Application of fermentation

beverage
• Example of beverage are wine, beer and mead.
• Process consist of:
first fermnentation : Yeast are used in this process to convert sugar in
grape juice to ethanol (alcohol) and carbon dioxide. Carbon dioxide are
release to atmosphere.
C6H12O6 ====> 2(CH3CH2OH) + 2(CO2) + Energy (which is stored in ATP)
Sugar(glucose) ====> Alcohol (Ethyl alcohol) + Carbon dioxide gas + Energy

second fermentation : this process is to produce red wine by using


bactirial fermentation that convert malic acid to lactic acid. From this
process, it helps to soften he taste of the wine.

• This process usually take between one or two weeks.


Baking

• Yeast used in bread making as a leaving agent and it died


during the baking of dough leaving the air pocket.
• Yeast convert the sugar that contain in the dough into carbon
dioxide. This will cause the dough rise as gas form.
• The fermentation process begin when yeast is it is mixed with
flour, salt, and warm water or milk. The dough is kneaded
until it is smooth, and then left to rise.
Other application of yeast
fermentation
• Fermentation of yeast are not only to produce alcoholic beverage
but to the fermentation of non-alcoholic beverages as well.
• Numerous kinds of yeasts have been used in the production of
nutritional supplements.
• They have had a long history of undesirable role in people’s lives,
they can also work in a very positive manner for human body.
• Biological advantages of yeasts are now known to the whole world
and it is also being widely used for treatments in the beautification
industry.
