ukah spell it any
way youd like, there is no one
right way to spell a Hebrew
word that contains a
sound not found in Eng-
lish is the Jewish Festi-
val of Lights. Many
mistakenly think that it
is the Jewish Christmas,
but that is not the case;
other than occurring at
the same time of the
year and both involving
gift giving these two
holidays have nothing
to do with each other. So what
is Hanukah? The word
Hanukah actually translates as
dedication and it recalls the
miraculous military victory of
the pious Macabees over the
Hellenists that were restricting
Jewish life in ancient Israel.
When the Macabees won they
re-dedicated the Temple in
Jerusalem to the service of God,
hence the name of the holiday.
There is a legend that as the
Macabees prepared the Temple
they only found one cruise of oil
fit to be used to light the Meno-
rah for one day, but that they lit
it anyway and it miraculously
burned for eight days until more
oil was available for the Meno-
rah. This is why
Hanukah is known as
the Festival of Lights
and is commemorated
with the lighting of a
Hanukiyah, a nine-
branched candelabra to
commemorate the eight-
day holiday.
The annual obser-
vance of Hanukah re-
minds us to remain
dedicated and true to God. The
light of the Hanukah candles re-
minds us that miracles can hap-

is clearly upon us. And each
year it seems to come earlier
and earlier. This year,
a New York City
radio station was
playing 24/7 Christ-
mas music by the end
of November. Those
who shopped in malls
were hearing the
sounds of Christmas
long before the meals
were being made for
Thanksgiving.
What is Christmas? It
must mean something more
than just a consumer free-for-
all that engulfs our culture for
the last month of every year.
But how do we untangle that
which is the core of Christmas
and that which has been ap-
pended to it (such as Santa
Claus and reindeer) as the
years have progressed?
Obviously, the best place
to turn to is the source.
Though the celebration of De-
cember 25th was several hun-
dred years in the making, the
focus of the celebration has
very clear source material. In
the pages of scripture, we see
what the events of the first
Christmas were and
why we still celebrate
that night thousands
of years later.
Most of us are aware
of the story of Christ-
mas. The baby Jesus is
born in Bethlehem to
a young, newly mar-
ried Jewish couple -
Joseph and Mary. But
this is no normal
birth. Mary, a virgin, is told by
an angel that the baby con-
ceived in her is from the Holy
Spirit (Matthew 1:20). This

Socrates Caf, an ongoing se-
ries of community discussions
focusing on timely topics of
general interest, will be held
on Friday, December 16, at
7:30 pm, in the Carnevale
Center of St. Marys Parish, 10
Lenox Avenue, Pompton
Lakes. The topics to be dis-
cussed will be chosen by those
in attendance. At the last
meeting, two ideas were pro-
posed for discussion this
month. One is Why do peo-
ple seem reluctant to report
child abuse? and the other is
Why cant we get credit card
interest rates down? If the ma-
jority of attendees would
rather focus on another sub-
ject, that topic will be dis-
cussed. The only rules are that
all views are welcome and the
discussions must be open,
calm, and respectful. The aim
is to explore various perspec-
tives of important and interest-
ing ideas, guided by a
moderator. The objective is
not necessarily to reach a con-
clusion about a topic, rather to
examine the many facets of
most complex issues. The pub-
lic is invited, both to partici-
pate and to listen.

two things you leave behind
when you die?
What legacy will you leave
behind? What will people say
about you at your funeral? In
conversation on this subject, I
suggest that people take their
internet Smart Phone into the
cemetery to look-up the names
on some headstones to see what,
if anything, they did in their life
that was worth recording and
finding on a Google Search. In
virtually all of the cases, the
search would yield no results
other than an obituary, perhaps.
What would yours say? A little
intimidated by the question?
Why not find out for yourself by
searching your name on Google
or any browser right now and
see what comes up. If nothing
appears, fear not, for you arent
dead yet and theres still time to
do or accomplish something
that could add to or be a part of
your legacy. Can you think of
any ideas, activities, strategies or
opportunities that could be
note-worthy? Perhaps you
could organize a fundraiser to
help find a cure for a dreaded
disease or help feed the hungry
or get sponsorship for a cycle or
walkathon for the same reasons.
You could be an organ donor or
bone-marrow donor, even sim-
ply a plasma or blood donor (or
organize a Blood Drive in your
town) or even something less
invasive like becoming a hospi-
tal volunteer; the list of oppor-
tunities is remarkable!
There are basically two
kinds of charitable donors, those
who give of their time and those
who give of their money and

