Smoked Ribs
It seems everyone loves to barbque and many love the taste of smoked meat. The aroma and the delicious flavor cannot be compared. Now with these tips, you can enjoy great, restaurant tasting smoked meat at home Choosing the Ribs at the Store or Market When you go to the store or market to purchase spare ribs or baby backs, look for meat that has plenty of marbling of fat but not large clumps of fat on the outside of the ribs. Also look for ribs that have an even thickness across the entire slab for best results. Remove the Membrane before Smoking Ribs To remove the membrane you simply lay the rack on a hard surface with the bone side up and starting at the corners you will see a thin plastic looking substance...starting at the corner use a knife or something sharp to get it started then use a paper towel to grab it and pull it off in one clean sweep.It really is not that easy but with a little practice you can get quite proficient at it. Remove the Skirt (Flap) on Spare Ribs You will also want to cut off the flap of meat that runs horizontally across the meaty side of spare ribs. Not only does this even up the thickness of the ribs so they will cook better but the meat that you cut off can be cooked/smoked right along with everything else and is a really nice treat for the chef in about 2 hours or so. Adding a Little Flavor with Rub Ribs are tasty on their own and the smoke does a lot to add some goodness but using a good rub on the outside of the ribs adds so much to the taste To apply a rub to the ribs,start with a light coat of regular yellow mustard first to give the seasoning something to stick to. Don't worry, they won't taste like mustard when they are done cooking. After the mustard is applied, sprinkle on the rub of choice and if you like, gently massage the rub all over the ribs.. top and bottom. At this point the ribs are finished being prepared and are ready to be smoked.
Smoking ribs is a slow process and should never be rushed. Always cook the ribs low and slow at about 225-240 degrees F using your favorite hard wood such as pecan, cherry, hickory or mesquite. Keep the smoke flowing for at least 3 hours then if you have a charcoal, gas or electric smoker, you can finish them the rest of the way with just heat if you like. If you like your ribs wet, start brushing on the sauce about 30-45 minutes before the ribs are finished cooking. Repeat this at least a couple of times before bringing them in the house for that nice saucy finish. Bonus Tip: You can achieve the smokehouse flavor even if you are cooking on a regular charcoal or gas grill. Put the heat on one side of the grill and the meat opposite the heat. Pre-soak wood chips and then wrap in one layer of aluminum foil. Punch holes in the top of the foil and place them over the flame. The foil will protect the chips from flaming up and they will provide the needed smoke for a longer period of time.
To help to keep more moisture in the meat, place a pan of water in the grill. Now you will be cooking with indirect heat, steam and smoke. The results will be well worth the effort. Cooking on the grill is a work in progress and your results will improve with time. A die-cut cardboard countertop display for Edison Mazda, advertising headlight bulbs with the question, Auto Lamps? We Have Them! coasted to $3,410 at the Spring Petroliana & Advertising Auction held March 2 by Matthews Auctions LLC. The auction took place the day before the start of the Chicagoland Petroliana & Advertising Show, held twice a year in Peotone. What made this piece so special was the fact that it was cardboard and still ended up in the list of top lots, said Dan Matthews of Matthews Auctions LLC, based in Nokomis, Ill. It brought as much as it did because it had a crisp image of a car, and because it was in such great conditiongraded 9 out of 10 for condition. Only minor edge wear kept it from realizing more.
The top lot of the day was a rare Penn-Empire gasoline sign, one of only a handful known, 30 inches in diameter. The doublesided porcelain sign with an ethyl logo, boasting good gloss and color, was rated 7.5 on both sides and went for $6,875. Also, an X-Ray Stove Polish singlesided porcelain sign, 11 inches by 11 inches, with a dancing devils graphic, made $2,420.

"The 2010 Toyota Prius led in gains, increasing in value $1,370 through the month of February," said Alec Gutierrez, senior market analyst of automotive insights for Kelley Blue Book. "Dealers have been aggressively bidding on fuelefficient vehicles at auction as consumer demand increases in response to rising gas prices. If the past is any indication of things to come, Kelley Blue Book could see values of used fuel-efficient vehicles increase more than 20 percent during the course of the next few months." In 2011, fuel-efficient vehicle values reached record levels in response to gas prices approaching $4.00 per gallon, and if fuel prices continue on their current trajectory, Kelley Blue Book expects to see a similar trend this year. Values of fuel-efficient vehicles will only remain elevated as long as fuel prices remain high, so if fuel prices were to ease, expect values to return to normal levels. Kelley Blue Book advises dealers to stock up on inventory sooner rather than later, since values likely will increase sharply during the next 30 to 60 days.
