VIDA A BORDO

5
www.4crew.com.br
A seguir vamos
bandeja, empurram trolley, etc.
6
www.4crew.com.br

Lavanderia do passageiro:
tripulantes ocorrem neste ambiente.
eleitor.
A escala normalmente é fixada no Crew Office (escritório onde fica o chefe do departamento) e você deverá ir
O over time será pago a partir da 13 horas (por dia).
Se ultrapassar as 390 horas paga-se over time.
Escala diferenciada:
término dar-se-á no dia do seu sign off.
contrato é assinado a bordo.
14
www.4crew.com.br
Reembarque
Brigas a Bordo
É extremamente proibido brigas a bordo (brigas físicas), caso ocorra os tripulantes envolvidos serão
demitidos imediatamente.
Respeite a
cultura alheia.
a bordo.
Port Manning:
todos saírem e algo acontecer, quem tomará as providências?
desembarque por life boats ou life rafts.
20
www.4crew.com.br
Higiene pessoal e aparência, tais como: como lavam as mãos, uso e manuseio de equipamentos, three bucket
system e separação de lixo.
Médico a bordo
grave a enfermeira poderá te ajudar.
lhe indicará a medicação adequada.
no futuro.

Recebimento do Salário:
Opções:
quantia no office.
numa agência do banco do Brasil, portando RG.
23
www.4crew.com.br
Etapas:
24
www.4crew.com.br

RESTAURANTE

www.4crew.com.br
Restaurant Departament
The restaurant service onboard of a cruise ship is totally different from what you are used to see in land. The
first big difference is that the passengers onboard go to the restaurant looking for a good service in the first
place. Americans and Europeans know what is a good service and for sure they will demand this from the
restaurant staff.
The staff of the restaurant must be in conditions to deal with this society.
Since the entrance, the customer judges the quality of the restaurant by the attitude and the presentation of the
staff.
These qualities are based on: sensitivity, be on time, courtesy and firmness of character relationed to yourself
and also your colleagues, and of course, the coordenation of the establishment.
The guest doesn‟t have to stand a badly humored waiter who answers in a coarse or cynical way, the guest will
notice your bad attitude.
It is also important to be aware of the high level of pace of work inside the restaurant department, since one of
the main concerns of the restaurant is to deliver the food to the guest nice and hot, most of time this fast pace
of work can be an issue related to adaptation for those who are not used to, but in two or three weeks you can
get in this fast pace of work and don't even notice it.
Most of the cruise ship companies have their own credo, this credos are service standards that have to be
followed strictly in order to provide excellent service.
Some examples of credos are:
27
www.4crew.com.br
Posture – If you are slouch and look bored, your voice will come off sounding indifferent. So, stand up
straight!
Tone of Voice – Your tone of voice can set the mood of the conversation. If you sound angry, and
disinterested, it‟s unlikely that your passenger will respond with joy and delight.
Volume - When you are feeling under the weather, raise your natural volume a little, however, never shout
when speaking to the elderly.
Pronunciation – Try to speak as clear and correct as possible and also try to look at your passengers, if the
passenger speaks quickly, and you‟re speaking at a slow rate, the passenger will become impatient.
28
www.4crew.com.br
What are the four things passenger will observe about you ?
Focusing Skills
Dicas Especiais
Instead of saying “You‟re welcome!” when the passenger say “Thank you”, say – “MY
PLEASURE”
Learn guest‟s names
If the guest asks “How are you?” answer – “I‟M EXCELLENT! THANK YOU SR.!”
Galley
On a ship the kitchen is called the Galley. On a cruise ship it is one of the largest areas that the passengers
never see. On the Norwegian Wind feeding over 2,000 people is a huge task. It is done with excellence! The
Galley is actually divided in several Galleys. Some of the smaller dining rooms such as the Pizzeria, Sports
Bar, and Crew Areas have their own Galleys. The Main Galley is responsible for breakfast, lunch, dinner, and
the famous midnight buffet (see Dining Rooms). The Galley never stops. It works 24 hours a day.
The dimension of the quantity of food which is produced on the Galley is enormous. For example: we've used
40,000 eggs so far this trip. And guess what? Someone has to break them! That's why we have 127 cooks on
the ship.
If you work in the dining room it is important to know that there are two different doors, there is only one door
to go in and a different door to go out. This rule cannot be broken; it was made to avoid food contamination
and also to avoid accidents, as soon as you enter by the entrance door you will find the dishwasher and the
garbage containers.
Also in the galley there are the food lines, that means that each kind of food has a different place to get it.
There is one line for Soups, another for Pastas, Desserts, Seafood, Salads, Appetizers; in a few days the
Assistant Waiters will know where to get what inside the galley. This organization makes the work easier and
faster to everyone.
29
www.4crew.com.br
1 – Be alert where do you step; sometimes on the rush people drop drinks on the floor or maybe some piece of
food.
2 – Respect the waiters‟ line, although DO NOT let them cut off your way and take your order.
3 – DO NOT EVER scream or yell to a cook.
4 – Always walk at the right side.
5 – It is convenient to take the plates with a cloth napkin, otherwise you will have a good chance to burn your
fingers.
6 – Do not walk slowly.
7 – If you are passing with your tray behind somebody don´t hesitate to say “watch your back”.
8 – Always take the cold food first (ice cream, salads, appetizers)
9 – Do not seat on the counters.
10 – When you are at the station, don‟t wait the cooker ask you about what you want, have the attitude to ask
him what you need, if necessary speak in a higher tone of voice.
Organizes and plans all the departments of food and drinks of the restaurant, such as: galley, pantry, service of
slap-ups meal, restaurant, coffee shop, grill, disco, bars, etc.
Make inspections to check if USPH is being followed.
Check comment cards from the Food and Beverage Department.