s 2011 winds down
theres less uncer-
tainty about the
short-term outlook for tax law
than we had at the end of last
year. With this temporary
clarity comes the opportunity
to create a sound tax-saving
plan and the time to put
your plan into action. Here
are several strategies to con-
sider.
Reduce AGI to qualify for
tax breaks
Reducing your adjusted
gross income could increase
eligibility for income-limited
deductions and credits.
The standard deduction
for 2011 is $11,600 when
youre married filing jointly
($5,800 when youre single).
When your itemized deduc-
tions; that is, expenses you
pay for medical care, mortgage
interest, taxes, charitable con-
tributions, casualty losses, and
miscellaneous deductions, are
close to that amount, advance
payments could save you tax
dollars. For example, you can
choose to make your final esti-
mated state income tax pay-
ment in December instead of
January. Since itemized de-
ductions are no longer limited
by your income, timing the
payment of expenses might be
more beneficial than you ex-
pect.
Theres another reason to
double-check deductions:
your alternative minimum tax
(AMT) exposure. Certain ex-
penses, including state taxes
and medical costs, are reduced
or eliminated under AMT
rules. The AMT calculation
also eliminates the standard
deduction. In some cases, you
may save money if you claim
itemized deductions even if
they total less than your stan-
dard deduction.
Reap tax benefits with re-
tirement savings
When it comes to retire-
ment saving, rule number one
is to contribute the maximum
amount allowed every year.
For 2011, the IRA contribu-
tion limit is $5,000, and those
50 and older can contribute
$6,000. Participants in a
401(k) plan can contribute as
much as $16,500 ($22,000 if
50 or older).
Did you know you can
make IRA contributions for
your spouse when youre
working and your spouse is
not? For 2011, the maximum
spousal IRA contribution is
the lesser of $5,000 or your
combined earned income. You
can add an additional $1,000
when your spouse is over age
50.
If youre self-employed,
establishing a retirement plan
such as a SEP or a SIMPLE
means a current-year tax de-
duction in addition to tax-de-
ferred growth. For 2011, you
can contribute 25% of your
salary to a SEP plan, up to a
maximum contribution of
$49,000. The maximum SIM-
PLE contribution is $11,500,
plus an additional $2,500 as a
catch-up contribution if
youre over age 50. A federal
tax credit may also be avail-
able up to $500 for each of
the first three years of your
new plan. Remember, credits
reduce your tax bill dollar for
dollar.
Review support provided for
relatives
While planning to maxi-
mize deductions, remember to
take into account the finan-
cial support you provide for
relatives. Potential tax breaks
include dependency exemp-
tions, head-of-household fil-
ing status, medical
deductions, and the depend-
ent care tax credit. Generally,
youll need to provide over
half of your relatives living ex-
penses.

innelon dentist Dr.
Peter Brusco recently
ran a food drive for the
Bethel Ranch. Because of the
generous donations of many of
his patients, he was able to
provide Bethel Ranch founder,
Reverend William Stelpstra,
with not only an abundance of
food and dental products but
also a check for $500. Bethel
Ranch enables homeless men
to live in a safe, clean environ-
ment. They receive daily assis-
tance with basic needs, such as
laundry, meals and supervision.

