Foley Wine Estates


Quality Wines from Celebrated Sta. Rita Hills
Since its establishment in 2001, the Sta. Rita Hills AVA has become one of Californias most celebrated destinations for Pinot Noir and Chardonnay. Located in Santa Barbara County, between the bucolic towns of Buellton and Lompoc, the area is popular for its slow pace, gorgeous scenery, great restaurants and fine accommodations. Any visit to Sta. Rita Hills should include a stop at Foley Estates. The winery was founded by Bill Foley in the late 1990s and today is one of the most important properties in the appellation. Much of the winerys success can be attributed to the two extraordinary estate vineyards: Rancho Santa Rosa and Rancho Las Hermanas. The 460-acre Rancho Santa Rosa Vineyard features 230 acres of vines that climb from 500 to 1,000 feet above sea level. The soils are maritime-based and the weather is consistently cool thanks to moist ocean breezes that sweep the property daily. The majestic 500-acre Rancho Las Hermanas property features 205 acres of Pinot Noir (Lindsays Vineyard) and 52 acres of Chardonnay (Courtneys Vineyard). It is a cool, rolling site blessed with six distinct, limestone-based soil types. In addition to the unique terroir at both sites, winemaker Leslie Mead Renaud credits Foleys intense farming protocols for the quality and style of the wines. One of the simplest, yet most radical developments in California viticulture since the 1990s is micro farming. It is based on the Burgundian model of mapping soils and contours of a piece of land down to the smallest increment. At Foley, we use soil pits when planting a parcel and aerial photography when it is producing to pinpoint changes in the terrain that affect vine growth and wine character. We then farm each of these tiny sections as if they were single, independent vineyards. According to Bill Foley, Our goal with our farming and winemaking programs is to ensure wines that are true to both their origin and the grape variety. Our Pinot Noir has all the exotic spice and complexity youve come to expect from Sta. Rita Hills Pinot. Our Chardonnay is concentrated and lush, yet it still retains the freshness and balance of a wine from a cool, maritime climate. Since the first vintage, Foley Estate wines have received universal acclaim from the wine media garnering more than 40 scores of 90 points or above from Wine Spectator, Wine Enthusiast, Wine Advocate and Connoisseurs Guide. The winery is currently releasing its spectacular 2009s including a number of luscious Chardonnays and complex Pinot Noirs. All of Foleys wines can be tasted at the grand tasting room located at their Rancho Santa Rosa property. Built in 2005, this stunning, 3,500-square-foot building offers a comfortable setting for tasting and spectacular vistas of the neighboring mountain ranges, coastal oaks and rolling vineyards. Which wines are best for cooking?


Any chef who also loves wine will tell you never to use a wine in your recipe that you dont think is good enough to drink. One thing most agree on is to not use wines labeled as cooking wine. These wines contain salt and do not have the complexity of flavor that you need from this vital ingredient. Using a quality wine doesnt necessarily mean that it has to be expensive. It would make no sense to use a rare vintage of Bordeaux, either. However, you do want something with style, flavor and depth. Depending on the type of wine, it could cost under $10 and still provide quality. Wine used in cooking will gradually lose some of its alcoholic strength as it is cooked. The longer it cooks, the more alcohol will be evaporated. What will remain are the basic flavors of the wine, which marries with other ingredients in the pan. When choosing a wine for a particular dish, try to match the primary flavor components of the wine with those of the dish. Here are some dry table wines commonly used for cooking and their typical flavor contributions: Chardonnay: Green apple, butter, butterscotch, vanilla Sauvignon Blanc: Herbal, vegetal, citrus Pinot Noir: Mushroom, red cherry, truffle Merlot: Blackberry, cocoa Zinfandel: Jam, blackberry, black pepper Cabernet: Cassis, black currant Another factor to consider when cooking with wine is the timing of the addition of the wine. The earlier the wine is added in the cooking process, the more alcohol will be evaporated. But there are cases when the alcohol is desired in the recipe. A splash of wine added near the end of the process will retain nearly all of its alcohol content. If youre thinking of using fortified wines like genuine Sherry, Port, Madeira and Marsala wines, be aware that they contain elevated alcohol levels to begin with. Most also will retain a good amount of their sweetness, although some can be fully dry. Wine will boil at a lower temperature than water, around 175 degrees versus 212 degrees. So, if you substitute wine for water in a recipe, remember to add cooking time to compensate for the lower boiling temperature.

