Why do wines made from the same grape taste different among producers?
The reasons are many from differences in the climates of the various grape-growing regions, to the type of soil under the vines, to the choices made in the method of production. Starting with climatic differences, grapes grown in cooler climates retain a higher level of acidity than the same grape grown in a warm climate. Higher acidity will produce a crisper, more refreshing texture in the wine. On the other hand, grapes grown in warmer climate will have less acidity, greater ripeness, and thus a higher alcohol content when fermented, and produce a wine with a fuller, rounder body. Chardonnay grown in each of these two disparate environments produces two very different wine styles. This difference in crispness verses fullness is sometimes referred to as a difference in mouthfeel. The addition of oak in the fermentation or aging process also contributes to mouthfeel in the wine compared to one that gets little or no contact with oak. Soils vary greatly around the world and even throughout Californias many wine regions. Soils might be composed of chalk, limestone, clay, sand, gravel, loam or other components that may impart a unique flavor to the wine. For example, some people claim that grapes grown in the Rutherford area of Napa produce wines with an identifiable Rutherford dust character, described usually as a herbaceous spiciness. In addition to the above reasons, other factors, such as whether a wine is filtered or blended with another grape, will create a producers overall style and character and thus differentiate it from other producers wines made from the same grape. Finally, some wine regions command higher prices for their grapes than others. Its simply a matter of supply and demand. Winemakers who buy grapes will pay a pretty penny for Cabernet Sauvignon from Napa Valley, for example, where world class wines have made Napas reputation as a source of outstanding grapes.

certification for its sustainable management, water conservation, and fish-friendly farming across all of its estate vineyards. Even the tram is solar-powered! This commitment to doing things the right way naturally extends to the winemaking after the grapes are grown. Whites are harvested at night, going directly to press as whole clusters to preserve quality. Reds are brought to the crush pad in small boxes and are hand-sorted before being destemmed and innoculated with native yeasts. Reserve wines are given even more special treatment in the micro-winery-withinthe-winery built in 2008. This 10,000-case
facility across from the caves allows for whole-berry fermentations, barrel spinning for micro-fermentations, and multiple small lots for best-of-the-best bottlings. That commitment to ensuring a legacy of quality is present in every release, and given the variety of vineyards and locations under its direct control a true rare luxury for the winemakers in todays modern global marketplace its not a surprise to find wines to appeal to all tastes and lifestyles. Indeed, there are the Napa Valley wines for which the winery is well known; the Single Vineyard releases, which highlight the unique combination of variety and place within various parts of the valley; the Cellar Club wines, small bottlings of club-only exclusives; the Vintners Collection, which shows off other Sterling Vineyards in California; and the Reserve wines, individual, special, and rarely bottled. All are available to taste at the winery, and many can only be found there altogether. Beyond the tram and the wines, there is plenty more to enjoy while on the property. The layout of the Greek island Mykonosinspired white stucco walls allows for wandering amidst famous artworks and prints and architectural details, and every once in a while, a random turn reveals breathtaking views of the valleys narrowing northern quadrant, with the Mayacamas and Vacas in extreme proximity on both sides. Seventh Annual Alsace Varietals Festival to Showcase International Whites, a Celebrity Chef Demo and More
For the seventh consecutive year, the Anderson Valley Winegrowers Association will host the International Alsace Varietals Festival an event that has become a popular showcase for Alsace-style white wines from around the world. The 2012 festival, to be held February 18-19, will also feature a celebrity chef cooking demonstration and a New Zealand Riesling challenge. Producers from both near and far will pour five highlighted varietals during the two-day celebration: Riesling, Gewrztraminer, Pinot Gris, Pinot Blanc and Muscat. Festival events will include a technical conference, a cooking demonstration by Food Network star chef Beau MacMillan, a grand tasting, a group winemaker dinner and winery open houses. The technical conference on Saturday morning will highlight pertinent issues in winemaking and grape growing for these varietals, with talks by industry experts and winemakers. The conference will also include a New Zealand Riesling challenge, with attendees tasting 12 Rieslings all sourced from the same vineyard, but crafted by winemakers from around the country. Tasters will try to identify which elements originate from the vineyard site, and which from the winemakers. The Alsace Varietals Grand Tasting on Saturday afternoon will showcase aromatic white wines from approximately 40 producers. Fantastic small bites, including fresh oysters and dishes from several wellknown chefs, will be paired with the wines. Chef Beau MacMillian former Iron Chef America winner, current The Next Iron Chef challenger and executive chef at Scottsdales Sanctuary on Camelback Mountain will host an engaging and educational cooking demonstration with chef Francois de Melogue (former executive chef at Dayboat Restaurant, Copper Beech Inn and Pili Pili). Together they will cook Asian-inspired and Alsace-style dishes for attendees, pairing them with the highlighted wines. Attendees