or some people, the pain
from sciatica can be se-
vere or debilitating. For
others, the pain might be infre-
quent or irritating. Either way,
sciatica affects a large percent-
age of todays population and if
not managed properly can di-
minish ones quality of life.
Many believe that sciatica is the
result of a particular event or
trauma, however, sciatica is
more commonly a result of gen-
eral wear and tear on the struc-
tures of the lower spine.
Sciatica will usually only
affect one side of the lower
body. The pain that results from
sciatica often radiates from the
lower back into the back of the
thigh (hamstring) and down
through the leg (calf) and po-
tentially into the foot and toes
Sciatica may not only present as
pain, but may be accompanied
by tingling and/or numbness de-
pending on the amount of pres-
sure or irritation on the nerve
roots that lead to the sciatic
nerve. This irritation of the
nerve root is called radiculopa-
thy and is responsible for the
symptoms we commonly call
sciatica. The large sciatic nerve
is formed by individual nerve
roots exiting out from the spine
in the lower back and merging
together into one common
nerve. As the sciatic nerve de-
scends, branches from the nerve
extend through the buttocks
and down the back of each leg
and into the ankle and foot. De-
pending on which nerve root is
affected or at which point the
sciatic nerve is compromised,
one or all of the following symp-
toms may occur:
Constant moderate to severe
lower back pain
Pain in the buttocks or leg that
worsens when sitting, sneezing,
and/or coughing.
Tightness in the buttocks or
hamstring that is not relieved
with stretching
Burning or tingling down the
leg
Weakness, numbness or diffi-
culty moving leg, foot, or toes
Lower back pain and/or leg
pain that is relieved with posi-
tion.
Inability to straighten up due
to pain.
The most common cause
of sciatica are bulging and her-
niated discs in the spine press-
ing against the nerve roots that
lead to the sciatic nerve. Other
less common conditions that
causes sciatica are spinal steno-
sis (narrowing of the spinal
canal), bone spurs caused by
arthritis, and piriformis syn-
drome (spasms of the piriformis
muscle). In all these conditions,

Matthew has also had the thrill of studying with world-
renowned therapists Brian Mulligan and David Butler, further
expanding his clinical skills into more diverse orthopedic and
nerve injury treatments. Not to be missed, Matthew also
trained in the McKenzie Diagnosis and treatment of the spine.
Matthew believes the combination of this training and
education in the Australian, New Zealand and American
treatment strategies have allowed him to provide broader
range of treatment options thereby helping more patients.
Matthew has been a Director of Physical Therapy for 8