Halter Ranch Winery


A New History

Near the remote intersection of two long gently curving roads, under a canopy of old oak trees you will find Halter Ranch Winery, whose desire to produce world-class wine, specifically both Bordeauxand Rhne-style, came to fruition. The first vines were planted in 1996 and by 2001 the majority of new plantings were put in the ground. The Halter Ranch team began by soil mapping the entire area to determine which varieties they would plant. In the end 20 different varieties were planted allowing for abundant blending options. The goal was always to make a world-class estate vineyard wines. Were not interested in making a lot of wine from everywhere. We believe this place has significant growing conditions, says Leslie Wyss, Operations Manager. The property was originally part of a 3,000-acre ranch dedicated to cattle, hay and barley production and was settled in the 1880s located in what was a very small farming community known as Adelaida. With that farming history as part of their story, Halter Ranch hit the Paso Robles wine scene with a bang. Before long their tasting room, which was built only in 2005, suffered growing pains and needed to be expanded to meet the demands of wine lovers and has since doubled in size. And now, Halter Ranch is adding a new state-of-theart winery to their expansion plans. The main exciting news is that we are in the final stages of building our new winery, says Wyss. The production side of the building is complete and our new winemaker Kevin Sass is using the facility for the first time this harvest. The winery is gravity flow in design and will allow us to process more of our estate fruit for the Halter Ranch label, Wyss adds. Since 2002 they had been making their wines in an old airplane hangar located on their property. Weve been hamstrung by our limited space and have had to cap our production at roughly 8,000 cases, while our vineyards could readily provide fruit for 30,000 cases, says winemaker Kevin Sass, who took over the winemaking reigns in 2011. With this harvest, Sass adds, we will sell less fruit to our neighbors and begin building the Halter Ranch identity. The new winery has been meticulously designed to be environmentally sensitive. All winery wastewater, for example, is recycled back into the vineyards and they save energy by using gravity flow rather than pumps. The gravity-flow process facilitates very gentle handling of grapes, juice and wine, which in turn produces smoother, purer wines, free of astringent tannins. Overall, our winemaking will become far more energy-efficient, in line with our governing philosophy of sustainability, Sass says. That falls in line with the chickens and sheep that wander the property, doing their own version of grazing and insect management. And its not just building a bigger winery facility, anyone can do that, it is really about giving the team at Halter Ranch better flexibility in which to continue making awardwinning wines. The new winery has four self-contained, temperaturecontrolled rooms for barrel-aging and case storage, and about 16,000 square feet of underground caves to provide optimal barrel storage conditions, which are naturally cooled. The winery has a computerized tank monitoring system which enables Sass to regulate fermenta-

tion tank temperatures from his desktop or even his cell phone. Halter Ranch produces 100 percent estate-grown wines, specializing in Bordeaux and Rhne varieties grown on 57 separate vineyard blocks, delineated primarily by soil types ranging from calcareous clay to clay loam with shale and sandstone deposits. Halter Ranchs proprietary blend, Ancestor, is typically a Bordeaux-style Estate Reserve, which can develop beautifully in the bottle for a decade or more. Our 2007 Ancestor and 2008 Cabernet Sauvignon have just been released, says Wyss. In addition we have a very small amount of 2008 Malbec available in the tasting room now. This is an unusual variety for our area and we feel it is one of the most successful varieties we produce at Halter Ranch, she adds. Though Cabernet is king here, you will also find Syrah, Viognier, Ros, Sauvignon Blanc, Zinfandel and Tempranillo. In addition to their wines, they offer Halter Ranch logo apparel and locally produced olive oils. The tasting room also has a few selected deli items, including cheeses, meats, olives, nuts and non-alcoholic beverages so everyone can relax and picnic in the garden surrounding the tasting room, soaking up the quiet beauty of the ranch. And thats one of the draws to visiting Halter Ranch; there is quite a bit of solitude here as it is not located on a busy highway. Stop by and see what Halter Ranch is up to. The Heart of Paso Robles Wine Country