BY SUe StrAight, the Wine Wench How does a guy who studied anthropology, film and photography end up as winemaker in one of Sonoma Countys premier wineries? Ask Bill Batchelor, Martin Ray Winerys Winemaker and hell tell you and its an inspiring tale, at that. Bill was raised in the San Francisco Bay Area and attended school at Sonoma State University. He started out studying anthropology and art. He really got into film and writing scripts some of his scripts were even used for TV miniseries! He couldve easily moved to Los Angeles to foster his career in film, but Sonoma County was where his heart was and he chose to stay. Around this time, some of Bills friends were working for wineries and they urged him to consider a career change, so in 1996 he switched gears and went to work at Preston Vineyards in Dry Creek Valley. It was a seasonal, entry-level position, but thats where the winemaking bug first bit Bill. He told me My first job at Preston Vineyards was soaking barrels. Each barrel took a few minutes to fill, so I read every wine publication I could get my hands on as the barrels were filling. I also asked lots of questions! After his stint at Preston Vineyards, Bill went to work at Ace Cider as Cidermaster, where he got a crash course in fermentation. Ciders ferment quickly and dont need any barrel aging, so he got to oversee each batch and learn how to deal with all the quirky things that can happen during fermentation it was quite a learning experience! In 2001, Bill went to work as Production Manager for Blackstone Winery in Kenwood and in 2003 he went to work at Martin Ray Winery. He became Senior Winemaker at Martin Ray in 2009. Local winemaking legend Kerry Damskey is Bills mentor and the Consulting Winemaker at Martin Ray Winery. Last year, Megan Hill was hired as Assistant Winemaker. Bill is an interesting guy. Hes raising two daughters (ages eight and ten), makes beer and cheese at home, and to really relax, tends his Bonsai trees. Bill is also an avid fan of music. If you were to walk into the cellar or the lab, chances are youd hear everything from classic country western to punk and hard rock blasting from the speakers attached to his iPod. When asked what his favorite thing about his job as winemaker at Martin Ray Winery, Bill told me I love the variety and unique challenges that each vintage brings. It is always different and I (and the rest of my winemaking team) have to think on our feet, be flexible and use a good mix of intuition and practicality. When he has the time, Bill loves meeting tasting room visitors and giving tours of the winery. Take my advice go by Martin Ray Winery, taste their wonderful (and reasonably priced!) wines and say hello to Bill. Tell him the Wine Wench sent me.

BY JoSh Stein Bunnie, Judd and Holly Finkelstein represent two generations of Napa vintners, and their philosophy is one that focuses on an intimate and personal approach, which is why they have limited their annual production to less than three thousand cases total a literal drop in the bucket of Napa Valley wine. Equally, their southern Silverado Trail-based winery, completed in 2006, was one of the first Napa Valley Vintners certified Green Wineries because of the incorporation of environmentally-efficient drainage, solar lightning, and an uncompromising recycling and composting program. Add in that Judds Hill is known for throwing great parties like the Lobster Luau Winefest, Musical Bonanza and Hanukkah Hootenanny and youve got the recipe for success for sure. The proof is in the glass, of course, and thats where the Finklesteins, first Art and now Judd, have been winning rave reviews for forty years. As Judd says, Our idea is that great fruit makes fine wine, and we want that fact to show through. To that end, we use oak subtly, keep the alcohols at moderate levels, and blend carefully. We let the grape shine. How good is this philosophy? Well, the winery is well-known for amazing small-lot releases multiple Cabernet Sauvignons, Founders Art Reserve Cabernet, Magic red wine blend, Merlot, Petite Sirah, Pinot Noir, Ros, Sauvignon Blanc and Zinfandel which means youre all set for a party. Even owner Ronda Schaer could not have envisioned that her affection for the little village of Yountville would someday blossom into a full-blown love affair. It was her passion for art, and glass in particular, that moved Ms. Schaer to open a gallery. I have always been drawn to glass. When you go, their staff will tell you how often to expect Old Faithful to blow. The day we went it was every five to ten minutes but could take up to 30 to 40 minutes before you see the eruption of steam and scalding water spraying up to 60 feet in the air. While you anticipate the next showing, check out the other on-site attractions. Wishing wells that were once used as hot mineral therapy pools remain on the grounds and contain some interesting facts. They have an informative exhibit area on geyser eruptions and earthquake predictions and also a brief history of the town of Calistoga. A short walk away you will find their petting zoo featuring the Tennessee Fainting Goats, Jacobs Four Horn Sheep and Guard Llamas. Old Faithful Geyser of California is a great way to spend an afternoon in wine country and their gift shop is full of Old Faithful and Napa Valley themed souvenirs. They are open daily year round from 9 a.m. to 5 p.m. Admission is $10 for adults, $7 for seniors, $3 for kids ages six to 12 and children under age six are free.