miracle happened to fulfill the

will give birth to a son, and
they will call him Immanuel.
The place of His birth is no co-
incidence either. The prophets
were clear that the promised
Messiah would be born in
Bethlehem (Micah 5:2).
Joseph and Mary, after a trip to
Egypt to escape the anger of
Herod, make their residence in
Nazareth by the Sea of Galilee
- again, a fulfillment of scrip-
ture (Isaiah 9:1-2).
So whats the big deal?
Apart from the miracle of a
virgin having a son, what is so
noteworthy to commemorate
Christmas over two thousand
years later? This is where the
scriptures come alive with ver-
ification for the joy that has
been celebrated all these years.
There is little debate over
the humanity of Jesus. Most
would agree that at the very
least, He was the worlds great-
est teacher. We see in Him a
lucidity of thought and moral-
ity that is present in no other
person. As we look at Him in
the Gospels (Matthew, Mark,
Luke and John) it is difficult
not to walk away with a deep
sense that He was not just a
good man, but a perfect
human.
But scripture does not
leave us there. It goes on to de-
scribe Jesus as not only a perfect
human, but also as God. This is
where we stumble in our mod-
ern times, but scripture is clear.
In Colossians 1:19, we read,
For God was pleased to have
all His fullness dwell in Jesus.
In Colossians 2:9 God tells us
that In Jesus, all the fullness of
the Deity lives in bodily form.
Jesus was not just a fully perfect
human, He was fully perfect
God. This is not just the writ-
ings of His followers. Jesus
claimed to be God (John
10:30) and asserted the attrib-
utes of God (Mark 2:5-12). In-
terestingly, this was foretold in
the scriptures in Isaiah 9:6.
Note in this familiar verse that
a child is born who will be
called Mighty God and Ever-
lasting Father. Both these
terms are used elsewhere in Isa-
iah as a reference to God (Isa-
iah 10:20-21 and 64:8). So, in
this verse we see God predict-
ing through Isaiah that the
Messiah would be both God
and man.
But again, we are left with
the question, So what. If we
take the scriptures at face value
we can clearly see that Jesus was
both God and man. What is
the celebration all about? In
order to understand that, we
must go back to Job.
Job 9:33-35 says in refer-
ence to his relationship with
God, If only there were some-
one to arbitrate between us, to
lay his hand upon us both,
someone to remove Gods rod
from me, so that His terror
would frighten me no more.
Then I would speak up without
fear of Him, but as it now
stands with me, I cannot.
Scripture teaches that our im-
perfections separate us from a
perfect God so that we are all
in Jobs dilemma - a desire to be
in relationship with God but
with no basis for that relation-
ship. That may seem appalling
to many but we are comforted
that God is also appalled by our
circumstances. In Isaiah 59:16,
God says that He saw that
there was no one, He was ap-
palled that there was no one to
intervene; so His own arm
worked salvation for Him and
His own righteousness sus-
tained Him. God was not sat-
isfied in leaving us in a hopeless
relationship. So He took on
humanity in the person of
Jesus. On that first Christmas
day in a manger, the desire of
Job was finally realized. Jesus,
who could represent humans
(because He was fully human)
and God (because He was fully
God), was born to become the
perfect mediator. He lived the
perfect life that we cannot live
and He took on the punish-
ment that we deserved (we cel-
ebrate that on Good Friday). It
is through Jesus that we can re-
ceive righteousness (or a right
standing) before God.
How does that happen?
The same way that Abraham
received righteousness. Genesis
15:6 says that Abraham be-
lieved and it was credited to
him as righteousness. There is
nothing we can do that causes
God to owe us the righteous-
ness from Jesus. Instead, we
have to trust in Jesus - believe
He is who He said He is and
that what He did is sufficient to
cover our imperfections. We
are then able to be in relation-
ship with God - and not just for
today but for eternity.
Thats good news!! Thats
worth celebrating!! Thats what
Christmas is really all about!!

onventional wisdom
states that there are
four main unde lying
causes for canine allergy symp-
toms and effective dog allergy
treatment has been developed
for them. As all of those rea-
sons produce common symp-
toms, various tests may be
necessary to determine which
allergen is provoking a reac-
tion. Standard methods of
treatment are successful in
controlling most cases. Some
especially severe conditions
may require the use of steroids
or immunotherapy.
The two most common
causes of allergic reactions are
atopic, or inhalants,
mainly dust mites, pollen,
mold and mildew, and aller-
gens that are present in flea
saliva. The symptoms of an al-
lergy are most commonly
caused from inhaling an anti-
gen, or a substance which
causes the production of anti-
bodies. Studies show that in
excess of 40 percent of canines
react to the offending sub-
stances in flea bites.
Reasons that more rarely
produce responses are aller-
gies to food or of the skin. The
foods that are most likely to
cause symptoms are the same
foods that are the most com-
mon ingredients in commer-
cial food recipes. Certain
fungal infections, that is,
mange or ringworm, should be
ruled out if they are suspected.
Skin conditions that originate
from exposure to noxious sub-
stances are irritant or
allergic contact dermatitis.
These rare conditions are re-
sponses to irritating chemicals
or other antigens.
Complicating a specific
diagnosis as to exactly what
antigens are to blame, is the
fact that the same symptoms,
itching and skin problems,
characterize the different types
of disorders. Vomiting and di-
arrhea may indicate a food al-
lergy and continuing ear
problems or increased bowel
movements are other possible
signs. A food trial, in which
the pet is placed on a novel
food diet for twelve weeks, is
the method used to isolate the
food responsible.
Avoidance of the allergen
is a common strategy to reduce
symptoms for food, flea, atopic
and skin problems. By remov-
ing and then reintroducing
suspected allergens one at a
time, one may discover the
cause. Restricting ones pet to a
clean, uncarpeted room and
keeping them away from possi-
ble allergens is called an exclu-
sion trial. Slowly introducing
possible causes, including rub-
bing a substance such as grass
on the paw, will help to iden-
tify it.
The first step one can
take is to add Omega-3 fatty
acids to their pets
diet. This is fish or
flax oil and they
assist in reducing
the effects of hista-
mines, which are
responsible for the
itching and skin
conditions. If the
fatty acids do not
take effect in a few weeks, an-
tihistamine drugs, originally
designed for humans, can also
work for canines.
Topical therapy, which
involves treating the pets skin
with anti itch ointments,
shampoos, rinses or sprays
often have good results, but
these offer temporary relief.
Shampoos containing hydro-
cortisone are also used. Biotin,
a B vitamin, has also shown
positive results for some pets.
When none of the above
methods are adequate
for dog allergies treatment,
steroids produce good results,
but are not recommended for
long term use, because im-
mune or endocrine system
problems may develop over
time. Immunotherapy, involv-
ing allergy skin testing and a
series of injections, is a highly
successful approach for most
animals. This therapy takes a
dedicated pet owner, but re-
sults in significantly reduced
reactions to allergens.