When you drive along Highway 46 West in Paso Robles it is hard to miss the large heart on the hillside. The perfect shape of a heart is a natural oak-tree filled depression that serves as a landmark on Niner Wine Estates 139-acre Heart Hill Vineyard. With the beautiful setting, it is here that the Niners decided to build their state of the art winery and gorgeous stone hospitality center. Using grapes from both their eastside Bootjack Ranch and westside Heart Hill Vineyard, Niner Wine Estate produces 100% estate wine. The Niners vision was to produce the best wine they could from grapes they grew, using the best of traditional winemaking methods and cutting-edge technologies. Making that vision a reality, is winemaker Amanda Cramer. Amanda oversees all winemaking operations and creates balanced, elegant, food-friendly wines. The hospitality center is open daily, offering visitors a chance to gain a little wine education as they taste through the wine offerings. Varietal wines include Sauvignon Blanc, Sangiovese, Rosato, Barbera, Sangiovese, Syrah, Merlot, Cabernet Sauvignon, Petite Sirah; red blends include a Sangiovese-based blend called Super Paso, a no-rules blend called Twisted Spur and a blend of traditional Bordeaux varieties called Fog Catcher. Each month, a Winemakers Choice wine is featured. Amanda selects the wine and a large board in the tasting area displays the details of the wine. From the sensory notes to the best pairing, everything you ever wanted to know about the wine is available. Special case pricing is also offered for the Winemakers Choice featured wine. Amanda shared the selection process, Each month, I sit down with the team, review our current inventory (and our secret stash) and taste through a selection of wines that could be offered to our customers and CLUB 9 members. I try to pick a wine that fits well with the season, but since all the wines are very versatile, the most important thing is that the choice is tasting great right now. Whether its our award-winning Cabernet, a library sampling of Fog Catcher or our nearly sold-out Petite Sirah, I want to offer our customers a wicked good wine at an equally good price. For the month of December, instead of picking just one wine, Amanda decided to select a vertical offering of Fog Catcher. Fog Catcher is the winerys flagship wine, a barrel-select blend of estategrown Bordeaux varietals. The featured vintages are 2004, 2005 and 2006. The three wines make a wonderful collection and a unique holiday gift. With all of the wines produced to be food friendly, the winery puts a great deal of effort into pairing the wines with food. Members of the wine club, named Club 9, receive a recipe paired with the wines in their shipment. According to Marketing Manager, Alli Addison, the club members are so into the recipes and pairings that they will often send their favorites to the winery. In fact, one CLUB 9 members recipe for Smoked Tomato Soup looked so good and made such an excellent pairing with the Sangiovese that the winery decided to feature Jeff Chrispells recipe in the November club shipment. As a long-time club member, Jeff not only gets bragging rights to have been the first club member to have his recipe featured, but also gets credit for a pairing competition. Members are asked to submit their recipes to pair with Niner wines and the staff will select their favorite. The best recipe will be included with the February shipment and the winning member will be named Niner Iron Chef for 2012 and will receive a $50 Nine Wine Estates gift card. CLUB 9 is a rapidly growing club that is a lot of fun, with three shipments per year, complimentary tasting for members and their guests, private tours, exclusive club events and member specials.

Club members also receive discounts on classes. Each month the winery offers a class as part of their Cooking Series. Cooking class sizes are kept very small, typically just 14 people, since it is a hands-on experience. During the class attendees not only learn about the food and wine, they also get to work in the large Niner commercial kitchen and enjoy the food they produce (with wine) at the end of the class. The cooking series offers a number of classes that are not only educational, but also very entertaining. For example on Saturday, December 10th, A Holiday Baking Class with Just Baked SLO will help people learn how to decorate sugar cookies, assemble three different types of crusts, poach fruit, caramelize sugar and make a reduction sauce. The menu includes Caramel Apple Cheesecake, Tart Noire and Poached Pear Toaster Pastry, each paired with a Niner wine. In January, the series continues with Elegant Winter Entertaining with Chef Nanette Smalley. Then in February, an all-time favorite, Farmers Market to Table with Chef Maegen Loring, is back. The class will actually head to the Templetons Farmers Market, select the best local produce available and then head back to the Niner kitchen to participate in a hands-on cooking class. March will feature Spring Brunch 101 with Chef Andre Averseng and in April, Italian Family Cooking with Chef Marco of Caf Roma. The list of events and class schedule continue to grow, including wine sensory seminars and other great educational experiences. Quality Craft Beers from Figueroa Mountain Brewing Co.