Rechaud or Chafer
A buffet is a meal serving system where the guests serve themselves. It is a popular method of feeding large
numbers of people with minimal staff. The term is also used to describe a sideboard, an antique form of
furniture which was sometimes used to offer the dishes of a buffet meal to guests, in a private way. Consist
basically of mounting in the restaurant a table buffet with a variety of plates.
In most of Companies Buffets are only open from 7:00 am to midnight but there are a few companies where
the buffet is open 24 hours a day, giving the chance for some Buffet Attendants to work on night shift.
Buffets will always be on the pool deck of the cruise ship, so the exit door of the buffet will always end up in
the pool area, which will also have tables. Some guests will want to have their meals outside, on the open
deck. There are also the Hamburgueria, Pizzeria, Ice Cream Bar, so Buffet Attendant will work on the open
deck area too, cleaning the tables, refilling the Hamburgueria area, Pizzeria, and sometimes even serving
drinks..

Certain kinds of food cooks will help on the buffet line refill.

Room Service
As soon as the room service receives the order from the guest, the first thing to check is if the order is correct.
On the form, when the guest makes the order, it is necessary that the stewards repeats what was asked, to
prevent errors. This also includes to ask all the characteristics and accompaniments. For example; if the guest
desires well done meat or rare, if he would like syrup with the pancake, if he desires the milk hot to follow the
coffee, if skimmed or regular milk, etc… as soon as the order will be concluded.
Generally if asked, it is ready in 5 minutes in the Galley, therefore it needs to be a perfect communication
between steward and the galley in order for the food to arrive on time for the guest.
Punctuality:
Punctuality is extremely important for room service, especially on the breakfast time, when depending on the
size of the ship, it is served around 350 breakfast delivers, which should be delivered on the time requested by
the passenger, so everybody must be on duty in the time schedule so the whole deliver process will not be
delayed.
Remembering also that when you are coming on duty or coming back from your break, there is always
somebody waiting for you to be covered.
Product Quality:
The product quality is very important and the stewards must attempt to do all the best for this. As soon as you
receive the food from the Galley, to check if the corresponding plate is in accordance with the norms of the
international cuisine (example: if the order will be caviar, must check if this will count the necessary
accompaniments as egg yolk, toast, sour cream and onions. The photos and the accompaniments of each plate
are in the Pantry to make your orders checking easier).
Hygiene:
All material used in the pantry must be sterilized with hot water. The stewards must check if cups or plates are
with some mark or badly washed. Remembering that responsibility of the piccolo is to keep the Pantry clean
and the utensils washed , but the biggest responsibility of the steward is to check and place everything in order
to be served, so the guest won‟t have any surprise, for example, to find a mark of lipstick in a juice glass. In a
similar way where the utensils have to be sterilized, the steward also must be in the same way. To wash the
hands all the time you enter the Pantry. This must become a habit. Also to take care so that the hair is well
fixed to prevent hair fall on the food or drink.
PS: The nails will have to be short and clean.
Appearance:
The appearance of the food and a quality is imposed not only for the Cruise Industry, but also for the safe and
sake of the guest. All the foods and beverages will have to be covered with plastic film or cover. They will
have to be served in a tray and to be in perfect conditions.