pressed or pinched the nerve
becomes very irritated and the
process of inflammation begins.
Inflammation will create
the swelling and soreness
around the nerve and may ulti-
mately create painful secondary
muscle spasms and tightness in
the lower back.
For the most part, sciatica
is treated effectively with con-
servative care which now in-
cludes lumbar decompression
therapy (an innovative device
designed specifically to reduce
nerve irritation in the lumbar
spine). Now with the introduc-
tion of these innovative rehabil-
itative devices, surgical
interventions for conditions
that lead to sciatica are signifi-
cantly less. Also, advanced diag-
nostic imaging such as MRI is
often used to help identify the
cause of symptoms of sciatica.
Once the cause is identified, an
appropriate treatment plan can
be recommended by a health
care provider.
It is important for a person
to seek the appropriate profes-
sional advice regarding lower
back pain and associated pain,
numbness, and tingling into the
lower extremity. A chiropractor
is a professional that is specifi-
cally trained to identify condi-
tions that may cause back pain
and sciatica. Once the cause of
pain is identified, an individual-
ized treatment program is uti-
lized, to reduce nerve pressure,
restore proper spinal mechanics,
and enhance the function of the
nervous system.

eurodevelopmental
treatment (NDT) is
an internationally uti-
lized and recognized therapy for
children with motor impair-
ments practiced by experienced
physical therapists, occupa-
tional therapists and speech lan-
guage therapists. The concept of
NDT was first developed by Dr.
and Mrs. Berta Bobath in the
1940s and has been used by
therapists worldwide, continu-
ally evolving as new informa-
tion on the movement sciences
occur. NDT trained therapists
work collaboratively with chil-
dren, family and doctors to de-
velop treatment programs based
on principles of neurology and
physiology.
Neurodevel opmental
treatment is a hands on ap-
proach used to work with chil-
dren who have an insult to the
central nervous system. This
insult creates difficulty with pos-
ture and movement resulting in
functional activity limitations.
Children with central nervous
disorders typically have a very
limited repertoire of movement
or poverty of movement and
can only move in a very limited
way. The aim of treatment is to
assist the child in developing
new movement strategies while
limiting abnormal postures so
that he or she is able to adapt to
the environment by improving
the efficiency and normalcy of
his or her movements. A great
emphasis is placed on therapeu-
tic handling which focuses on
making desired movements
more prevalent and preventing
undesirable movements. Unde-
sirable movements can produce
secondary problems that can
impede progress toward func-
tional goals. The ultimate goal
of NDT treatment is to optimize
function, minimize impairment
and prevent disability. This in-
crease in function will improve
the childs independence and
better their quality of life.
Individuals who have min-
imal to severe motor difficulty
can greatly benefit from this
type of treatment which in-
cludes:
Neuromuscular diagnoses:
Muscular dystrophy, cerebral
palsy, spinal muscular atrophy,
hypotonia.
Developmental diagnoses:
Autism/ Pervasive Develop-
mental Disorder, Sensory inte-
gration dysfunction, poor
coordination, difficulty keeping
up with age level peers, delayed
walking, crawling, sitting etc.,
poor posture and poor gross
motor skills. (Jumping, hopping,
throwing, and skipping)
Syndromes and Metabolic
Disorders: Downs syndrome,
Retts syndrome, Prader Willi
Syndrome, Williams Syn-
drome.
Prematurity: Infants who are
premature may present with
muscle stiffness, arching, delay
of developmental milestones
and difficulty soothing.
Our focus at Kids Therapy
Center is to identify the
strengths and abilities of each
child related to the specific
functional goal or skill that has
been identified. The impair-
ments a child may have in rela-
tion to that goal are assessed
using task analysis to identify
the system impairments imped-
ing the child from achieving the
goal. Treatment strategies are
employed each session that
work toward achievement of
that specific goal. Our goals can
range from independence in
rolling over to retrieve a toy to
independence in bike riding.
We consider each of our chil-
dren to be unique and our treat-
ment sessions are tailored to the
individual needs of the child
using the NDT framework.