This family-owned brewery started by Jim and Jaime Dietenhofer of Los Olivos, has been life-long dream in the making. Harnessing their Bavarian heritage the Dietenhofers wanted to create a craft brewery in the Santa Ynez Valley that focused on creating the highest quality beer and help add to a growing hop culture in the Central Coast. Winemaker Profile: Talley Vineyards

Talley Vineyards is celebrating their 25th year of winemaking, and upon tasting any of their current releases it is clear there is experience and history in every bottle. This 25th Talley Vineyards harvest also marks the fifth harvest winemaker, Eric Johnson, has spent with the Talley family. While studying at Cal Poly, Eric was fortunate enough to obtain a part-time job in the tasting room at Talley Vineyards. Soon afterward, Eric was selected as an intern for the production facility and steadily climbed the necessary ladder a production assistant takes to become head winemaker. Erics tenure with Talley Vineyards is largely credited to his relationship with the Talley family. His winemaking style and vision are directly correlated with that of owner, Brian Talleys. Rarely will a winemaker describe the production process as easy, but with Erics stellar, albeit small, production team and the support of a family so passionate about their wines, the easy winemaking method makes perfect sense. Assistant winemaker, Nicole Pope, and Eric work seamlessly together and obviously have fun doing it. While the work might be fun and easy, there is plenty of it to be done. Talley Vineyards grows a total of 190 acres which includes mostly Chardonnay and Pinot Noir. In addition, the Talleys grow small lots of Riesling and Sauvignon Blanc in Edna Valley; and in Paso Robles, Syrah, Cabernet Sauvignon, Viogner, Petite Syrah and Grenache grow at the Hazel Talley Vineyard in the Templeton Gap. Each varietal comes into the winery in separate lots. The 70 different Pinot Noir lots come in 1.5 tons at a time and each ferments and ages separately until final blending. Eric, Nicole and their team of three, punchdown each lot gently until fermentation is complete. Talley Vineyards uses entirely native yeasts throughout the winery, meaning there are no additions of yeasts or bacterial inoculations to establish primary and secondary fermentations. The wine simply takes its own course allowing the true terroir of each lot to be apparent in the wine. The Chardonnay is fermented in French oak barrels and after the Pinot Noir has completed the primary fermentation in open top fermenters, it is moved to French oak barrels and joins the Chardonnay in a large barrel room. There is much discussion about the unique weather weve had this year and how it has affected the harvest on the Central Coast. Eric exclaims, I love this harvest! This is in reference to the timing in