21 .Don't overly disturb the customers. Avoid going into eagle-hawk mode. Customers hate to be ogled at or
constantly interrupted. How would you feel if someone was glaring at you as you eat your meal? If a table
wants something they will glance around to look for you. If you stay alert and watch (not stare) your tables
as you walk around, most customers will make eye contact as a signal that they need you. This can give them
the feeling that you're paying attention without hovering or badgering them. When their good meals and
conversation are over, they will start looking around at other diners or the walls. This can tell you when to
clear plates, offer desserts or drop the check.

it or turning it, specially the really old red wines.
Also according to great quality wines, older than 10 years, these ones
should be decanted, that it would be, pass from the bottle to a jar
(decanteur) so it can get rid of the impurities deposited on the bottom of
the bottle. It can also be opened a while before the service.
The glasses it will never be filled till the top, at maximum, till 2/3 of
the volume of the glass.
After the first service the waiter should be alert to continue serving
the wine again.

coloured Cabernet. Pinot Noir. Chardonnay Chardonnay
Red Wine: Merlot, Cabernet Sauvignon, Shiraz, Malbec, Carmenére, Pinot Noir, Zinfandel
Red wine glasses are wider, with a very large bowl, since red wine needs to be swirled around to come in
contact with the oxygen, and benefit from a larger area of contact with the air.
Types of Red Wine grapes advised to women – Malbec, Zinfandel, Pinot Noir.
Types of Red Wine grapes advised to men – Merlot, Carbenet Sauvignon.

White Wine: Chardonnays, Sauvignon Blanc, Riesling, Pinot Blanc, White Zinfandel, Pinot Grigio,
White wine glasses are tulip shaped. They are smaller than red wine glasses. The reduced surface area of
contact with the wine prevents the white wine to warm up too fast.
The wrong match of Wine and Food can either take out the food‟s flavor or make the own wine looks useless
and out of context, and it can even cause nauseas (sweet wine with salty food). The basic combination is that
red wine combines with red meat and pasta, and the white wine with fishes, seafood and desserts.
Besides the combination, it is also necessary to respect the sequence of wines: it is as important as the
combination.
The main rule is: white wines, that are weaker and more delicate are served before the red wines, which are
stronger, and in the same category, whites or reds, first you serve the less expensive ones.
The Sweet Wines are served after the Caviar – Sparkling Wine
salty part of the meal. They are served
with the dessert. Salad – White Wine
WHITE WINE - normally served with fishes and oysters, and with White meat in general such as veal
meat, pork and chicken.
RED WINE - normally served with red meat, and with White meat from hunted animals (rabbit, boar,
goose, etc)

Although the process of decanting is recommended for older wines, it can also make younger, less expensive
wines come to life.
It allows you to separate older wines from their sediments, which if left in the wine would impart a bitter,
astringent taste.
It allows the wine to slowly come in contact with the air, aerating the wine and making its complex aromas
and flavors come to life;
Liqueurs
A liqueur is an alcoholic beverage that has been flavored with fruit, herbs, nuts, spices, flowers, or cream
and bottled with added sugar.
Liqueurs are typically quite sweet; they are usually not aged for long but may have resting periods during
their production to allow flavors to marry.
They are often served with or after a dessert. Liqueurs are also used in cooking.

Herbal Liqueurs
Herbal liqueurs, such as Jagermeister, are made with as many as 50 different herbs. Their exact ingredients
are usually trade secrets. A simple but devastating drink made from a popular herbal liqueur is the aptly named
Jager Bomb, a mix of Jagermeister and an energy drink, such as Red Bull.
Drambuie, Yukon Jack and Irish Mist are popular whiskey liqueurs, which are made from whiskey, flavored
with herbs and sometimes honey.
Sloe gin is a red-colored liqueur flavored with sloe berries. To make this liqueur, gin is infused with the
berries, along with sugar to ensure the juices are extracted from the fruit.
