The Assignments

You are required to develop: A Gantt chart, a Flow Chart and a Report [group assignment] [individual assignment]

A proposal for the opening night of the new restaurant

Based on the following scenario: You are recent Graduates of an International Hospitality Management School and have been recruited on a short term contract by a well known Chef to plan the refurbishment and staffing of his newest restaurant venture, an Asian Fusion type of restaurant. The restaurant, which is on two floors, has been cleared of all fixtures and fittings, so you have two empty spaces to work with. Each floor will accommodate approximately 30 covers. There is a full length window at the front of the downstairs space and two large windows across the front of the upstairs space. There is an open kitchen downstairs which has been fitted out, so this is not part of your project. There is a small dispense bar located next to the kitchen which has a fridge, glass washer and a sink. There are also customer toilet facilities within the restaurant area that have been fitted out. Once the project begins there is a deadline of twelve weeks to open the restaurant. The first six weeks will be taken up with major structural work; you will then have a further six weeks to complete the refurbishment. The restaurant will be open for lunch and dinner Tuesday to Sunday.

This is a planning project, not an interior design project, so even though you will need to source fittings of an appropriate standard and may identify them in appendices, the majority of your time should be spent on the planning. As you work through this project you may discover there are details that are not stated specifically in the scenario; you have authority to decide these as a group.

The Chef has also invited all members of the planning team to submit an individual proposal for the opening night of the restaurant. A budget of P 1M has been allocated for this activity. The objective of this night is to introduce the restaurant to the market place, thank all stakeholders and secure positive public relations activity. The Chef is looking for exciting, innovative ideas that will compliment and reinforce the restaurants vision and values. Your task is to: Group Assignment Develop a Gantt Chart to show all the steps involved in setting up the restaurant and confirm the timing. Develop a Flow Chart to show the process to recruit staff for the restaurant (based on your current understanding of recruitment). This shall include positions and the criteria for each. Write a report of 2000 words maximum to support the information contained in the charts. For the group assignment you do not have to work to a budget; only the time frame of 6 weeks. Individual Assignment Submit a proposal of 1000 words maximum, in report format, for an opening night that compliments the restaurants vision and values. Support the proposal with a detailed costing demonstrating delivery of the opening night within budget.

Presentation

Section 2 Building Competency - Areas of Assessment


Following achievement of competency in section1, competency demonstrated in each areas of the assessment listed below will add 0.25 to the grade of 4.00 CA. To build your grade competency must be demonstrated in section 1. Criteria from Section 2 may be taken to support areas that do not fully demonstrate competency in Section 1.