which the fruit has come in and the ideal numbers the grapes have. Eric explains the 2011 vintage will produce elegant Pinot Noir with low alcohol and lovely complexity. Wine enthusiasts often wonder, what does the winemaker drink? The classic saying goes, it takes a lot of beer to make great wine, which always holds true. However, Eric is currently enjoying the latest releases of the Bishops Peak wines. These are tasty wines at everyday prices produced by Talley Vineyards. The 2010 Bishops Peak Pinot Noir is entirely from San Luis Obispo County and retails for only $20. Its a lovely wine with layers of raspberry and spice and is perfect for the holidays. Not to be missed at Talley Vineyards is the renowned Rincon Pinot Noir. The current vintage is 2009 and is available to taste on the reserve menu. During your visit to Arroyo Grande Valley, schedule a barrel sampling tour at Talley Vineyards. Guests are sure to come across Eric and Nicole working diligently and cheerfully on Talleys beautiful wines. One pretty reliable way to find out just how good the food at a local restaurant is, is to ask somebody in the restaurant business. Ask a bartender, a waiter, anyone in fact, what they think of Mamas meatballs in San Luis Obispo and their lips begin to quiver, their eyes roll towards the heavens, they sigh; that is how good Mamas Meatball is. Set in a small courtyard off of one of the towns main streets, in a place called the Old Creamery, Mamas Meatball is actually divided in two. On the right is the takeout where people line up to get their orders of meatballs and more. To the left, fronted by a huge-trunked tree and a water fountain, is the intimate restaurant with its mural of the Mediterranean across the back. Meatballs aside, the restaurant, under owner and chef Nicola Allegretta, offers a wide range of authentic Italian dishes, many of them now available in smaller sizes as well, a bow to the economy and his customers wishes. Among them are half a dozen soups, a long list of salads (including grilled salmon and a refreshing pear and gorgonzola), some wonderful antipasto choices, both hot and cold paninis (including, of course, one made with meatballs), more pasta dishes than there is space here to share (though the Ravioli di Pollo all Vodka homemade ravioli filled with chicken and served in a vodka sauce cannot go unmentioned). There is also a heady selection of meat and fish dishes as well as any number of traditional and specialty pizzas (now available in two sizes) and some far too-tempting desserts. Mamas Meatball currently has two locations. The original is in the Old Creamery plaza at 570 Higuera Street, San Luis Obispo, (805) 5440861. 2009 Alta Maria Chardonnay Perfectly Paired with Santa Barbara Roast Chicken
Chardonnay is one of the most versatile, and frequently consumed, wines in the world. Most people know Chardonnay to have apple or pear flavors with some level of oak and butter. But other Chardonnays, like those from Burgundy, France for instance, can be very different: lean and zippy, hints of minerality or even soft and elegant. It all depends on the growing conditions, terroir, the winemakers style and mother nature. 2009 Alta Maria Chardonnay, from viticulturist James Ontiveros and winemaker Paul Wilkins, makes a stand as a fresh, unique style of Chardonnay; one that really pairs well with food. The grapes naturally high acidity plus Pauls aging style of part neutral oak, part stainless steel makes the wine a perfect accent to a meal. Its distinct lemon/lime quality begs to be paired with a citrus-infused dish: roast chicken, risotto or even lemon cake! This Roast Chardonnay Chicken with Santa Barbara Herbs is a twist on a French classic dish using herbs de Provence. What we found in our garden in Santa Barbara County were rosemary, lemon thyme, basil and chives. And garlic, of course! Also, fennel is a bountiful crop here on the Central Coast, and you can usually substitute this for celery, as we did, instead of a traditional mirepoix (French base of onion, carrot and celery). Browning the chicken before roasting gives it a richer flavor than more simple roasts and the end result is a savory, delicious onepot meal that pairs perfectly with the subtle body and flavors of Alta Maria Chardonnay. Alta Marias tasting room is in the heart of Los Olivos, featuring their signature Chardonnay and Pinot Noir, with a few newcomers Sauvignon Blanc and Cabernet Sauvignon. Also available are Autonom Rhone varietals from Paul Wilkins and Native9 Pinot Noir from James Ontiveros. The pair met in college, following separate paths in the wine world, finally coming back together in a vineyard in Santa Maria to make Alta Maria Vineyards, reflecting their love of all things homespun and honest. ROAST CHARDONNAY CHICKEN WITH SANTA BARBARA HERBS


1 4-pound chicken 3 cups Alta Maria Chardonnay 1 cup olive oil, plus 4 tablespoons extra virgin olive oil, divided 8 cloves garlic: 6 whole, 2 diced 3 tablespoons chopped mixed fresh herbs (like lemon thyme, rosemary, basil, chives, marjoram) or 1 tablespoon mixed dried herbs 2 lemons: 1 sliced, 1 juiced 1/2 teaspoon coarsely ground black pepper Salt, to taste 1 small onion, chopped 4 carrots, chopped 1 fennel bulb, chopped 1 small green cabbage, cored and quartered In large bowl, combine the Chardonnay, 1 cup olive oil, diced garlic, herbs, lemon juice, pepper and salt. Place chicken in the mixture. Cover bowl with plastic wrap and refrigerate overnight or for 6 hours. Turn occasionally. Preheat oven to 450F. Heat remaining olive oil in a Dutch oven over mediumhigh heat. Add the onions, carrots, fennel and garlic cloves and cook, stirring occasionally, for 10 minutes. When the vegetables are caramelized, spoon them along the sides of the pan. Remove chicken from marinade and add to the middle of the pan. Sear each side until slightly brown, about 3 minutes per side. Arrange the quartered cabbage around the sides of the chicken and pour the marinade into the pan over the chicken and vegetables. Cover the pan with a lid and roast in the oven for 60-70 minutes, until the chicken is done (meat is cooked through when cut, leg separates easily from the body, or 170 degrees on meat thermometer). Remove lid and let it rest at room temperature 10 minutes.