Celebrated Dinner Brings 18 Top Sonoma Valley Chefs Together for Exciting Olive-Inspired Culinary Creations
On Saturday, January 28, the Sonoma Valley Olive Seasons annual Feast of the Olive Dinner, highlighting the valleys bounty of food and wine offerings and second-largest crop, will take place at Ramekins Culinary School in Sonoma. One of the eleventh-annual Sonoma Valley Olive Seasons anchor events, the Feast of the Olive Dinner is a multi-course olive-inspired feast prepared by Sonoma Valleys top chefs, including John Toulze of the iconic wine country destination the girl & the fig, Bruno Tison of the Michelin-starred Sant, Jeffrey Lloyd of Zagat rated Caf La Haye and Jason Rose of the new Carneros hotspot Rams Gate Winery. The Feast of the Olive Dinner is served in a family-style dinner format, in which guests dine at one of three expansive candlelit dinner tables set in Ramekins Culinary Schools beautiful event space. Each table will have a dedicated team of five executive chefs who will collaborate and prepare a dinner of olive inspired culinary creations. Each of the five courses will be a unique olive themed dish using local, artisan olives and olive oils, reflecting the individuality of the chefs styles, while highlighting the camaraderie of the chefs in the kitchen. In addition, each course in the epicurean feast will be paired alongside awardwinning Sonoma Valley wines, for a quintessential wine country experience. The food this year will feature authentic red beans and rice, French bread, salad and King cake. Additionally, the pice de rsistance will be a whole smoked pig prepared by Margie Brooke of Community Caf and Catering. Other than the pig, all ingredients for the food originate from Louisiana. We set the bar pretty high for ourselves with our inaugural Mardi gras last year, said Tom Meadowcroft, owner and winemaker of Meadowcroft Wines. It was a complete success and it is now becoming a tradition of its own with excellent Louisiana-style music, food and fun. Last years Queen and King of Mardi gras, radio host and Press Democrat food writer Michelle Ana Jordan and former Sonoma Mayor and current Mayor Pro Tem Ken Brown, will return to crown the new Krewe of Meadowcroft Queen and King, who will be announced in the coming weeks. The Krewe of Meadowcroft Mardi gras party is $45 per person in advance and beginning on February 11 $55 per person. Reservations are recommended as tickets to the event will be limited. Treasure Island Flea to Move Indoors the Historic 1939 Worlds Fair Building for the 2012 Winter Months January through March
Treasure Island Flea becomes the TI Flea Pop-Up as they move indoors for the winter months January through March. The inside venue will allow the show to go on rain or shine and is being held in the historic, One Avenue of the Palms building located on Treasure Island. This is the last standing and useable building from the 1939 San Francisco Worlds Fair. The TI Flea Pop-Up will be held the last Saturday and Sunday of each month with later show hours beginning at 10 a.m. until 5 p.m. each day. The first show will be January 28-29. This is the only two-day monthly show in Northern California and the first to move indoors for the winter months. The TI Flea is a hybrid marketplace that hosts artists, indie, etsy and steampunk designers while also including the more traditional vendors, exhibiting vintage, antiques and collectibles. Not only are you going to experience great shopping but also the best SF gourmet food, wines and local upcoming bands. When we started this market we knew we were going to have to produce a show of shows to get 8,000 to 10,000 attendees out to Treasure Island. Most Bay Area residents have never had a reason or even knew they could go out to Treasure Island. I cant tell you how many people have approached me and have said how easy it was to get to the island and how beautiful Treasure Island is. It only takes ten minutes from downtown San Francisco and the muni 108 runs every 20 minutes, 24 hours a day, seven days a week, said, co-founder Charles Ansanelli. As we move forward to our second year we look to add even more unique shopping, DIY classes, entertainment and new specialty foods, like a seafood grotto with live lobsters and shell fish. In the mood for a beautiful drive, a little history, some gracious hospitality and some really good, reasonably priced wines? If so, Jaxon Keys Winery may just be the place youre looking for. Located just a hop north of Hopland (about thirty miles north of Healdsburg), the Jaxon Keys Winery Visitors Center sits atop a grapevine-covered knoll that overlooks picturesque Sanel Valley. The visitors center is a lovingly restored Victorian Farmhouse that was built in 1880. The
