PATI
Pati merupakan homopolimer glukosa dengan
ikatan -glikosidik.
Sifat pada pati tergantung panjang rantai
karbonnya, serta lurus atau bercabang rantai
molekulnya.
Pati terdiri dari dua fraksi yaang dapat
dipisahkan dengan air panas, fraksi terlarut disebut
amilosa dan fraksi tidak terlarut disebut
amilopektin
Umumnya pati mengandung 1530% amilosa,
7085% amilopektin

d. Dengan panas membentuk pasta dan gel, misalnya tepung
dan air
e. Dipanaskan maka butir-butir pati akan mengembang,
karena terjadi proses gelatinisasi.

Struktur amilosa : merupakan polisakarida berantai lurus bagian

dari butir-butir pati yang terdiri atas molekul-molekul glukosa -1,4-glikosidik.

Struktur amilopektin :
merupakan polisakarida bercabang bagian dari pati, terdiri atas molekul-molekul glukosa
yang terikat satu sama lain melalui ikatan 1,4-glikosidik dengan percabangan melalui ikatan
1,6-glikosidik pada setiap 20-25 unit molekul glukosa.

PERANAN PATI DALAM OLAHAN PANGAN

Sebagian besar penggunaan pati adalah berkaitan dengan lingkungan

yang banyak mengandung air. Salah satu fungsi pati pada olahan pangan
adalah dalam pengendalian tekstur dan reologi (perubahan bentuk).
Kandungan pati juga memiliki peranan penting menjadi salah satu
kriteria mutu tepung
Pati dapat ditemukan dari umbi-umbian (kentang, tapioka, garut, dan ubi
jalar), batang (sagu), dan sereal (jagung, beras, dan gandum).

PATI TERMODIFIKASI ASAM
Pati termodifikasi asam dibuat dengan
menghidrolisis pati menggunakan asam
dibawah suhu gelatinisasi yaitu pada suhu
sekitar 52oC. Reaksi dasar meliputi
pemotongan ikatan a-1,4-glukosidik dari
amilosa a-1,6-D-glukosidik dari amilopektin,
sehingga ukuran molekul pati menjadi lebih
rendah dan meningkatkan kecenderungan
pasta untuk membentuk gel
CARA MODIFIKASI PATI
DENGAN CARA ASAM
Modifikasi dengan asam dilakukan menggunakan
asam klorida. Mula-mula pati dicampur dengan
larutan asam klorida pada suhu 37 0C dan
dipanaskan, lalu ditambah dengan etanol 80
persen dan dilakukan pemusingan untuk
memisahkan pati yang telah termodifikasi dari
bagian cairan. Endapan pati kemudian dicuci
dengan airsampai bebas ion klorida dan
dikeringkan sampai kadar air 10 persen.

SIFAT PATI TERMODIFIKASI ASAM
Lebih diencerkan jika diencerkan (viskositas rendah)
Lebih mudah larut
Berat molekul rendah
Memiliki kemampuan pengikatan iodine yang rendah
Rendahnya pembengkakan granula selama gelatinisasi
Suhu gelatinisasi yang rendah dan tekanan osmotik yang
rendah