Proprietor of Clayhouse Wines, Rick Middleton, is the fourth generation of an agricultural business family. His passion for the exclusive, small production wineries in the Napa Valley produced his idea for an artisan winery on the Central Coast. A Little Nightmare Before Christmas at Vale Fine Art
Vale Fine Art is proud to present A Little Nightmare Before Christmas, a two-man show featuring the extraordinary work of Neo Gothic pop-surrealists, Edward Walton Wilcox and Lee Harvey Roswell. The exhibition will be on view from December 13 through January 13, 2012. An opening reception for the artists will be at the gallery on Tuesday, December 13 from 6 to 9 p.m. The work of Edward Walton Wilcox exposes his darkest dreaming; hand-carved Gothic altarpieces soar twelve feet high while young maidens in nightgowns and child-size skeletons are captured in landscapes of blazing windmills. Hauntingly beautiful, the work is overt in its reference to Gothic convention, in both content and physical facture. Wilcox's use of primitive materials, such as wood, glass, rabbit skin glues, Italian pitch and gesso lend an old world authenticity to the crockets, tracery and other conventions of gothic carpentry that caricaturize the multi-disciplined art of Edward Walton Wilcox. Wilcoxs work has been described by the LA Times as Southern California Noir, while Art and Living states, Edward Walton Wilcoxs work exhibits an eerie quality that is hard to keep your eyes off of the suggestions he makes are often unsettling. His images are dark, yes, but its a darkness that Wilcox suggests should be more closely examined. Wilcox explains, I am fascinated with the fine line between beauty and repulsion as I continue to navigate the dangerous reaches of the unconscious whereby a romance troubled by nightmares may be further explored. Lee Harvey Roswell is a self-taught artist from Freefall, New York, whose work is noted for its blend of angst and humor. Themes of death and entropy, tribulation and futility run amok in his distinctly surreal, often-slapstick/ often-nightmarish world. The result is at once mocking and melancholic. Says Lee of his work, Im interested in exactly this: creating narratives involving the fantastic images there to be culled forth from those fertile depths of the creative, neurotic-like mind. Concrete objects in mad motion, reflecting all the seductive, terrifying elements of existence. The inarguable forerunner of the senses is the eye. We are primarily an optically reliant species. So, as pictorial illusionists transforming nothing into artifacts of spiritual sustenance, Im holding the potential painter up, not just as an admirable tradesman, but much, much more. He resides as a highpriest over that all-devouring human reality, a conducting channel through which nothing triumphantly becomes something. Lee now lives and works in San Francisco and Edward Walton Wilcox in Los Angeles and Paso Robles, CA. Both artists work have been shown, collected and published internationally.

The Mondo brothers, Doug and Mitch, have owned a 132-acre piece of property on the Westside of Paso Robles for almost 20 years. The brothers made the official move to the area about five years ago. Since then, the property has become home to a gorgeous tasting room, bed and breakfast, and event facility. The Mondo brothers are all about enjoying great wines with great friends. A Twilight Masquerade
New Years Eve Event at Robert Hall Winery
Robert Hall Winery is the perfect place to ring in the New Year. Each year, Robert Hall Winery plans an exciting event to help start the year off with a bang. This New Years Eve the winery is hosting A Twilight Masquerade. Attendees are encouraged to come in formal attire and masks will be available at the door or, those who are really into the evenings theme, this is an evening to dress in a masquerade costume. Knowing that some people like to have an elegant evening with a gourmet meal and live music, while others really want to focus on the party, Robert Hall is offering two different event options the Imperial Ticket and the Majestic Ticket. The Imperial Ticket is the deluxe offering for the perfect, elegant evening. The New Years Eve celebration begins with a cocktail hour at 7 p.m. in the cavern followed by dinner in the Meritage Room. Two Cooks catering have put together a spectacular menu including gourmet items such as tenderloin of beef roulade, stuffed piquillo peppers, lobster bisque, seared opah, braised short ribs and glazed chocolate mousse terrine. The menu has been paired with Robert Halls awardwinning wines. The evening continues with live music and dancing. Monarch Butterflies Flock to Pismo Beach