floors are well-worn hardwood, covered with a plush rug. Two cozy armchairs flank a white brick fireplace, inviting you to sit and sip for a while. There is a goodly handful of wine related merchandise, including logo apparel, glassware and food items artfully displayed around the room for the discerning shopper. Speaking of food items, cheeses, crackers and other picnic fare are available for al fresco enjoyment on the picturesque patio. The winery itself is a rather industrial looking building, located a stones-throw from the visitors center. For many years, before Ken and Diane Wilson (owners of Wilson, Mazzocco, Matrix, deLorimier and Soda Rock Wineries) purchased the property, the winery was known as Jepson Vineyards and the tasting room was located inside the winery. These days, visitors may tour the winery facility, but most of the hospitality action takes place over in the visitors center, which is gorgeous, by the way! Along with the patio, there is a covered porch, which wraps around the building. There is plenty of room for entertaining in the sun and in the shade as well. In fact, Jaxon Keys Winery hosts small private events and wine club parties on a regular basis. They have a full commercial kitchen onsite and even have a guesthouse available for overnight visitors (reservations are required). so, but its really the various tasting options and the cornicopia of bottlings which make Beringer Vineyards our Tasting Room of the Week. The sheer number of wines made is staggering, and there are literally too many to count. Among the highlights are the annually released Private Reserve Cabernet and Chardonnay wines, which were first made in 1977 and the Modern Heritage winery-only bottlings which were first made Chardonnay, Ros, Riesling, Pinot Noir and a red Rhne blend. The Knights Valley wines show off the impact of volcanic soils on several Cabernets, a Meritage red blend, awhite blend of Sauvignon Blanc and Smillon while the Napa Valley releases highlight at least a dozen different vineyard-designated Cabs, as well as Pinot Noir and Sauvignon Blanc. There are also lighter styles of wines in the California Collection, including Pinot Grigio, White Zinfandel, sparkling wines, and sweet bottlings. Your options for enjoying the wines are equally as all-encom-
passing. The Old Winery Tasting Room offers the opportunity to sample the more popular releases while the 1883 Rhine House Mansion provides tastings of the reserve and limited-release bottlings. For those looking for something special, the Private Tasting, by appointment only, will take you deep into the library, and the Private Club Tasting, personally led by the Wine Club Concierge, goes even further. Large groups of twenty or more can be accommodated, too, with special individualized tastings arranged in advance. Its that combination of lots of wines and lots of ways to enjoy them which really makes Beringer stand out above the crowd and which shows why theyve been leading the way for as long as folks have been coming to Napa for the best wines in the country. Theres really nothing nicer than joining hands, hearts and palates to create a custom blended wine. Its fun, and its romantic! Wine drinkers are looking for something new and blended wines offer variation. Thats why our blending parties have been so successful, Mark said. People have a lot of fun and they learn at the same time. Most of them have an innate sense of balance and good taste, which takes them in interesting directions. A couple of years ago, one of the blends created at the party was so good that I have to admit something I copied it! he said with a laugh. Meritage (rhymes with heritage) is an invented American word that combines the words merit and heritage. It is used to describe red wines made from blending Cabernet Sauvignon, Cabernet Franc, Merlot, Malbec and/or Petit Verdot; and white wines crafted by blending Sauvignon Blanc, Semillon and/or Muscadelle du Bordolais. No single varietal can make up more than 90% of the blend in order for it to qualify as a Meritage. Meritage is all about blending, which can be an absolutely magical thing! Topel Winery produces a fabulous Meritage, called Le Mariage (French for marriage), which has won three gold medals (to date) in major wine competitions, including the San Francisco Chronicle Wine Competition, held just last month. Le Mariage is made from fruit grown exclusively at the Topel Estate Vineyards on Duncan Peak in Mendocino County. All of the wines for the Love and Meritage blending event are handcrafted from organic grapes grown on these mountain estate vineyards.