olutions and plans, the
New Year ushers in chilly
temperatures in much of the
country. A heating system
that is working well is essen-
tial to the comfort and health
of homeowners.
If you havent done so,
its a good idea to have the
heating system inspected to
ensure everything is working
smoothly. While this is best
handled prior to winters ar-
rival, in the midst of the hol-
iday hustle, it can be easy to
forget about home mainte-
nance.
The National Fire Pro-
tection Association says that
half of all home-heating fires
in the U.S. occur in Decem-
ber, January and February.
Failure to clean equipment,
primarily creosote from solid-
fueled heating equipment and
chimneys, is a leading cause
of home-heating fires.
While the majority of
homeowners are safe, it can-
not hurt to inspect and clean
the elements involved in
most home furnaces and
other equipment. Not only
will this help prevent possible
fires or help pinpoint possible
problem areas that could lead
to carbon monoxide poison-
ing, this maintenance can
help produce cleaner indoor
air.
In addition to routinely
replacing the air filter on the
furnace, it is commonly rec-
ommended to have the air
ducts and venting throughout
the home cleaned. Although
there is no proven evidence
that trapped dust and other
debris in air ducts can pose a
risk to personal health, many
people prefer to keep the
ductwork clear in the event
particles may be hazardous or
contribute to asthma or other
breathing difficulties. This
cleaning can be done once a
year or every couple of years,
depending on personal prefer-
ence.
The EPA does recom-
mend duct cleaning if any of
these factors are present:
There is substantial visible
mold growth present.
Ducts are infested with
vermin.
Dust or debris is literally
clogging the ducts.
You can see dust or debris
blowing into the home
through supply registers
(vents) in the home.

bility and honesty will have
to be checked by the home-
owner. When seeking a com-
pany to clean the ducts in
your home, first ask friends
and family members for refer-
rals. Also, utilize customer re-
view Web sites such as
Yelp.com or simply conduct a
Web search for the company
to learn of its reputation. You
can also contact the Better
Business Bureau or see if the
business is registered with the
National Air Duct Cleaners
Association (NADCA).
Research has not
demonstrated the effective-
ness of any chemical additives
or sealants placed in or on
ducts for the prevention of
bacteria growth or inhibition
of dust formation. It is advis-
able to steer clear of compa-
nies that try to push
additional services or chemi-
cal applications that actually
may hinder health more than
dust.
An untrained person can
actually damage the ducts or
heating and cooling system.
That is why it is important to
do your research. A properly
done job should include
cleaning all of the compo-
nents of the system, including
coils and condenser parts of
the HVAC system itself. The
job should take between 3
and 8 hours and will range in
cost from $450 to $1,000, ac-
cording to EPA estimates.
The blow and go specials
advertised for $100 are likely
a waste of money and may in-
advertently cause damage or
dislodge dust inappropriately.
The NADCA says the
most effective way to clean
air ducts and ventilation sys-
tems is to employ source re-
moval methods of cleaning.
This requires a contractor to
place the system under nega-
tive pressure through the use
of a specialized, powerful vac-
uum. While the vacuum
draws air through the system,
devices are inserted into the
ducts to dislodge any debris
that might be stuck to inte-
rior surfaces. The debris can
then travel down the ducts to
the vacuum, which removes it
from the system and the
home.
Although there are no
proven health benefits, air
duct cleaning can help im-
prove indoor air quality and
may help an HVAC system
operate more efficiently.