Each year thousands of vibrant orange and black Monarch butterflies flock to Pismo Beach, seeking shelter from the freezing northern winters. From late October to February, the butterflies cluster in the limbs of a grove of Eucalyptus trees at Pismo State Beach. The grove is easily accessible. It is located on State Highway 1 at the south boundary of the city limits of Pismo Beach. Spectators come from all over the Central Coast and throughout the state to view the Monarchs. Visitors are greeted by knowledgeable and wellinformed volunteer docents offering daily talks and information. The butterflies form dense clusters with each one hanging with its wing down over the one below it to form a shingle effect. This provides shelter from the rain and warmth for the group. The weight of the cluster help keeps it from whipping in the wind and dislodging the butterflies. This colony is one of the largest in the nation, hosting an average of 25,000 butterflies over the last five years. During the season the Docent Trailer opens at 10 a.m. and closes at 4 p.m. daily. Over the years the Remmengas have built their business on strong relationship with some of the best growers throughout the Central Coast. We only source from some of the top vineyards from Santa Ynez Valley to Paso Robles, said Scott. These include Bien Nacido Vineyard in Santa Maria Valley, French Camp Vineyard in Paso Robles and Jack McGinnely Vineyard in Santa Barbara County. Their dedication to obtaining the best fruit for their wines has earned Alapay a consistency in high quality, which has resulted in a steady stream of awards including a gold for both their 2008 Rebekah and 2009 Zinfandel, a double gold Best of Class for their 2009 Lagrein, and a Sweepstakes Award for Best Dessert Wine in the Competition for their 2009 Late Harvest Sauvignon Blanc at the 2011 San Francisco Chronicle Wine Competition. Alapays award-winning wines are sold exclusively through their wine club and at the tasting room, and due to their limited production they often sell out quickly. Zaca Mesa Winery Hires New Assistant Winemaker


Kristin Bryden joins the team after working with Lockwood, Wild Horse Wineries
Just in time for harvest, Zaca Mesa Winery & Vineyard appointed Kristin Bryden to the post of Assistant Winemaker. Kristin began her employment with the award-winning estate winery on August 15. We are delighted to have someone of Kristins caliber on our team, said Zaca Mesa President and CEO, Brook Williams. She has just the right blend of practical experience and creativity in the cellar that complements our wines. Originally from Redding, California, Kristin is a graduate of California Polytechnic State University, San Luis Obispo where she studied Food Science and gained an interest in winemaking. Starting her professional career at Wild Horse Winery & Vineyards in Templeton, , Kristin worked her way from a production technician to an enologist and eventually to assistant winemaker in 2006. In that position, she managed the lab and assisted in the planning and execution of all winemaking activities, with an emphasis on quality control. Kristin also benefited from the Wild Horse Vineyards diverse collection of winegrape varieties, allowing her to explore their many profiles and associated styles. From Wild Horse, Kristin moved on to Monterey Countys Lockwood Vineyard in 2007. As associate winemaker, she oversaw all winery operations from the Lockwood facilities built in the center of the estate vineyard. She cites her ability to witness the vines and grapes change throughout the year leading up to harvest as a key high point at Lockwood. This familiarity with estate programs and a thorough knowledge of the vineyard calendar made Kristin a key candidate for Assistant Winemaker at Zaca Mesa Winery & Vineyard, where ensuring that superior quality carries through from the vineyard to the bottle is of paramount importance. Kristins background working with estate programs was a big draw, said Zaca Mesa Winemaker, Eric Mohseni. With an estate vineyard, you are limited to what your vineyard gives you and having that mindset makes it a valuable tool. Her cellar and lab experience works with our facility and also brings us new ideas. Her enthusiasm, keen palate and sense of adventure were added bonuses! We share a similar, Old World approach to winemaking, and I think we are going to make a great wine making team. Stolpman Vineyards Less is More
Stolpman Vineyards winemaker Sashi Moorman believes the most beautiful wines in the world often come from the smallest crops. In vineyards with less fruit per plant, each vine is able to focus its energy on achieving optimal ripeness in every grape. These perfect grapes create a wine of precise balance and rich concentration. In pursuit of Sashis vision of less is more, vineyard manager Ruben Solorzano and the Stolpman team meticulously control each years crop. In order to reduce the quantity of fruit in hopes of improving quality, the Stolpman team decided to stop irrigating the vineyard back in 2001. Since then, the vines have slowly adjusted to the stress of living off of rainfall and fog. The roots dug deeper into the limestone subsoil in search of water, adding another layer of minerality to the flavor of the wines. In the years following 2001, Sashi began to see further benefits from withholding water. The vines at Stolpman began to grow only a few small clusters of grapes each year. The vines have a memory and knew they would be in for a parched fight for survival each summer. Because of this, the vines limited their workloads, gearing up to battle the elements. As the crop levels began to shrink from 2.5 tons per acre to 1.5 tons per acre, Sashi grew more and more excited about the quality of his wines. Once fermented in the winery, each ton of fruit produced about 48 cases of wine, 20% less than previous vintages. Because of the lack of moisture, the grapes were undiluted and possessed higher percent-

