 0,5dl de Azeite 15 g queijo parmeso ralado qb. sal e pimenta do moinho Descascar a beringela e cortar em cubos pequenos, salteando-a depois em azeite at ficar bem cozida. Deixar arrefecer e, depois de fria, juntar a ricotta, segurelha e a gema de ovo. Temperar com sal e pimenta preta do moinho, mexendo tudo muito bem. Guardar. Cozer os canelones al dente, escorrendo bem a gua. Cort-los ao meio e alourar numa frigideira com azeite e molho de tomate. Deixar arrefecer. Depois, rechear com o preparado utilizando o saco de pasteleiro. COULIS DE TOMATE Triturar o tomate muito bem na picadora e pass-lo pelo passador. Juntar o alho ligeiramente esmagado, as folhas de baslico esfarrapadas mo, temperar com o azeite sal e pimenta. Guardar. PARA SERVIR UMA PORO (10 unidades) Colocar o paccheri recheado num recipiente de ir ao forno, durante 5 minutos e a 180 com o queijo parmeso ralado. Entretanto, aquecer um pouco de coulis de tomate. De seguida, deitar num prato cerca de 3 a 4 colheres de sopa de coulis no fundo. Colocar o paccheri e servir decorado com umas folhas de baslico.

The cellar is stocked with over 100 reference wines but this is just half the experience. Paulo Sousa, will share stories, pass his wisdom and passion about wines. Though we do carry an international selection, it must be said that the depth of our portfolio can be seen in the vast selection of Portuguese wines we stock, both table and fortified, from many of the national oenological regions : Vinho Verde, Douro, Alentejo as well as a selection of fortified liquors from Madeira . .. It has been 2 years since the Porto Bay group acquired the prestigious LHotel Sao Paulo, and to mark the event the recently renovated Trebbiano restaurant is proud to offer a new menu. The menu whitch is the creation of Chef Luiz Pinheiro, has strong Mediterranean influences. Our suggestion : risotto saffron with ossobuco ragout or the neapolitan tagliatelle with veal polpettone stuffed with mozzarella cheese. And for desert the delights of homemade chocolate orange petit gateau, or the vanilla fancy with amarena cubes . ..