we know as eggnog has
become synonymous
with the holidays. It is so
linked with the Christmas sea-
son that a person may be hard-
pressed to find it sold in the
supermarket any other time of
the year. But eggnog wasnt al-
ways the holiday beverage it
has become.
Eggnog is believed to have
originated in 17th century Eu-
rope, primarily as a drink for
the elite, since the ingredients
in the beverage were hard to
come by and thusly relegated to
the very rich.
There are different theo-
ries on the origins of the word
eggnog itself. Some believe it
has gotten its name from the
Old English word nog, which
meant strong beer. The egg
refers to one of the ingredients
in the beverage, fresh eggs.
Others surmise that it comes
from the word noggin, which
was a vessel for serving drinks
in taverns. The drink was
called egg in a noggin, which
was shortened to eggnog.
Still, there are others who say
its name is derived from the
term grog, which was another
term for booze. Egg n grog
was eventually abbreviated to
eggnog.
Although there is little
certainty to the origins of the
name, the recipe for eggnog has
essentially remained un-
changed throughout the cen-
turies. It consists of beaten eggs,
cream or milk and sugar mixed
with some sort of alcoholic
spirit. The Old English were be-
lieved to mix it with wine,
though once the drink was
brought to the New World;
colonists substituted rum for
the wine. Rum was readily
available through tradesman
running between the Ameri-
cas and the Caribbean and
therefore less expensive than
another spirit. As America
grew and eggnog was enjoyed
in different parts of the coun-
try, the rum was replaced with
regional spirits, including
bourbon or grain alcohol.
Other ingredients were also
added to give it a customized
flavor. However, the use of
nutmeg, cinnamon and
cloves has become traditional
flavors for the holiday brew.
Although eggnog is widely
enjoyed throughout the holiday
season, in the past it was served
at special events and social oc-
casions. As a warmed beverage
it can easily chase away winters
chill. This is how it may have
come to be enjoyed primarily
during the holidays.
Love it or hate it, eggnog
is a drink that can evoke strong
feelings of the holidays within
minutes. There are variations of
eggnog sold commercially, but
many people swear by home-
made versions for their taste
and authenticity. Try your
own homemade eggnog with
this recipe, courtesy of

Holiday Eggnog (Spirited)
1 dozen eggs
1 pound powdered sugar
1/2 teaspoon salt
1/4 cup vanilla
8 cups evaporated milk
3 cups water
1 quart spiced rum
Nutmeg, to garnish
Beat eggs until light in
color; gradually add sugar, salt
and vanilla. Then add milk and
water. Stir in rum (brandy,
bourbon or rye may also be
used). Cover the nog and ripen
for 24 hours in the refrigerator.
Stir again and serve sprinkled
with nutmeg.

Beginning December 13, the new
group JIT (Jerseyans in Transition) - is
meeting the second Tuesday of every
month, 2:00 - 3:30, at the Butler Public
Library. JIT is a self-guided group, with
occasional guest speakers, for people
who are unemployed or underemployed,
to talk about their job hunting strategies
and tools, career changes, interviewing
and in other words: being in transition.

ning on a 10 day Caribbean Cruise out
of Bayonne on Royal Caribbeans Ex-

Jewish Family Service of North Jer-
sey, a recipient of financial assistance
from UJA Federation of North Jersey,
is expanding its Kosher Meals on
Wheels program in Wayne. The
Meals on Wheels Program provides
hot, nutritious kosher meals to people
age 60 and over, or those younger
who have a disability and who are un-
able to cook or shop. Volunteer driv-
ers bring needed meals; offer a smile,
a greeting and a personal contact to
the elderly, many of whom seldom get
out. Drivers are needed to deliver
meals two times a month. Presently,
we are accepting referrals for people
who would like to receive meals.