ages of skin, pulp and seed. These elements gave the wines enhanced richness and depth in the mouth, and more texture in the finish. Each year, as the yields decreased, the wines became more vibrantly complex and sophisticated. As Stolpman unveiled its much anticipated 2009 vintage this October, the Stolpman team was proud to once again show off unprecedented quality. Critics from the Wine Advocate and International Wine Cellar chimed in with 90 to 95 point scores on all of the 2009 Stolpman reds. Has the vineyard finally reached its potential? According to Sashi, thanks to Mother Nature, the best is yet to come. The 2011 harvest that ended on November 3, will likely be the climax of his less is more pursuit. Because of an April cold spike that froze some of the already Spartan clusters, yields averaged barely 1 ton per acre. The result is fruit possessing flavors bolder than ever before. The obvious downside: theres less wine available and Pete Stolpman says the rapidly expanding wine club will have to be capped before the release of the 2011 vintage. Its only natural that only a few will be able to test Sashis law of less is more.

With a tagline of Blending Wine With Philanthropy you know theres something different about Carivints Winery in Solvang. The winerys name comes from the Latin word Caritas and the French word Vin. Caritas means charity/philanthropy, and Vin means wine, of course. Blend the two together and you get Carivints. The winerys labels are all beautiful paintings of rescued animals and other wildlife and contain stories about each animal on the back label. Profits from sales as well as fund-raising events are donated to various groups such as

Theyve raised thousands of dollars and continue to push forward with programs this fall and winter with special three-packs of horse and pit bull labeled wines. But dont let the beautiful labels and charitable aspects fool you; the wine is definitely the focus here. They are a bit different in that they aim to produce great wine without regard to recurring varietals i.e. they may not produce 100% Syrah every year, but whatever blends they come up with will always be top-notch. For instance, current selections include a gold medal-winning blend of Barbera and Ros of Tempranillo that has aromas of strawberry jolly rancher, pine/cedar, plum and bubble gum, with just a touch of black pepper. The sleek iMac used as their cash register is the first item youll notice in this modern and welcoming tasting room. They diverge from traditional tasting rooms in everything from the unpretentious wine-speak to the activities: Theres a movie night, live music on weekends, board and card games, and they always have dog treats and a kids area. New Holiday Wine About Added to Julefest Celebration


Californias Little Denmark will sparkle with even more lights and festivities during Solvangs annual Julefest (pronounced Yule-Fest) Celebration this Centennial year. The 2011 theme is Lighting Up 100 Years and will feature two new events the Solvang Holiday Wine About on December 17 and 18, and the 100 Trees for 100 Years Display from December 1-31. As is tradition, downtown Solvang will twinkle with thousands of sparkling white lights and there will be many open houses at local retailers, special concerts and more taking place throughout the season with events continually being updated at www.SolvangUSA.com. All events are open to the public with free admission (excluding Solvang Holiday Wine About). Julefest is coordinated by the Solvang Conference & Visitors Bureau with major support from the Santa Ynez Valley Hotel Association, Valley Hardware & Garden Center and Z Folio Gallery. And while the close proximity to both downtown and the beach is alluring, what really sets Corks apart is their upper-tier tasting list.

Walk through the 450-year-old Indian door and you are offered your choice of five different wine flights, each boasting a rotating list of 90-plus rated wines from the best regional and international vineyards. Even in a wine county as prestigious as Santa Barbara, no other tasting room can boast such an offering. (Their top tier, the Diamond Flight, sports a couple of $100 bottles!) And for the taster in your group that has grown tired of the wine trail, Corks & Crowns breaks

the mold by offering a beer flight a tasting of four brews from across the country, hand-selected to pair together. For the more adventurous, Morello chooses a different international flight each month, often from a region less familiar to the casual taster. Aprils Portuguese flight was introduced with a spread of sausages, cheese and bean gazpacho to pair with a pouring of earthy reds. Julys Tuscan flight was paired with prosciutto with Italian musk melon and lemon verbena, fritto misto with sweet tomatoes and garlic aioli and brasato al angiovese Grosso with chamomile and polenta, all prepared by a local chef. Though they are just establishing their name in Santa Barbara, Corks & Crowns has set the standard for high-tier tasting in a comfortable, casual atmosphere. Their game?
